This is our favourite spice cake...Ummmm...We love lots of spices. On cold fall days..the smell of this cake, brings people right in out of the cold...Great with a nice cup of tea or strong coffee.

2 1/2 cups flour
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger
1/4 teaspoon ground cardamom
1/4 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/4 teaspoon ground mace
1/4 teaspoon ground aniseed
1/4 teaspoon ground celery seed
3/4 cup shortening
1 cup brown sugar
1 1/4 cups sour cream or 1 1/4 cups buttermilk
3 large eggs
1 teaspoon vanilla

Steps:

  • Preheat oven to 350 degrees Add flour, baking powder, soda, salt and spices in large bowl and sift together.
  • Cream shortening and sugar until light and fluffy.
  • Add eggs one at a time, beating well. Now add in the vanilla.
  • Add dry ingredients alternating with sour cream or buttermilk.
  • DO NOT OVER MIX-- Pour into greased 13 x 9 x 2" pan and bake at 350 degrees for 40 - 50 minutes.
  • Spread with vanilla buttercream frosting.

2 1/2 c cake flour
2 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp allspice, ground
1/4 tsp mace
1/2 tsp cloves, ground
3/4 c shortening
1 c brown sugar
3 eggs
1 c sour milk or buttermilk

Steps:

  • 1. Sift flour; measure; add baking powder, soda, salt, and spices; sift again.
  • 2. Cream shortening; add sugar gradually; cream together until light and fluffy.
  • 3. Add unbeaten eggs one at a time beating thoroughly after each addition.
  • 4. Add dry ingredients alternately with sour milk or buttermilk, stirring only enough after each addition to blend thoroughly.
  • 5. Pour into a greased pan 13 by 9 by2 inches. (My mother made a round 2 layer cake)
  • 6. Bake in a moderate oven (350 F.) 45 to 50 minutes.
  • 7. When cool spread with any desired frosting. (My mother used Burnt Sugar Frosting.)

KATO'S EASY BANANA CAKE

This is how I use those leftover black bananas. Sometimes I use the little tiny bananas because they have such an intense flavour. When I'm busy I freeze the bananas just for this cake. This recipe makes great cupcakes that freeze well. I've been making this recipe for 12 years, I hope that you enjoy it as much as we do...

1/2 cup butter
1 cup sugar, white
2 eggs, beaten
2 cups bananas, overripe, mashed
1/2 cup walnuts, chopped fine (optional)
2 cups flour
1/4 teaspoon salt
3/4 cup milk
1 tablespoon lemon juice
1 teaspoon baking powder
1 teaspoon baking soda
1 1/2 teaspoons vanilla, pure

Steps:

  • Preheat oven to 350 degrees.
  • Cream the butter, add sugar and eggs.
  • Mix well, add the bananas, nuts and vanilla.
  • Prepare the sour milk by stirring the lemon juice into the milk.
  • Sift the dry ingredients and add them to the banana mixture.
  • Mix in the sour milk gently.
  • Pour into a prepared 9 x 12" pan.
  • Bake at 350 degrees for 45 min - 1 hour (until firm in the center).
  • *We find this cake sweet, so I usually just sprinkle icing sugar on top and serve it warm with vanilla bean ice cream.
  • It's also nice with vanilla or chocolate buttercream frosting.
  • If making cupcakes, bake for 15 - 20 minutes, or until toothpick comes out clean.

This is a substantial yet tender spice cake that's flavorful enough to serve unadorned.

2 ½ cups bleached all-purpose flour
¼ cup cornstarch
4 teaspoons baking powder
½ teaspoon salt
2 teaspoons ground ginger
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon ground allspice
½ teaspoon ground cloves
1 cup milk
3 large eggs
2 teaspoons vanilla extract
1 cup unsalted butter, softened until easily spreadable
2 cups dark brown sugar

Steps:

  • Adjust oven rack to middle position and heat oven to 350 degrees. Grease and lightly flour a metal or disposable foil 9-by-13-inch pan. Whisk dry ingredients and spices in a large bowl. Mix milk, eggs and vanilla extract in a 2-cup measuring cup.
  • Beat softened butter into dry ingredients, first on low, then medium, until mixture forms pebble-sized pieces. Add about 1/3 of the milk mixture and beat on low until smooth. Add remaining milk mixture in two stages; beat on medium speed until batter is just smooth. Add the sugar; beat until just incorporated, about 30 seconds. Pour batter into cake pan.
  • Bake until a cake tester or toothpick inserted into the cake's center comes out clean, about 40 minutes. Set pan on a wire rack; let cool for 5 minutes. Run a knife around the pan perimeter and turn cake onto rack. Let cool.
