3½ cups old-fashioned rolled oats
⅓ cup light brown sugar
2 teaspoons baking powder
1 teaspoon kosher salt
1 teaspoon cinnamon
¼ cup light flavored olive oil
3 eggs
1½ cups milk
1 cup craisins or raisins (optional)

Steps:

  • Preheat oven to 350°F. Grease a 10-inch pan with butter or coat with cooking spray. Combine the oats, brown sugar, baking powder, salt, and cinnamon in a large mixing bowl. Stir to combine. Add the oil, eggs, and milk and stir to combine. Add the craisins and stir once more.
  • Scoop the oat mixture into the greased pan and bake for 30 minutes. The oatmeal should be lightly browned, slightly crisp on top and around the edges. A knife inserted will come out mostly clean with wet crumbs. Remove from the oven and let cool for 10 minutes before serving. Slice into servings or scoop servings with a spoon. Enjoy!

6 cups quick cooking oats
¾ cup packed brown sugar
1 teaspoon salt
1 ½ teaspoons baking powder
6 eggs
2 cups milk
1 ½ teaspoons vanilla extract
⅔ cup canola oil
½ cup coarsely chopped walnuts

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, stir together the oats, brown sugar, salt and baking powder. In a separate medium bowl, stir together the eggs, milk, vanilla and canola oil. Pour the wet ingredients into the dry ingredients, and stir until well blended. Spoon into the prepared baking pan, and spread evenly. Sprinkle walnuts over the top.
  • Bake for 30 minutes in the preheated oven, or until a knife inserted into the center comes out clean.

Additional milk

Steps:

  • Preheat oven to 350°. In a large bowl, combine oats, brown sugar, baking powder, salt and cinnamon. In another bowl, whisk eggs, milk and butter. Stir into oat mixture until blended., Spoon into a greased 9-in. square baking pan. Bake 40-45 minutes or until set. Serve warm with milk.

One of my dear friends shared this recipe with me. It has become a favorite in our home, especially on chillier mornings.

Number Of Ingredients 10

3 cups quick-cooking oatmeal (not instant)
1 cup brown sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1 cup skim milk
1/2 cup butter or 1/2 cup margarine, melted
2 large eggs, lightly beaten
additional brown sugar, for serving
additional milk, for serving

Steps:

  • Mix all ingredients (except the additional brown sugar & additional milk) together.
  • Pour into a greased square glass baking dish and bake at 350 F for 40-45 minutes, or until a toothpick tests clean.
  • Scoop each portion into a small bowl, then pour a splash of milk over each- it should be just enough to be absorbed by the oatmeal (not soupy).
  • Sprinkle each with some brown sugar to taste and serve warm.

3/4 cup raisins
2 apples, chopped (or use pears)

Steps:
