HILLBILLY CAVIAR
Hillbilly Caviar...an easy pepper, bean, onion, corn side dish that is served with tortilla chips. This is make-ahead recipe great for summer picnics!

Steps:
- Combined the beans, corn, peas, diced peppers and onions in a bowl.
- In a small separate bowl, mix the oil, sugar and vinegar.
- Pour the dressing over the bean mixture.
- Refrigerate for at least an hour so the flavors get mixed well.
- Serve with tortilla chips or on a salad.

KAT'S REDNECK CAVIAR
Joe had this at a Christmas party at work, he talked about it the rest of the day. So i thought i would make it for our holiday dinners. The person that made it for the at work party said they use it on hotdogs or polish dogs as well. We just used the scoop chips and the Beer Crackers. It's really good and i don't like black eyed peas lol

- Drain the beans before adding to bowl, add the rest of the ingredients stir together and serve. Can be made a day or two ahead of time.
TEXAS CAVIAR (AKA REDNECK CAVIAR)
I get many requests for this item. I make it 12 pints at a time because when my friends know I have made it, they want some also. Quick and easy but really good. I found a picture on Tasty Kitchen and posted it because I don't have one of my own.

- 1. Mix all ingredients thoroughly in a large bowl. Chill in the refrigerator for 24 hours, stirring occasionally. Stir again before serving.
- 2. This is great served as a dip with tortilla chips or poured over a bowl of your favorite lettuce...makes a great salad.
- 3. It also makes great gifts when put into pint jars with handwritten labels and a nice ribbon.
- 4. WILL STAY GOOD FOR 7 TO 10 DAYS IN REFRIGERATOR. MUST BE REFRIGERRATED AT ALL TIMES.

- In a large bowl, combine black beans, black eyed peas, corn, red onion, bell peppers, cilantro, tomatoes, and jalapeno.
- In a small bowl, whisk together ingredients for red wine vinegar dressing: olive oil, red wine vinegar, garlic, sugar, sea salt, black pepper, paprika, chili powder and fresh lime juice.
- Pour red wine vinegar dressing over redneck caviar and stir to coat well. If using avocado, carefully stir it in.
- Garnish Options: extra chopped cilantro, green onions, chives. Serve with tortilla chips and enjoy!
