Steps:
- Cream butter; add in sugar gradually.
- Beat in egg.
- Mix in cooled chocolate, milk, cherry juice, sifted dry ingredients (flour, baking soda, salt), chopped walnuts, and cherries.
- Drop batter by heaping teaspoonsful onto greased baking sheets.
- Bake in a 350° oven for about 12 minutes.
- Place marshmallows, cut side down, on hot cookies.
- Cool; frost with Glossy Chocolate Frosting; top with walnut pieces.
- To make Glossy Chocolate Frosting: Melt butter and chocolate together; mix in sugar, vanilla, and enough milk to make frosting of spreading consistency.
JAM-DANDY MUFFINS
Taken from an old cookbook I picked up at a flea market, these are light, fluffy, and totally comforting on a cold winter's morning. The jam called for is apricot, but I didn't have any of that, nor do I like apricots. Sugar-free cherry jam from a local Amish lady was my choice of filling. It was so deeelish! The muffins were so light and the jam was total decadence! I can't wait until I try the blueberry jam.

Steps:
- Preheat oven to 400 degrees.
- In a mixing bowl, combine flour, sugar, baking powder, salt, and nutmeg. Cut in shortening until particles are fine and about the size of peas.
- Add milk and egg; mix just until thoroughly blended. There will probably be lumps.
- Spoon into a greased muffin tin or paper liners. Place 1 teaspoon of jam on top of each muffin, pressing into batter slightly.
- Sprinkle with the chopped nuts. Bake for 20-25 minutes or until the tops spring back when touched lightly.
- Serve warm. These can also be drizzled with powdered sugar glaze for added sweetness.

JIM DANDY COOKIES
Steps:
- Melt 2 squares chocolate and cool. Sift together: flour, baking soda, 1/4 tsp. salt and set aside.
- Cream 1/2 cup butter and brown sugar until light and fluffy. Add egg, beat well. Stir in ½ of the dry ingredients. Add 1/4 cup cherry juice, 2 Tbsp. milk, and rest of dry ingredients. Add chocolate, nuts, and 1/4 cup chopped cherries.
- Drop by tsp. full on ungreased pan. Bake at 350°F - 12 to 15 minutes or until springs back.
- While cookies are baking, cut marshmallows in half. While cookie is hot place cut side of marshmallow on top of cookies. If it does not stick put back in oven for a second time, but do not let melt. Top with frosting and add a nut or ½ a cherry, (red or green)
- Topping: Cook milk, 1/4 cup butter, 2 squares chocolate, 1/8 tsp. salt. Cook until thick. Remove from heat, add vanilla and sifted powdered sugar.
