As I suspected, the spicy, aromatic marinade worked wonderfully with the lean mild pork. As long as you heed my warnings not to overcook the meat, you and your guests will be very happy with this.

2 (1 1/2 pound) pork tenderloin, trimmed of silver skin
½ onion, chopped
⅓ cup fresh thyme leaves
¼ cup white vinegar
4 cloves garlic
2 habanero peppers, seeded, or more to taste
2 tablespoons minced fresh ginger
2 tablespoons soy sauce
2 tablespoons vegetable oil
1 tablespoon brown sugar
2 teaspoons ground allspice
½ teaspoon ground black pepper
¼ teaspoon cayenne pepper
¼ teaspoon ground nutmeg
¼ teaspoon ground cinnamon

Steps:

  • Cut the tenderloin in half and set the thinner end to the side. Cut the thicker end in half lengthwise. You should have 3 mostly equal pieces.
  • Combine onion, thyme, vinegar, garlic, habanero peppers, ginger, soy sauce, vegetable oil, brown sugar, allspice, black pepper, cayenne pepper, nutmeg, and cinnamon in a blender. Puree until smooth, stopping to scrape down sides.
  • Pour Jerk marinade into a resealable plastic bag. Add pork tenderloin pieces, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 4 to 6 hours.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Grill pork, moving if necessary to avoid overcooking the thin parts of the meat, until dark grill marks appear and they lift easily from the grill, 6 to 7 minutes each side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

2 tablespoons Jamaican jerk seasoning
1 teaspoon ground paprika
1 teaspoon ground thyme

1 (1 1/2 pound) pork tenderloin
4 slices bacon, or more to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine brown sugar, jerk seasoning, paprika, thyme, oregano, seafood seasoning, and crushed red pepper in a bowl; rub generously all over the tenderloin. Wrap with bacon and secure with toothpicks. Coat lightly with oil and place in a loaf pan or casserole dish. Sprinkle any remaining spice rub on top, cover with some diced onion, and surround with remaining onion.

Steps:

  • DIRECTIONS.
  • Combine the Jerk Spice ingredients in a small bowl and mix to form a coarse paste. Or blend in food processor.
  • Coat pork tenderloin and Marinate at least 4 hours or overnight. The longer it marinates, the more flavor the pork absorbs.
  • Pineapple Mango-Kiwi Salsa.
  • Put all in a bowl, mix it up, and let it sit for a little bit to allow the flavors to mingle.
  • Grill tenderloin, covered, over indirect medium heat for 10 minutes each side.
  • Juices should run clear or temperature 160 degrees.
  • Let roast sit about 10 minutes to let juices settle.
  • Slice and serve with Pineapple Salsa.

  • Preheat oven to 350 Sprinkle pork all over with 5tsp jerk seasoning and salt, coating all over. Let stand. 1 tablespoon dried thyme
1/2 teaspoon onion powder
1/2 teaspoon ground allspice

2 tablespoons canola oil

Steps:

  • Start with a well trimmed tenderloin making sure to remove any of the "silver" skin from the surface. The silver skin is a shiny membrane you typically find on tenderloins. Once you've trimmed the ternderloin you're ready to prepare your jerk rub.
  • In a small bowl, stir together the thyme, dried onion, allspice, cracked black pepper, cinnamon, cayenne pepper, and salt. Coat tenderloin lightly with oil and rub seasoning onto meat. Set aside to marinate (wrap tightly in plastic wrap and refrigerate for 6-8 hours).
  • Prepare grill for direct heat grilling over high heat. Once grill is hot place marinated pork onto the hottest part of the grill and cook the tenderloin for about 3 minutes on each of its four sides. Cook just until the pork feels firm and springs back when pressed or an instant-read thermometer reads 145*F when inserted into the thickest part of the tenderloin. Be careful not to overcook it.
  • Remove from grill and allow to rest for 5 minutes before cutting. Slice in about 3/4" slices and serve.

AMAZING JERK PORK TENDERLOIN

This is one of the very best recipes for jerk pork tenderloin, and will work just as well using a pork loin roast. If you are afraid of the extreme heat just use 1 jalapeño pepper seeded and finely chopped in place of the habanero pepper, or use the Scotch Bonnet peppers, my family loves extreme heat so I use 5 habaneros lol, please adjust the heat to suit your taste! Plan ahead the pork needs to marinate for 24 hours. This recipe is for one 1-1/2-pound pork tenderloin, you can double the recipe, but make two separate bowls of marinade and marinade each tenderloin in a separate bag. Scotch bonnet peppers can be used also in place of the habanero peppers. For the habanero pepper use 1 for a mildly spicy flavor and 4 for very spicy, if you are using the Scotch Bonnet peppers you would use 10-12 to give you the proper heat of an authentic Jerk marinade, although it is not necessary to "butterfly" the pork, but it will increase the marinade to penetrate the flavors better. Try to use only kosher salt for this. If you love Jerk, you will LOVE this!

