Zest and juice of 1 lime
1/2 teaspoon chili powder
2 scallions, finely chopped, plus more, thinly sliced for garnish, if desired
Coarse salt and ground pepper
1 1/2 pounds jicama (1 medium), cut into sticks

Steps:

  • In a small bowl, place sour cream, lime zest and juice, chili powder, and chopped scallions. Season with salt and pepper; mix to combine. Transfer to serving dish, and garnish with sliced scallions, if desired. Serve with jicama sticks.

When you buy a Jicama make sure it is very firm and free from mold patches. When you slice it open the flesh must be white otherwise it is too old. This is a very low calorie recipe, it fact it is low everything!

1 lime, to squeeze on the jicama
1 teaspoon chili powder (more if you like it hot)

This is an adopted recipe that I have finally had the opportunity to try. The combination of the lime with the chili salt on the crisp jicama is really good. I used a chipotle chili pepper and found the ration of salt to heat to be just right. The original posted tried this at a sample table in Whole Foods Market.

1 tablespoon kosher salt
1/4-1/2 teaspoon chili powder
1 jicama (1 1/2 to 2 lb.)
2 limes

Steps:

  • Mix salt with chili powder to taste. Place in a small, shallow bowl.
  • Peel jicama. Rinse and cut into 1/4-inch-thick wedges or 1/2-inch-thick sticks 3 to 4 inches long.
  • Cut limes into wedges. Arrange jicama, limes, and chili salt on a platter.
  • To eat, rub jicama with lime, and then dip in chili salt.
  • You can also toss the jicima with the ljuice of the two limes, then mix in spices and serve with toothpicks.
