I originally found this on AllRecipes.com and modified it to meet with my family's preferences. My daughter, who is one of the fussiest people I know, even likes this (although she does manage to avoid getting any chunks of vegetables in her bowl). We like it hot, but you can cool the heat by using sweet sausage and not adding the dried chilis. If you can find them use the mini tortellini.

1 lb hot Italian sausage
1 large onion, chopped
4 cloves garlic, minced
5 cups beef broth
1 cup water
1 cup sliced carrot
1 (2 cup) can diced tomatoes
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried chili
2 teaspoons dried parsley
3 ounces tomato paste
1 zucchini, chopped
1 green pepper, chopped
1 red pepper, chopped
1 (8 ounce) package frozen cheese tortellini

Steps:

  • Remove sausage meat from casing and brown in large pot until crumbly; remove meat and reserve 1 T of drippings.
  • With drippings, cook onion until tender, then add broth, water, carrots, tomatoes (with juice), basil, oregano, chilies, tomato paste and cooked sausage; bring to a boil, reduce heat and simmer uncovered for 30- 45 minutes.
  • Add zucchini, peppers, parsley, garlic and tortellini; simmer for another 30- 45 minutes.
  • Serve with fresh parmesan sprinkled on top if desired.

2 (49.5 fluid ounce) cans chicken broth, divided
1 (20 ounce) package cheese tortellini
1 teaspoon olive oil
1 (12 ounce) package mild Italian sausage
1 small onion, chopped
2 tablespoons minced garlic
2 tablespoons Italian seasoning
1 (28 ounce) can tomato puree
1 bunch fresh spinach, chopped

Steps:

  • Pour 1 can broth into a small saucepan and add tortellini; bring to a boil. Cook tortellini until tender yet firm to the bite, about 5 minutes.
  • Heat oil in a large stockpot over medium heat; cook and stir sausage, onion, garlic, and Italian seasoning until sausage is browned and crumbly, 5 to 10 minutes. Add tortellini-broth mixture, remaining can of broth, tomato puree, and spinach to sausage mixture; cover stockpot and simmer until flavors blend, about 30 minutes.

This recipe has been modified several times by members to make it vegetarian (vegan even), and still it's a popular recipe. I've decided to post the vegetarian version so it will be official. This is not vegan, but can be converted easily by subbing the tortellini for plain pasta.

2 tablespoons olive oil
1 large onion, chopped

5 cups vegetable broth
1 cup water
1 cup carrot, sliced

1 medium onion, chopped
1 teaspoon olive oil
1 garlic clove, minced
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
1 can (14-1/2 ounces) diced tomatoes, undrained
1 package (9 ounces) refrigerated cheese tortellini or tortellini of your choice
3 cups chopped fresh spinach
1 tablespoon balsamic vinegar
1/4 teaspoon pepper
Shredded Parmesan cheese, optional

Steps:

  • In a Dutch oven, saute onion in oil until tender. Add garlic; cook 1 minute longer. Stir in broth and tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes, stirring occasionally., Add tortellini; cook for 7-9 minutes or until tender. Stir in the spinach, vinegar and pepper. 1 can diced tomato (or peeled, diced fresh)
2 cans chicken broth (or equivalent bouillon cube)
2 cups fresh spinach, chopped (or slightly less frozen)
1 stalk celery, finely chopped
2 medium carrots, chopped
1 bay leaf
2 tablespoons fresh basil
1 teaspoon fresh parsley
2 tablespoons fresh oregano
2 teaspoons crushed, chopped garlic
1 medium onion, chopped
1 teaspoon freshly ground black pepper
2 teaspoons good quality olive oil
1 cup water

Steps:

  • Saute celery, onion, carrots and garlic in oil.
  • Add spinach and tomatoes and simmer 10 minutes.
  • Add spices and chicken broth.
  • Simmer, covered, until vegetables are tender-crisp.
  • Add water and tortellini and simmer 10- 15 minutes.
  • Remove bay leaf and serve.
