JELLO PARFAIT (STRAWBERRY)

Double-layered strawberry jell-o parfait cups -- strawberry jell-o on bottom and a strawberry jell-o mousse on top.

Number Of Ingredients 8

2 packages (3 ounces EACH) strawberry jell-o (+ boiling and cold water called for)
1 pint (about 2 cups) strawberries, (hulled and sliced)
2 and 1/2 cups COLD Sprite, (separated)
1 package (3 ounces) strawberry jell-o
4 ounces full-fat cream cheese, (softened)
1 container (8 ounces) Cool Whip, (completely thawed)
Optional: additional whipped topping or fresh whipped cream to top
Optional: fresh mint and strawberries for garnish

Steps:

  • Prepare a regular sized muffin tin: use 9 small balls, or wad up balls of foil (or paper) and place in the muffin tin. Place 9 clear plastic cups on top of the balls at an angle (see video at top of this page!) The small balls help to keep the cup at an angle.
  • Next prepare the strawberry jell-o (both packets) according to package directions (not for quick set, but for regular set). Fill up the cups evenly with the strawberry jell-o (be careful as you pour and ensure the cups stay at an angle).
  • Hull and slice the strawberries and then place a few slices of strawberries into each jell-o cup. Carefully transfer the muffin tin into the fridge and allow the strawberry jell-o to completely set up.
  • When the jell-o layer is nearly set up, you can begin on the mousse.
  • Place 1 and 1/2 cups Sprite in a microwave safe bowl or cup and microwave just until the mixture comes to a boil. Whisk the packet of strawberry jell-o into the Sprite.
  • Transfer the mixture to a high powdered blender and add in the cream cheese. Blend until completely smooth. And in remaining 1 cup of (COLD) Sprite and blend again until smooth.
  • Add in the completely thawed Cool Whip and blend just until smooth. (You can leave out about 1/2 cup for optional garnish at the end if desired).
  • Pour this mixture evenly over the jell-o layers (you shouldn't use as much of this mousse as you did of the jell-o or it tends to be overpowering).
  • Place in the fridge and allow to set completely.
  • If desired, garnish with fresh whipped cream (or 1/2 cup extra cool whip) and garnish with fresh mint and a small strawberry.

2 ½ cups mini pretzel
10 tablespoons unsalted butter, melted
8 oz cream cheese, 2 packages, at room temperature
1 ½ cups powdered sugar
1 teaspoon vanilla extract
½ cup sour cream
1 cup whipped cream
2 cups water
6 oz strawberry gelatin
1 lb strawberry, hulled and sliced

Steps:

  • Preheat oven to 350°F (180°C).
  • Fill a gallon plastic bag with pretzels and use a rolling pin or meat mallet to crush the pretzels, creating a chunky texture.
  • Combine crushed pretzels and butter in a mixing bowl and stir to combine.
  • Place the pretzel mixture in the base of a 9-inch (23-cm) springform pan with the mixture to create the crust. Use a measuring cup to smooth the surface.
  • Bake for 10 minutes. Let cool to room temperature.
  • Place cream cheese in a large bowl and mix with an electric mixer until cream cheese is smooth.
  • Add in powder sugar, vanilla extract, and sour cream. Mix until combine. Use a spatula to scrape the sides of the bowl.
  • Add in the whipped cream until batter is thick and smooth.
  • Pour the mixture into the 9-inch (23-cm) springform pan and spread with a spatula to cover the pretzel crust and create a flat even top. Transfer to the refrigerator to chill for 30 minutes.
  • Boil water in a medium saucepan over high heat. Once boiling, add the strawberry gelatin and stir for 3 minutes, or until gelatin has dissolved. Remove from heat.
  • Let gelatin mixture cool for 8 minutes or until room temperature. Add in strawberries and stir to combine.
  • Remove the springform pan from the refrigerator and pour the strawberry mixture over it. Refrigerate for at least 4 hours.

Two (8-ounce) packages cream cheese, at room temperature
1 cup plus 3 tablespoons chilled heavy cream
1/2 cup (8 tablespoons) sugar
1 tablespoon plus 1 teaspoon vanilla extract
1 tablespoon fresh lemon juice
2 teaspoons lemon zest
1/4 cup sour cream
1 1/2 cups crushed graham crackers
1 1/2 cups fresh fruit, such as strawberries, blueberries or raspberries

Steps:

  • Beat the cream cheese, 3 tablespoons heavy cream and 5 tablespoons sugar in a stand mixer fitted with the paddle attachment until smooth. Add 1 tablespoon vanilla extract and the lemon juice and zest. Beat until light and creamy, about 3 minutes.
  • Whisk together the remaining 1 cup heavy cream, 3 tablespoons sugar, 1 teaspoon vanilla extract and the sour cream in a large bowl with a handheld electric mixer (or a stand mixer fitted with the whisk attachment) on high speed until soft peaks form.

1 tablespoon sugar
3 ounces cream cheese, softened
1/3 cup plus 1 teaspoon confectioners' sugar, divided

6 graham crackers
2 tablespoons melted butter
1 teaspoon white sugar
1 (.25 ounce) package unflavored gelatin
¼ boiling water
1 (12 ounce) container whipped cream cheese
⅓ cup confectioners' sugar, or more to taste
½ teaspoon vanilla extract
1 ½ cups vodka, divided
½ (3 ounce) package strawberry flavored gelatin (such as Jell-O®)
¼ cup boiling water
3 ice cubes

Steps:

  • Crush graham crackers in a blender or food processor; add melted butter and sugar and blend until evenly combined. Gently press graham cracker mixture into 12 tall shot glasses.
  • Mix unflavored gelatin and 1/4 cup boiling water together in a bowl until well mixed.
  • Combine cream cheese, confectioners' sugar, vanilla extract, and gelatin mixture in a blender; pulse a few times. Add 1 cup vodka; blend until smooth. Taste mixture and adjust confectioners' sugar if necessary. Pour cream cheese mixture over graham cracker layer, leaving about 1 inch on the top. Chill for at least 1 hour.

1 cup boiling water
1 pkg. (3 oz.) JELL-O Strawberry Flavor Gelatin
2 cups ice cubes
1 cup fresh strawberries
3/4 cup thawed COOL WHIP Whipped Topping

Steps:

  • Add boiling water to gelatin mix; stir 2 min. until completely dissolved. Add ice; stir until gelatin is slightly thickened. Remove any unmelted ice.
  • Lean 4 parfait glasses, at an angle, against sides of muffin pan cups. Reserve 4 strawberries for garnish. Slice remaining berries; stir into gelatin. Spoon into tilted glasses. Refrigerate 2 hours or until gelatin is firm.
  • Top with COOL WHIP and reserved berries before serving.
