FRUIT JELLO CUPS

I'd like to preface this recipe by saying that I am posting Recipe #249803 too. I prefer it even though we are not vegans, but certainly gelatin is easier to find than the ingredient used to 'set' in the vegan recipe. I make either recipe depending upon what I have available to substitute for the store bought fruit Jello cups. It's easy and much more affordable. I like to use those mini-ziplock containers with the lid because they are perfect in size and can stack in the fridge. You could also save a few pudding, jello or applesauce containers and just use foil to cover. You will need 8 for this recipe. This recipe is easy enough that the kids can help too (just take care with the boiling liquid) and each cup has two servings of fruit! For my bigger kids (4 and older)I like to drop my soft gummy vitamin(s) in before setting in fridge to gel. My kids call them the "treats" in the middle! You can customize this for smaller kids by pureeing the fruit (puree the vitamin too!) before adding to the cups. I love being sneaky!

2 (1/4 ounce) packages gelatin (can use a smidge less for a softer set)
2 tablespoons Splenda granular or 2 tablespoons white sugar
1 1/4 cups boiling fruit juice (apple juice is a great neutral flavor)
1 cup cold fruit juice (any but real pineapple & kiwi)
1 (14 ounce) can mixed fruit, in fruit juice (or canned fruit of your choice)
fresh fruit, cleaned and small-chunked can be substituted for canned. (Do not use kiwi or pineapple because those fruits contain enzymes that prevent the gelatin from gel) (optional)
1 -2 tablespoon lemon juice (for keeping fresh cut fruit from browning..can also use commercial product like (Fruit-Fresh, option) (optional) or 1 -2 tablespoon orange juice (for keeping fresh cut fruit from browning..can also use commercial product like (Fruit-Fresh) (optional)
food coloring (we like the extreme colors) (optional)

Steps:

  • If using fresh fruit, clean and peel hard skinned fruits (apples, bananas, pears, oranges, etc, melons, etc) and cut into small chunks. Use your choice of anti-browning agent and sprinkle, then toss to coat well the cut fruit. Set aside.
  • Boil fruit juice and sugar in a microwave safe container in the microwave until boiling. don't allow to much liquid to be lost to steam. Cover in microwave if you can. Stir well, making sure all sugar has dissolved. If using Splenda, do not add at this point.
  • Meanwhile, open can of fruit and drain juices into a separate medium sized non metal bowl.
  • Pour drained juices into a measuring cup, add Splenda and fill to 1 cup mark with fruit juice of your choice (remember, no real pineapple or kiwi juice.artificial flavoring is ok).
  • In the non metal bowl you already used, pour boiling fruit juice mixture and sprinkle gelatin in slowly while stirring until gelatin is dissolved.
  • Line up your cups and pour mixture to about half (using the cups I mentioned above). When all mixture is poured in, add 1 tiny drop to each container you want to color and mix with a spoon. The extreme colors are very bright/dark and I think the pink and green/yellow turn out the prettiest with the fruit. Don't use big drops or you wont be able to see the fruit as well. Sometimes I split one drop between two by putting one drop in one container and then pouring the mixture back and forth in the separate containers till desired color is achieved. The regular food coloring has nice Christmas colors. The kids love this part!
  • After you are happy with your colors, add about 2 TB of the chunked fruit to your cups. It will sink to the bottom and raise the level of the gelatin to within 1/4" of the top.
  • Cover and chill about 1 hour.
  • Feel free to use different kinds of juice and fruit. Each container has about 2 servings of fruit. This makes a firm set.if you prefer a softer set, add 1/8 cup more cold fruit juice.

20 little plastic cups
100 gumdrops

Steps:

  • Make jello to directions.
  • Pour into plastic cups.
  • let set until almost done.
  • I used a straw to push down the candies, but you place them where you want them.
  • make one pkg jello and fill the cups up.
  • Let set until done and enjoy.
  • When done you can see the candies in the jello.

