We always make this at Thanksgiving! This is NOT the "souffle" type corn pudding that most people make. I am a CORN fanatic, so I love this recipe. Is great for Thanksgiving, but is easy enough to make for an everyday meal.

1/2 cup butter
1 egg
1 cup sour cream
1 (8 1/2 ounce) box Jiffy cornbread mix
1 (14 1/2 ounce) can creamed corn
1 (14 1/2 ounce) can whole kernel corn, drained

Steps:

  • Melt butter in a casserole dish.
  • Mix in egg and then all remaining ingredients.
  • Bake at 350 degrees for 1 hour.

2 eggs
2 (8 ounce) cans corn, 1 can drained
1 (15 ounce) can creamed corn
8 ounces sour cream
2 tablespoons butter

  • Mix all ingredients.
  • Grease 9x13-inch pan and pour in batter.
  • Dot with butter; bake at 350F for 45 minutes to 1 hour.
  • Cut in squares and serve.

1 (15.25-ounce) can whole kernel corn, drained
1 (15-ounce) can cream style corn
1/2 cup butter, softened
1 cup sour cream
1 (8.5-ounce) package dry cornbread mix (Jiffy)

Steps:

  • Preheat oven to 350°F (175°C). Lightly grease a 2-quart casserole dish. In a medium sized bowl, add the whole kernel corn, cream style corn, butter, sour cream, and corn bread mix; mix well. Pour mixture into the prepared casserole dish. Bake for 45 minutes in the preheated oven, or until a knife inserted in the center comes out clean. For a more of a pudding like texture, add 2 more eggs and half a cup of half and half. Tip: Rinse the corn to reduce the "canned" taste.

This is a classic Southern dish. I've been making it for years, and it's a family favorite. Try using Colby Jack instead of Cheddar or adding green chiles for a change.

2 eggs
2/3 c milk
1 c sharp cheddar cheese, shredded
1 can(s) creamed corn, 14 oz
1/2 tsp smoked paprika (substitute regular paprika if necessary)

Steps:

  • 1. Preheat oven to 400. Spray an 8x8 baking dish with cooking spray.
  • 2. Combine all ingredients in a large mixing bowl until well blended and pour into baking dish.
  • 3. Bake 40 minutes until nicely browned. Let rest for five minutes before serving. Serve with a spoon.

1 can(s) cream style corn

1 stick butter

Steps:

1 cup raisins or 1 cup chocolate chips
1/2 cup nuts
1/2 cup milk

1 teaspoon vanilla
1/4 teaspoon salt
2 cups boiling water

Steps:

  • Mix together 1st amount of brown sugar, flour, baking powder, raisins or chocolate chips, nuts and milk in a greased casserole.
  • Mix 2nd amount of brown sugar, cinnamon, vanilla, and salt.
  • Spread over batter and dot with butter.
  • Pour boiling water gently over top.
  • Bake at 350F for 45 minutes or microwave for 9 minutes.