2 to 16 scotch bonnet chiles (for a milder jerk, seed the chiles)
2 bunches scallion, both white and green parts, trimmed and cut into 1-inch pieces
1/2 onion, medium, cut into 1-inch pieces
1 piece ginger, fresh (1 inch), thinly sliced
3 cloves garlic, peeled
1 tablespoon thyme, fresh or 2 teaspoons dried
2 1/2 teaspoons allspice, ground
1/2 teaspoon black pepper, freshly ground
1/2 teaspoon nutmeg, freshly grated
1/4 teaspoon cinnamon, ground
1/4 cup white vinegar, distilled
3 tablespoons soy sauce
2 tablespoons vegetable oil
3 tablespoons salt, coarse (kosher or sea)
1 tablespoon light brown sugar, firmly packed
1 to 2 tablespoon vegetable oil, for basting

Steps:

  • 1. Butterfly the tenderloins, for 1-inch-thick sheets. Then, using the tip of a paring knife, make holes 1/4 inch deep all over each sheet of meat. Place the tenderloins in a large nonreactive baking dish and set aside while you prepare the seasoning.2. Combine the chiles, scallions, onion, ginger, and garlic in a food processor and process until finely chopped. Add the thyme, allspice, pepper, nutmeg, cinnamon, vinegar, soy sauce, oil, salt, and sugar and process to a smooth purée (see Notes).3. Using a rubber spatula, spread the seasoning mixture over the tenderloins, stuffing it into the holes. Cover and let marinate, in the refrigerator, for at least 4 hours, turning the meat several times.4. If using a charcoal grill, preheat it to medium. If using a gas grill, place the wood chips in the smoker box and preheat the grill to high when smoke appears, lower the heat to medium.5. When ready to cook, if using charcoal, toss the wood chips on the coals. Oil the grill grate. Arrange the sheets of pork on the hot grate and grill, turning with tongs and brushing occasionally with oil, until nicely browned on both sides and cooked through, 16 to 20 minutes in all. 1 small jalopeno pepper

Pinch dried nutmeg
Pinch ground cinnamon
2 pounds pork tenderloin
Mango Salsa:
2 ripe mangoes, peeled, pitted and diced
4 tablespoons diced red bell pepper
2-1/2 tablespoons golden rum
2 tablespoons fresh lime juice
1 tablespoon sugar

  • Set a ridged two-burner stove-top grill over medium-high heat, and using tongs and a small cloth in plain oil, rub over grill. Combine the jerk seasoning ingredients and mix well. Rub sparingly but well over entire pork tenderloin, including both ends. Reduce heat under the grill to medium heat; place pork tenderloin on the grill and, using, tongs turn the pork tenderloin every 10 minutes for a total of 25 to 30 minutes. Barbecued Jerk Pork Tenderloin With Tomato Peach Curried Chutney image

This is a KILLLER pork recipe you must try! Start this recipe a day ahead as the pork needs to marinade overnight and the peach relish needs to be prepared and chilled overnight. You can also make this recipe using thicker cut pork chops.

3 lbs firm ripe peaches
1 lb tomatoes
1 large red onion
1 1/2 tablespoons minced fresh ginger
1 teaspoon salt (or to taste)
2 tablespoons vegetable oil
2 1/2 teaspoons curry powder
4 tablespoons sugar
2 tablespoons lime juice
3 scallions, trimmed (use white and pale green part only)
1 tablespoon chopped fresh thyme
1 1/2 teaspoons salt
1/2 teaspoon allspice
1/2 teaspoon black pepper
2 tablespoons fresh lime juice
1 1/2 tablespoons molasses (not blackstrap)
1 teaspoon hot sauce (Tabasco is good, or to taste)
2 pork tenderloin
4 tablespoons vegetable oil, for basting

Steps:

  • For the relish (make this a day ahead and chill) cut a shallow X in bottom of each peach and tomato using a sharp paring knife.
  • Blanch in 2 batches in a 4-quart saucepan of boiling water for about 10-12 seconds; transfer peaches and tomatoes using a slotted spoon to a large bowl of ice water, let stand until cool enough to handle.
  • Peel the peaches and tomatoes, then halve peaches lenghwise and remove the pit.
  • Cut the peaches into about 1-inch pieces, then coarsley chop the tomatoes.
  • In a heavy saucepan cook the onion, ginger and salt in oil over medium heat, stirring occasionally until softened (about 3-4 minutes).
  • Add in curry powder and cook stirring constantly for 1 minute.
  • Add in chopped peaches and tomatoes along with any juices in the bottom of the bowl.
  • Add in sugar and lime juice; simmer uncovered stirring occasionally until the mixture is thick and the peaches are tender but still hold their shape (about 8 minutes).
  • Transfer to a bowl and cool to room temperature.
  • Cover and refrigerate overnight.
  • For the pork; in a blender combine scallions, thyme, salt, allspice, pepper, lime juice, molasses and hot sauce; blend until smooth.
  • Place the pork in a glass dish and rub the marinade all over on all sides.
  • Cover, place in the refrigerator for 24 hours, turning occasionally a couple of times during the 24 hours.
  • IMPORTANT; bring the pork to room temperature before grilling.
  • Prepare the grill to medium-hot.
  • Discard any marinade in the dish, then brush the pork lightly with oil.
  • Grill pork turning occasionally and basting frequently with oil until the thermometer inserted diagonally into center of pork registers 145F, about 15-25 minutes (I grill my pork just to 140F so it will not be overdone and dry, but still be moist).
  • Transfer the pork to a cutting board and let sit for 15 minutes (the internal temperature will rise to about 155F).
  • Serve the grilled pork with prepared chilled peach relish.

