10 chicken legs
1/3 cup olive oil
2 TB light brown sugar (packed)
1 heaping TB dried thyme
2 tsp ground allspice
2 tsp smoked paprika
1/4 - 1/2 tsp cinnamon
1 tsp ground ginger
1 tsp ground cloves
1 tsp cayenne pepper
1 tsp garlic powder
1 tsp onion powder
2 1/4 tsp kosher salt
1/4 tsp freshly ground black pepper

Steps:

  • Prepare: Preheat oven to 425F with rack on lower middle position. Use paper towels to thoroughly dry chicken legs of excess moisture. Use fork to poke holes on all sides of chicken legs. Set aside.
  • Mix: In a bowl, combine all remaining ingredients to form a spice rub/paste mixture. Evenly rub mixture underneath the skin of chicken legs (easiest to use clean hands to really push the mixture as far underneath skin as you can) as well as on top.
  • Bake: Place chicken on large rimmed/foil-lined baking sheet, with space in between each piece. Bake about 40 minutes or until nicely browned. Serve immediately.

2 lbs boneless chicken, tenders
2 cups onions, chopped
1 cup celery, chopped
2 cups bell peppers, chopped
8 ounces mild jerk sauce, low sodium fat free if available
3 tablespoons Gold Medal Wondra Flour, Quick Mixing

Steps:

  • Cook all ingredients except the flour and the jerk sauce in a large skillet on medium heat.
  • After about 10 minutes your chicken will no longer be pink. Add your sauce and sprinkle your quick mixing flour.
  • Stir all ingredients slowly and thorughly, reduce heat, cover, and simmer for 15 to 20 minutes stirring occasionally.

1 teaspoon salt, or to taste
1 teaspoon ground allspice
1 teaspoon packed brown sugar
1 teaspoon onion powder
½ teaspoon dried minced garlic
½ teaspoon ground nutmeg
½ teaspoon black pepper
½ teaspoon ground ginger
¼ teaspoon cayenne pepper
¼ teaspoon ground cinnamon
¼ teaspoon dried thyme leaves
1 (2 to 3 pound) whole chicken, cut into pieces
¼ cup vegetable oil

Steps:

  • Make the jerk rub by combining the salt, allspice, brown sugar, onion powder, garlic, nutmeg, pepper, ginger, cayenne pepper, cinnamon, and thyme. Toss the chicken pieces with the spice mixture, then cover, and marinate in the refrigerator 2 to 4 hours.
  • Preheat oven to 350 degrees F (175 degrees C). Pour the vegetable oil into a 9x13 inch baking dish.
  • Place the chicken pieces skin-side up into the baking dish. Bake in the preheated oven for 1 hour 20 minutes, until no longer pink near the bone. Turn the oven on to broil, and cook until the skin crisps, 2 to 5 minutes.
