These oatmeal cookies are very moist with a good flavor. Add a cup of raisins or nuts if you desire.

1 cup butter, softened
1 cup white sugar
1 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 ½ teaspoons ground cinnamon
3 cups quick cooking oats

Steps:

  • In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time, then stir in vanilla. Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats. Cover, and chill dough for at least one hour.
  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets. Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheets. Flatten each cookie with a large fork dipped in sugar.
  • Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

1/2 cup shortening
1/2 cup butter
1 cup packed brown sugar
1 cup white sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
3 cups quick-cooking oatmeal
1 cup walnuts
2 cups vanilla chips or 2 cups raspberry chips (whatever you wish.)

Steps:

  • Cream shortening, butter and sugars; add eggs and vanilla.
  • Add flour, baking soda and salt.
  • Add oatmeal, nuts and whatever you like use teaspoon to drop onto ungreased cookie sheet.
  • Bake 10 minutes at 350°.
  • Do not overbake.
  • Remove from the oven while still soft.

2 cups flour, pastry
1 teaspoon baking soda
1 teaspoon salt
2 cups quick oats
1 teaspoon cinnamon
1 cup sugar, brown, dark
1/2 cup butter, soft, melted
1/2 cup shortening, melted (I use Crisco)
1/2 cup milk
1 tablespoon lemon juice
1/2-3/4 cup jam (Raspberry, Strawberry, Apricot, Blueberry, Date)
1/2-1 cup walnuts, ground (optional)

Steps:

  • To make the sour milk, mix the milk and lemon juice together in a small bowl and set aside until needed.
  • Preheat the oven to 350 degrees.
  • In a large bowl add the flour, baking soda, salt, oats, cinnamon and brown sugar together.
  • Next add the melted butter and shortening, mixing lightly.
  • Lastly, slowly add in the sour milk, making sure to mix well.
  • Chill the dough for 1/2 hour.
  • Then on a lightly floured board, roll to 1/4 inch thick.
  • Cut the dough using a 2" round cookie cutter. Make sure to have an even number of cookie rounds.
  • Place a spoonful of jam in the center of the cookie, then top with another cookie.
  • Make sure to lightly press the edges together.
  • Roll the cookie edges in the ground nuts.
  • Place on a lightly greased cookie sheet and bake in a 350 degree oven for 10 - 12 minutes.