2 pkg 3 oz. rasberry jello
1 can(s) 16 oz.whole berry cranberry sauce
2/3 c chopped walnuts

Steps:

  • 1. Drain pineapple,reserving juice.Add enough water to juice to measure 2 1/2 cups . pour in to sauce pan bring to a boil. Then pour hot water over jello mixes in a bowl,stir untill completely dissolved.
  • 2. Stir in cranberry sauce and pineapple and nuts. stir and mix. Spoon (I used a ladle )into paper lined muffin cups .Using your muffin pans.Then refrigarate about 2 half hours or untill firm. Then remove liners.

I have a recipe posted for Fruit Jello Cups that does not use the vegan setting agent if you are fine with using gelatin. See Recipe #249801. I just like the vegan version better because I am more comfortable with Agar" (also called "agar-agar")-as the setting agent. I think it sets better than gelatine too but it does take a lot longer to set. Other than the sub with the Jello (and it's necessary prep), this recipe is exactly like my other one. Stir well and bring to a boil, reduce the heat, and simmer, stirring often, for 5 minutes or until both the agar and sugar have dissolved. If using Splenda, cool mixture a bit before adding. Don't allow Splenda to boil because the texture changes and will affect the finished Jello.
  • Open can of fruit and drain.
  • Line up your cups and pour mixture to about half (using the cups I mentioned above). When all mixture is poured in, add 1 tiny drop to each container you want to color and mix with a spoon. LAYERED CHRISTMAS JELLO CUPS

Layered Christmas Jello cups are fun, festive and easy to make for holiday parties! This layered Jello recipe is made with cherry and lime gelatin for a delicious flavor combination in the perfect colors for Christmas!

4 small boxes (3 oz Jello - 2 boxes cherry, 2 boxes lime (or other green and red jello flavors!))
2 cups vanilla yogurt
whipped cream for topping, optional

Steps:

  • For each layer, boil 1 cup water (I do this in the microwave) and then add the contents of one flavor of jello. Stir with a fork until the jello is totally dissolved and then divide the mixture in half, saving half in a separate bowl.
  • Add 1/2 cup yogurt to half of the jello mixture and stir until well combined. Pour the yogurt/Jello mixture into your dishes* and then place in the refrigerator in the refrigerator for 20-30 minutes or until completely set.
  • Add 3 Tbsp water to the other half of the jello that you reserved. Set aside. As soon as the yogurt layer is set, you can pour the reserved layer on top. Refrigerate again until set.
  • Repeat steps 1-3 with the other flavor of jello and then repeat the steps two more times. If you use a deeper dish, you can repeat the layers as many times as you want - you'll just need more jello!
  • I like to put a little bit of whipped cream on top just before serving! Totally optional!

JELLO NO BAKE COOKIES & CREME CUPS

1 (12 5/8 ounce) package Jello no bake oreo dessert mix (crust mix and filling mix)
1/3 cup butter or 1/3 cup margarine, melted
1 1/3 cups cold milk

Steps:

  • MIX the Crust Mix (from the Oreo dessert mix package) and margarine thoroughly with fork until crumbs are well moistened. Press onto bottoms of 12 paper-lined muffin cups, using about 1 heaping tablespoons crumbs in each muffin cup.
  • POUR milk into deep medium bowl. Add Filling Mix (from the Oreo dessert mix package). Beat with electric mixer on lowest speed 30 seconds. Beat on highest speed 3 minutes. Do not under beat. Reserve 1/2 cup crushed cookies. Gently stir remaining crushed cookies into filling until well blended. Divide filling mixture among muffin cups. Top with reserved crushed cookies.
  • RREFRIGERATE at least 1 hour until set.

1 C boiling water
1 (4) serving size strawberry jello
2 C vanilla ice cream
TOPPING: 1 TBS COOL WHIP

Steps:

  • 1. Stir Boiling water into the Dry Jello. Mix ans stir at least 2 Min, until completely disolved.
  • 2. Stir in Ice cream. Whisk til well blended. Pour into 6 small clear 6oz cups Chill in refer til set. @ least 30 min.
  • 3. To Serve; Top with dollop of cool-whip. OPTION: HINT; Ok to use Sugar free Jello & Frozen Yogurt in place of ice cream.
