This recipe is from my sister. Our family requests them every holiday season, and it wouldn't be Christmas without them! They are a great addition to your cookie trays and cookie tins to give as gifts to the neighbors, co-workers, friends and family. I hope you will try them, as they truly are fantastic! Word of warning::: These go fast, so make plenty!!! To avoid burning my hands from the hot mixture, I pick up the mixture with a piece of saran wrap, then squeeze it together with my hands and form the log, then roll the log in the coconut. Works great!

Number Of Ingredients 8

1/2 cup butter or 1/2 cup margarine
1 cup sugar
3 cups dates, chopped
1 egg
1 teaspoon vanilla
1/2 cup walnuts, chopped
3 cups Rice Krispies
1 (7 ounce) bag sweetened flaked coconut

Steps:

  • Put butter, sugar, dates, and eggs in a heavy bottomed pan. Bring to boil over medium heat, and stir. When it starts to boil, stir constantly (about 10 minutes) until the liquid starts pulling away from the sides of the pan while you are stirring it, then remove from heat.
  • Add vanilla, walnuts and Rice Krispies, and mix in well.
  • Butter your hands and put enough mixture in the palm of your hand (about 2 T.). Roll into logs with your hands.The logs should be about 3" long by 1/2" wide. (The mixture will be hot, so be careful and work quickly).
  • Roll each log in flaked coconut and place on waxed paper until completely cool. Store in a plastic container with cover.

2-1/2 cups graham cracker crumbs, divided
24 large marshmallows, snipped
8 ounces dates, chopped
2 cups chopped walnuts
1-1/4 cups heavy whipping cream
Whipped cream, optional

Steps:

  • In a bowl, combine 2 cups of graham cracker crumbs, marshmallows, dates and walnuts. Stir in cream; mix thoroughly. Shape into a 14x3-in. log. Roll in remaining crumbs. , Wrap tightly in plastic wrap or foil. Refrigerate at least 6 hours or overnight. Slice; garnish with whipped cream if desired.

1 c warm milk
2 pkg yeast
1 1/2 Tbsp sugar
1 c flour
STEP 2
3 c flour
1/2 lb soft oleo
3 egg yolks
STEP 3
1 lb walnuts
8 oz dates
1/2 c sugar
1 tsp vanilla extract
3 egg whites

Steps:

  • 1. Step 1 of ingredients- Add yeast to warm milk. Add sugar and flour. Set pan in warm water and let Stand till rises. Cover. Note: do not boil. Just warm.
  • 2. Step 2 of ingredients Mix ingredients of step two, reserving egg whites for step three. Once mixed, add the yeast mixture to they mixture. This makes your dough.
  • 3. Step 3 of ingredients(the filling)- Grind walnuts and dates together in a grinder or food processor. If you alternate adding ingredients it will help prevent clumping. I do this step first and set aside.
  • 4. Mix sugar, vanilla and egg whites. Beat until whipped and peaks. Now fold this into date nut mix. Note: this step can be done in advance.
  • 5. Then take dough you made and divide into four sections. This makes it more manageable and ensures quantities.
  • 6. Taking a section of your dough, aprx a Tablespoon size of dough and make balls. Smaller then a golf ball. Will need powdered sugar to prevent sticking. Roll out dough balls. Flip to get powdered sugar on each side.
  • 7. Divide your date nut mix as you did your dough. Take aprx 1 1/2 teaspoon of nut mix and place in center of dough(rolled out crust).
  • 8. Folding dough- Fold over bottom side. Then fold in ends (left and right side). Now fold over top. Once dough is sealed, press from center out to move filling to ends.
  • 9. Pinch and form into half moons. Place seem side down on parchment lined cookie sheets.
  • 10. Bake 8-10 minutes on 375. Just as it begins to golden on the bottom. Any longer they can become dry.
