Like my mother, I have a reputation for making great pies...thanks to wonderfully unique recipes like this. After the pie is baked, a cream sauce is poured inside. It's irresistible!

2-1/4 cups all-purpose flour
3/4 teaspoon salt
3/4 cup cold butter, cubed
6 tablespoons cold water
FILLING:
6 cups sliced peeled tart apples
1 tablespoon lemon juice
3/4 cup sugar
2 tablespoons all-purpose flour
1 teaspoon grated lemon zest
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2 tablespoons butter
CREAM SAUCE:
1 large egg
2 tablespoons sugar
1 tablespoon lemon juice
3 tablespoons cream cheese, softened
1/4 cup sour cream

Steps:

  • In a large bowl, combine flour and salt; cut in butter until mixture resembles coarse crumbs. Gradually add water, tossing with a fork until dough forms a ball. Divide dough in half. Roll out one portion. Line a 9-in. pie plate with bottom crust; trim even with edge of plate. Set aside., In a large bowl, toss apples with lemon juice. Combine the sugar, flour, lemon zest, cinnamon and salt; add to apples and gently toss. Mound apples in pastry shell so center is higher than edges; dot with butter. , Roll out remaining dough to fit top of pie; cut a hole in the center about the size of a quarter. Place over filling; trim, seal and flute edges. Cut slits in top. Add decorative cutouts if desired., Cover edges loosely with foil. Bake at 450° for 10 minutes. Reduce heat to 375° and remove foil. Bake 35-40 minutes longer or until crust is golden brown and filling is bubbly. Cool on wire rack for 10 minutes., Meanwhile, in a small saucepan, beat the egg, sugar and lemon juice. Cook and stir over low heat until mixture is thickened and reaches 160° and coats the back of a metal spoon. , Remove from the heat; stir in cream cheese and sour cream until smooth. Slowly pour into center of pie. Cool on wire rack for 1 hour. Cover and refrigerate until serving.

2 cups flour
1 cup unsalted butter (, cut into pieces)
1 tbsp kosher salt
1 tbsp sugar
1 tbsp apple cider vinegar or white vinegar
1 tbsp ice water
1 egg ((beaten with the same amount of water))
3/4 cup all-purpose flour
1/3 cup brown sugar
1/2 tbsp salt
6 tbsp unsalted butter
4 medium size apples
1 tbsp lemon juice
1.5 cinnamon powder
1/4 cup sugar

Steps:

  • Prepare the filling: Peel, cut the cores, and cut it into 1 inch thick. Place those in a bowl and mix it with sugar, cinnamon and lemon juice.
  • Mix the pie crust: Mix the salt, sugar and flour in a medium bowl. It's time to butter the pie and mash it between your fingers.
  • Knead the crust: Place the dough onto a clean surface, add vinegar and ice water. Mix with your fingers until combined, then start to knead the dough. It takes only a few minutes to divide into two discs, approximately 1 inch thick. Pack the dough and refrigerate it for at least 2 hours.
  • Blind-bake and form the bottom crust: Bring 1 disc from the refrigerator and roll it to fit about a 9 inch pie pan. Preheat the oven to 375°F. Crimp the edges with your fingers and seal it with egg wash. You can sprinkle it with Demerara sugar if you prefer.
  • Top crust and add the filling: Bring the second disc, when it has cooled enough add the filling and top the second crust. Crimp the edges with a fork and seal with egg wash. Cut the top crust to steam out from the filling.
  • Bake the pie: bake it for 40 minutes or until crust is deep golden brown, rotate it once halfway through. (If edges start to burn before the pie is baked then cover it with aluminum foil)
  • Allow to cool: After removing it from the oven, cool it at least 30 minutes before cutting. Serve it with whipped cream or ice cream or you can add cheddar cheese.

