When I was a newlywed, my husband was big on health and nutrition (still is, actually), but for the life of me, I had NO idea how to cook chicken. This is a recipe you can use on almost any chicken breast, I've discovered, and it will turn out well, whether you have it coated with anything or not. I've been cooking for both my brother and husband for several years now, and they are happy to brag up my chicken. So apparently something's being done right ;D

2 lbs chicken breasts
4 tablespoons butter (1 tablespoon per breast)

Steps:

  • Preheat oven to 400 degrees.
  • Melt butter in pan.
  • Place chicken in butter and turn to coat.
  • Cook for 30 minutes turning every 15.
  • Voila! Enjoy!

Simple basic recipe for cooking up a bunch of skinless boneless chicken breasts.

4 skinless, boneless chicken breast halves
2 tablespoons olive oil
1 tablespoon coarse sea salt
1 pinch Creole seasoning (such as Tony Chachere's®), or to taste
1 tablespoon water, or as needed

Steps:

  • Preheat convection oven to 400 degrees F (200 degrees C).
  • Rub chicken breasts with olive oil and sprinkle both sides with salt and Creole seasoning. Place chicken in a broiler pan.
  • Bake in the preheated oven for 10 minutes. Flip chicken and cook until no longer pink in the center and the juices run clear, about 15 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Remove chicken from pan. Pour water into the pan, while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Add more water if needed to dislodge the browned bits; serve alongside chicken.

I use this as a basic baked chicken recipe when another recipe calls for cooked chicken. Works great for everything and is super customizable. Sometimes I use garlic salt or other seasonings, depending on what I'm using it for.

¼ cup butter, melted
1 teaspoon salt
4 skinless, boneless chicken breast halves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly butter a baking dish.
  • Stir 1/4 cup melted butter and salt together in a bowl.
  • Arrange chicken in the baking dish. Brush butter mixture onto the chicken until thoroughly coated, pouring any extra over the chicken.
  • Bake in the preheated oven until no longer pink in the center and the juices run clear, about 30 to 45 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
