Aunt Jojo's Politically Incorrect Potato and Sausage Soup image

Number Of Ingredients 11

6 to 8 Yukon gold potatoes (or 4 large baking potatoes, like russets), peeled and diced into 1-inch pieces
4 cups chicken stock
2 pounds hot sausage, out of the casing
1 1/2 cups diced onion
1 3/4 cups finely diced celery
4 ounces butter
1 quart heavy whipping cream
3 or 4 tablespoons balsamic vinegar (white or dark)
1 tablespoon vanilla
4 tablespoons finely chopped flat-leaf parsley
Salt and pepper, to taste

Steps:

  • To a large stock pot, add potatoes and chicken stock. Bring to a simmer and cook until potatoes are fork tender, about 20 minutes.
  • To a saute pan over medium heat, add sausage and chopped onion in pan and saute until completely cooked. Drain sausage mixture, add celery, and saute a few additional minutes. Add sausage mixture to stockpot with butter. Add cream and extra broth if needed. Add vinegar, vanilla, and parsley at end of cooking. Season, to taste, with salt and pepper.

2 cups all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
⅓ cup milk
lemon, zested and juiced
1 teaspoon vanilla extract
1 cup unsalted butter, at room temperature
1 ½ cups white sugar
3 eggs

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a loaf pan.
  • Whisk flour, baking powder, and salt together in a bowl. Mix milk, lemon juice, and vanilla extract together in a small bowl.
  • Beat butter and lemon zest with an electric mixer until light and fluffy, about 5 minutes. Add sugar and beat until fluffy again. Don't let butter get too warm. Beat in eggs one at a time, making sure each one is fully incorporated before adding the next.
  • Add the flour mixture alternately with the milk mixture, beating batter after each addition. Pour batter into the prepared loaf pan.
  • Bake in the preheated oven until top is golden and a toothpick inserted into the center comes out clean, about 70 minutes. Run a table knife around the edges and cool in the pan for 15 minutes. Invert onto a wire rack to cool.

1/2 cup shortening
1/2 cup packed brown sugar
1/2 cup molasses
1/4 cup water
3 cups all-purpose flour
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/8 teaspoon ground allspice
1/2 teaspoon baking soda
1/2 teaspoon salt
Vanilla frosting and nonpareils, optional

Steps:

  • In a large bowl, cream shortening and brown sugar until light and fluffy. Beat in molasses and water. In another bowl, whisk flour, spices, baking soda and salt; gradually beat into creamed mixture., Divide dough in half. Shape each into a disk; placed in covered freezer container, separated with waxed paper. Freeze until firm enough to roll, about 1 hour., Preheat oven to 375°. On a floured surface, roll each portion of dough to 1/4-in. thickness. Cut with a floured 5-in. moose-shaped cookie cutter. Carefully place 1 in. apart on ungreased baking sheets. Bake until set, 7-9 minutes. Cool on pans 5 minutes. Remove to wire racks to cool. If desired, pipe with vanilla frosting and decorate with nonpareils. Freeze option: Transfer wrapped disks to a covered freezer container, separated by waxed paper; freeze. To use, thaw dough in refrigerator until soft enough to roll. Prepare and bake as directed.

ASHLEY'S AND JOJO'S FRIED CHICKEN

This is a recipe that me and one of my favorite aunts, Joanna, used to make when I would spend the summer with her. The marinade has many variations. (The variations are that you can use whatever you want to. Our variations depended on budget alone for my aunt is an artist with shallow pockets.) Marinating is key to the success of this recipe. I try to marinate overnight or in the morning so that it can be ready when I get hiome from school or work. An hour or two will make a difference but the longer the chicken is in the marinade, the more delicious it will be in the end. You don't have to use chicken legs, but that is me and JoJo's favorite part of the chicken. Enjoy!

1 small white onion
1 1/2 tablespoons fresh rosemary
1 (36 ounce) bottle of zesty Italian dressing
1/2 cup sugar
8 -10 chicken legs
2 tablespoons garlic powder
2 tablespoons onion powder
2 tablespoons cajun seasoning
4 eggs
1 tablespoon Worcestershire sauce
2 cups all-purpose flour
vegetable oil, for frying

Steps:

  • Peel and roughly chop onion and rosemary. Stir in a large bowl or plastic container along with sugar and entire bottle of italian dressing. Add chicken to mixture and refrigerate for at least six hours.
  • Remove chicken from marinade and put in a clean, empty bowl or a clean kitchen sink. Season chicken with half of the garlic powder, half of the onion powder, and half of the cajun seasoning. Toss the chicken around and rub the spices very well into the skin of the chicken.
  • In another bowl beat eggs and worchestershire sauce very well.
  • Add flour and remaining, garlic powder, onion powder, and cajun seasoning into a ziploc bag. Seal the bag and shake very well to blend the flour and spices.
  • Dip each piece of chicken into egg mixture, then into flour mixture and then drop into the hot oil. Do not overcrowd chicken into skillet. Deep fry until bone in chicken is white.
  • Place on a cooling rack or paper towel and let cool.
  • Serve.

1 can(s) pork and beans
1 can(s) spaghetti sauce of your choice
1 large green pepper diced
1 large onion diced
1/2 c thai sweet chili sauce
1/2 tsp chili powder
1 tsp paprika, sweet mild
1 Tbsp garlic powder
1/2 tsp white pepper

Steps:

  • 1. You can also add other sweet peppers like yellow and red. Brown hamburger with diced onions and peppers. Drain off grease. Add can of pork and beans including the sauce, add all the other ingredients and stir. Cook thoroughly and let simmer.

5 drops black gel food coloring, plus more as needed
1 ½ tablespoons cold water
½ tablespoon unflavored gelatin powder
2 tablespoons boiling water
1 tablespoon sugar
½ oz rumchata
1 oz blackberry-flavored liqueur
¼ cup full-fat coconut milk
4 drops purple gel food coloring, plus more as needed
1 drop pink gel food coloring, plus more as needed
1 ½ tablespoons cold water
½ tablespoon unflavored gelatin powder
2 tablespoons boiling water
1 tablespoon sugar
½ oz rumchata
1 oz cream-flavored vodka, whipped
¼ cup full-fat coconut milk
4 drops mint gel food coloring, plus more as needed
1 drop avocado gel food coloring, plus more as needed

  • Place the shot glasses in a baking dish or on a small rimmed baking sheet.

Pour in the boiling water and whisk until the gelatin is completely dissolved. Add the sugar, rumchata, whipped cream-flavored vodka, coconut milk, and black food coloring and whisk until fully incorporated, adding more food coloring if needed for a deeper color.

cloves 2 or 3 garlic, minced
2 cups tomato sauce, or tomato paste or ketchup
1/4 cup Worcestershire sauce
1 1/2 cups cola (cherry cola/cola/Dr Pepper/root beer)
1/4 cup red wine vinegar
2 tsp hot sauce
2 tsp A.1. Sauce
1 tsp soy sauce (optional)
1 tsp kosher or sea salt
2 tsp chili powder or Cajun seasoning
1 tsp ground black pepper
2 Tbsp molasses (optional)
2 Tbsp brown sugar (optional)
2 tsp dry mustard (optional)
1 Tbsp ground red peppers (optional)

Steps:

  • In saucepan saute onions and garlic in a little butter until they are soft and translucent.
  • Stir in all other ingredients. Simmer 15 - 20 minutes, stirring occasionally.
  • Chill for at least 1 hour.