I feel that the apple cider makes this jerk marinade unique, and a bit untraditional. Being from the apple country of Virginia, the apple cider was a natural. For added flavor, add apple or hickory wood chips soaked in water on top of the hot coals. You can begin grilling when the chips start smoking. Grilled pineapple goes well with this as a side dish.

2 habanero peppers, seeded
1 small onion, chopped
2 bunches green onions, chopped
1 (1 inch) piece fresh ginger, peeled and thinly sliced
3 cloves garlic, peeled
¼ cup apple cider
¼ cup white vinegar
3 tablespoons soy sauce
2 tablespoons olive oil
1 ½ tablespoons packed brown sugar
¾ teaspoon mustard seed
1 tablespoon kosher salt
1 teaspoon black pepper
1 tablespoon dried thyme
1 tablespoon ground allspice
1 teaspoon ground nutmeg
½ teaspoon ground cinnamon
1 cup wood chips, soaked
2 ½ pounds pork tenderloin, butterflied and pounded to 3/4 inch

Steps:

  • Combine habanero peppers, onion, green onions, ginger, and garlic, in a blender or food processor. Blend until quite fine. Add cider, white vinegar, soy sauce, olive oil, and sugar. Season with mustard seed, salt, pepper, thyme, allspice, nutmeg, and cinnamon. Continue to blend until smooth.
  • Place the pork tenderloin in a shallow casserole dish. Spread mixture on all sides of the meat (wear gloves or use a spatula). Cover and refrigerate for 8 hours.
  • Preheat grill for medium-high heat.
  • Lightly oil grate. Add soaked wood chips to coals, if using. Grill slabs of tenderloin, turning as needed, about 6 to 7 minutes on each side, or until the internal temperature has reached 145 degrees F (63 degrees C).

1 tbsp whole black peppercorns
2 tsp whole allspice
1 tsp coriander seed
4 cloves
2 tbsp vegtable oil
1 x 3 inch piece of ginger, peeled and cut into large chunks
4 scallions, trimmed and cut into four pieces
4 cloves garlic, peeled and cut in half
1/4 cup chopped thyme
1 scotch bonnet (optional)
1 tbsp brown sugar
1 tbsp soy sauce
1 tsp cinnamon
1 tsp salt
1 pinch nutmeg
2 x 1 lb. pork tenderloin, cleaned of sinew
Chayote Black Beans
1 tbsp butter
1 clove garlic, finely chopped
1 chayote, diced
1 bay leaf
1 can black beans, drained and rinsed
salt and pepper to taste
Pineapple Salsa
1/2 pineapple, diced
1/2 red onion, finely diced, soaked in cold water for 10 minutes and drained
1 jalapeno, seeded and finely diced
2 tbsp chopped cilantro
1 tbsp sugar
zest of 1 lime
juice of 1 lime
pinch of salt
Fried Plantains
1 cup vegatable oil
2 ripe plaintains, peeled and sliced

Steps:

  • Directions: Jerk Pork Tenderloin In a spice grinder, mix black peppercorns, allspice, coriander seeds, and cloves until finely ground. In a food processor mix olive oil, ginger, scallions, garlic, and thyme, scotch bonnet pepper, brown sugar, soy sauce, cinnamon, salt and nutmeg. Add spice mixture and blend until mixture resembles a thick paste Rub pork with jerk paste, making to sure to cover completely. Let marinate 1-2 hours at room temperature, or refrigerate overnight. Pineapple Salsa In a large bowl, toss together all ingredients. Season to taste with salt. Fried Plantains In a large skillet, heat oil over medium high heat. Place sliced plantains in oil and fry for 2-3 minutes per side or until lightly browned. Drain on paper towel.

1 bunch scallions, thickly sliced
2 tablespoons white vinegar
1 piece (2 inches) peeled fresh ginger, coarsely chopped
1 clove garlic
2 jalapeno peppers (ribs and seeds removed)
4 tablespoons olive oil, plus more for grates
2 tablespoons fresh thyme, leaves
1 teaspoon ground allspice
1/4 teaspoon ground nutmeg
Coarse salt and ground pepper
1 pork tenderloin (about 3/4 pound)
2 pounds Swiss chard, ribs and leaves separated, cut into 2-inch lengths

Steps:

  • In a blender, combine scallions, vinegar, soy sauce, ginger, garlic, jalapeno, 2 tablespoons oil, thyme, allspice, nutmeg, and 1/4 teaspoon ground pepper. Puree until smooth. Place marinade in a resealable plastic bag. Add pork, turning to coat. Refrigerate for at least 1 hour and up to 24 hours.
