3 garlic cloves, fine chopped
3 onions, med, finely chopped
2 (3 ounce) jars chili powder, 3oz
2 green peppers, fine chopped
1 jalapeno chile
3 celery, stalks fine chopped
8 lbs beef, coarsely ground
2 tablespoons salt
1 cup tomato paste, 6oz
oregano
2 cups tomatoes (1lb-13oz)
garlic salt
2 cups tomato sauce, 1lb
4 pepper, Coarsely ground
1 cup chile salsa, 7oz

Steps:

  • Thinly cover bottom of heavy 2 gal pot with Oil.
  • Saute Onions, Green Peppers and Celery 10 minute.
  • Add meat and cook 10 min or until brown.
  • Stir in tomatopaste, stewed Tomatoes and Tomato Sauce.
  • Add chopped Garlic, Chili powder, Salt, dash Oregano, Chile salsa and jalapeno.
  • Cook 30 min, season to taste with Garlic Salt and Pepper, then simmer2 1/2 hours.
  • Stir every 10-15 minute.

2 pounds dried red kidney beans
12 cups cold water
3 teaspoons salt
2 pounds stewing beef (chuck, shoulder or shank)
1/2 pound ham rind or bacon, cut into 1/2-inch pieces
1 pound onions, peeled and cut into 1-inch pieces, and for garnish, 1 cup chopped onion, washed in a sieve and pressed in a kitchen towel to prevent discoloration
8 cloves garlic, crushed, peeled and chopped (2 tablespoons)
2 tablespoons chopped jalapeno pepper (more or less to taste)
1 large (1-pound, 12-ounce) can whole Italian tomatoes in juice
2 teaspoons coriander seeds
2 teaspoons cumin powder
2 teaspoons dry mustard
1 teaspoon red pepper flakes
4 tablespoons chili powder
Tabasco sauce
1 cup grated Cheddar cheese
Corn tortillas or tacos
1 cup chopped onion, washed in a sieve and pressed in a kitchen towel to prevent discoloration

Steps:

  • Rinse the beans under cool water, removing and discarding any damaged beans and any foreign material. Place the beans in a large pot with the cold water and 1 teaspoon of the salt, and bring to a boil. Cover, reduce the heat, and cook gently for 1 1/4 to 1 1/2 hours, until the beans are tender but not mushy. Set aside; do not drain.
  • Cut the beef into 1-inch pieces, and then chop coarsely by hand or in a food processor. When using a food processor, place about 1/2 pound of the chuck in the bowl at a time, and pulse the motor for about 10 seconds.
  • Place the pieces of ham rind or bacon in a saucepan, and cook over medium heat for about 10 minutes, until most of the fat has been rendered and the rind is dry and brown. Add the 1 pound of onion pieces and the beef, and cook, stirring, for about 5 minutes, until the meat separates and loses its red color. Stir in the garlic, jalapeno pepper and tomatoes.
  • Using a mini-chopper or small coffee grinder, process the coriander seeds, and add them to the saucepan, along with the cumin powder, mustard, red pepper flakes, chili powder and the remaining 2 teaspoons of salt. Bring the mixture to a boil. Combine the meat mixture and the beans (liquid and all), return to a boil, cover, reduce the heat to low, and simmer for 1 hour. (The mixture will be soupy.)
  • Spoon over boiled rice, and garnish with the Cheddar cheese and the chopped onion. Pass the Tabasco sauce and the corn tortillas or tacos.

If you love heat, this chili is for you. I've taken a combination of a few of my favorite chili recipes and added my own personal touches to create a very flavorful, spicy chili. You can also sub dried basil and oregano for fresh, and bacon bits for crumbles; fresh is always a better flavor though. The longer it simmers, the better it tastes. Serve in bowls with Cheddar cheese and sour cream topping. Goes well with cornbread.

2 pounds ground beef
2 ½ cups tomato sauce
1 (15 ounce) can light red kidney beans, drained and rinsed
1 (15 ounce) can dark red kidney beans, rinsed and drained
1 (8 ounce) jar medium salsa
3 stalks celery, chopped
½ onion, chopped
1 red bell pepper, seeded and chopped
1 jalapeno pepper, chopped
¼ cup chili seasoning mix
3 tablespoons crumbled cooked bacon
3 cloves garlic, pressed
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh basil
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon white sugar

Steps:

  • Break ground beef into a large stock pot over medium-high heat; cook and stir until completely browned, 7 to 10 minutes. Drain fat from the beef and return pot to heat.
  • Stir tomato sauce, light red kidney beans, dark red kidney beans, salsa, celery, onion, bell pepper, jalapeno pepper, chili seasoning, bacon, garlic, oregano, basil, salt, black pepper, and sugar with the ground beef in the pot. Place a cover on the pot and cook the chili until the flavors have blended, at least 1 hour.

1 Green bell pepper -- f/chopped*
1 celery stalk -- finely chopped*
2 Garlic cloves -- minced*
2 teaspoons oil
4 pounds lean ground beef
2 Stewed tomatoes -- 14 1/2oz cns
1 tomato sauce -- 15-oz can
1 Tomato paste -- 6-oz can
1/4 cup green chili salsa
1 Jalapeno -- finely chopped
3/4 cup chili powder
1 4-oz can diced green chilies
1/2 cup Water
1 teaspoon Salt

Steps:

  • In Dutch oven, saute first four starred ingredients in hot oil until tender. Add meat, 1 pound at a time, stirring until meat loses redness. Drain; add water. Add remaining ingredients, stirring after each addition. Simmer 2 1/2 to 3 hours, stirring frequently. Season to taste with garlic salt and pepper, if desired.