1/2 cup packed brown sugar
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger

Dough for double-crust pie
1 tablespoon butter
1 large egg white

Steps:

  • Preheat oven to 375°. In a small bowl, combine sugars, flour and spices; set aside. In a large bowl, toss apples with lemon juice. In 2013, at least, one of the great pie makers in New York City was Kierin Baldwin, the pastry chef at The Dutch in the SoHo neighborhood. This recipe is adapted from hers, for a plain apple pie. It benefits from heeding her advice to pre-cook the filling before baking. "Apple pies that have crunchy, raw apples in them are a pet peeve of mine," Ms. Baldwin said. Peel and core the fruit, cut it into slices, then macerate them in a plume of sugar. Cook these soft with a splash of acid (like lemon juice or cider vinegar) and a hint of cinnamon and allspice, then add some starch to thicken the whole. 2 1/2 pounds apples, peeled and cored, then cut into wedges (5 large honeycrisps will do it)
1/4 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
3/4 cup plus 1 tablespoon sugar
2 tablespoons all-purpose flour
2 teaspoons cornstarch
1 tablespoon apple cider vinegar
1 recipe all-purpose pie dough
1 egg, lightly beaten

Steps:

  • Melt butter in a large saute pan set over medium-high heat and add apples to the pan. Stir to coat fruit with butter and cook, stirring occasionally. Meanwhile, whisk together the spices, salt and 3/4 cup sugar, and sprinkle this over the pan, stirring to combine. Lower heat and cook until apples have started to soften, approximately 5 to 7 minutes. Sprinkle the flour and cornstarch over the apples and continue to cook, stirring occasionally, another 3 to 5 minutes. Remove pan from heat, add cider vinegar, stir and scrape fruit mixture into a bowl and allow to cool completely. (The fruit mixture will cool faster if spread out on a rimmed baking sheet.)
  • Place a large baking sheet on the middle rack of oven and preheat to 425. Remove one disc of dough from the refrigerator and, using a pin, roll it out on a lightly floured surface until it is roughly 12 inches in diameter. Fit this crust into a 9-inch pie plate, trimming it to leave a .5-inch overhang. Place this plate, with the dough, in the freezer.
  • Roll out the remaining dough on a lightly floured surface until it is roughly 10 or 11 inches in diameter.
  • Remove pie crust from freezer and put the cooled pie filling into it. Cover with remaining dough. Press the edges together, trim the excess, then crimp the edges with the tines of a fork. Using a sharp knife, cut three or four steam vents in the top of the crust. Lightly brush the top of the pie with egg wash and sprinkle with remaining tablespoon of sugar.
  • Place pie in oven and bake on hot baking sheet for 20 minutes, then reduce temperature to 375. Continue to cook until the interior is bubbling and the crust is golden brown, about 30 to 40 minutes more. Remove and allow to cool on a windowsill or kitchen rack, about two hours.

2 1/2 cups flour
1 teaspoon sugar
1/4 cup shortening
1 teaspoon salt
1 cup cold butter, cut in small pieces
6 to 8 tablespoons ice cold water

Steps:

  • Chill your fat and water! This is essential. Cut your butter into small pieces and add to your measured flour and salt. Cut the butter in quickly and then cut in the shortening. Your mixture should resemble coarse meal. Bigger lumps of fat are just fine; aim for pea-sized at biggest. Slowly add the water and watch closely as you work it in with the edge of a spatula or continue pulsing. It should still look dry. Grab some with your hand and squeeze. Did it hold together? Then you have enough water. If it didn't, or you're not sure, add a little more and mix quickly. Test again. Divide the dough in half to make single crust amounts. Wrap up the dough up by placing a portion of it on a piece of plastic wrap. Using the wrap, instead of your hands, push the dough into a flat disk. Refrigerate this for an hour or more. Sometimes dough gets too hard in the refrigerator. If this happens to you, let it warm up a little (15 or 20 minutes) on the counter before you roll it out. Using a lightly floured board, begin by rolling from the middle of the disk up. Turn the dough one quarter and repeat. To avoid toughening of the pastry, always roll in one direction and turn the dough often. For berry pies or other pies that may leak, roll the crust a little thicker. Carefully fold the dough in half, pick it up and lay across the pie plate. Open up the dough and gently work it into the plate. If it tears or splits, just pinch it together again, or use scraps to repair any holes. Crimp the edges. Use the dough as called for in your recipe. Some call for an unbaked pie crust, and some call for a baked pie crust.
