Healthy cookies that actually taste good? Yes, it's possible. Chef Richard Blais teaches us how to make his wife's nutty and chewy cookies that are packed with wholesome ingredients. Bonus: We don't even need to pull out the electric mixer for this class.

Number Of Ingredients 8

1 cup cashew butter (see Cook's Note)
2 large eggs
1 cup rolled oats
1/2 cup coconut sugar
1/2 cup unsweetened shredded coconut
2 tablespoons unflavored collagen protein powder
1/2 teaspoon baking soda
1 ounce dark compliant chocolate (sweetened only with coconut sugar; such as Hu brand), chopped to your desired chunk size

Steps:

  • Position racks in the upper and lower thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with silicone baking mats or parchment.
  • Add each of the ingredients in order to a large bowl and stir with a wooden spoon until all of the ingredients are combined and the cashew butter is completely incorporated. The dough will be thick and sticky.
  • Drop about 12 rounded balls (about the size of golf balls) on each of the prepared baking sheets.
  • Bake until the tops are just lightly brown, about 10 minutes. Let cool on the baking sheets.

1 teaspoon vanilla
1 egg

1 teaspoon baking soda
1/2 teaspoon salt
2 cups flaked coconut
1 1/2 cups chopped cashews

Steps:

  • Heat oven to 350°F. In large bowl, beat sugars, butter, vanilla and egg with electric mixer on medium speed, or mix with spoon, until creamy. Stir in flour, baking soda and salt. Stir in coconut and cashews.
  • Drop dough by 1/4 cupfuls about 3 inches apart onto ungreased large cookie sheet; flatten slightly.
  • Bake 12 to 16 minutes or until edges are golden brown. Cool 2 minutes; remove from cookie sheet to wire rack.

We enjoy this very much-I like the Jasmati brand ( american Jasmine) since you don't have to rinse the rice. You can also buy fresh ginger ( inexpensive) -peel it, cut it into small chunks then freeze. You can use the frozen ginger as you need it!

1 cup jasmine rice
1 (13 1/2 ounce) light coconut milk
1/3 cup chicken broth (or water )
1/2 teaspoon salt
1/2 teaspoon sugar
1 pinch red pepper flakes
1/4 teaspoon grated ginger

Steps:

  • Rinse Jasmine rice, in mesh colander, until water runs clear ( skip this step for the jasmati brand).
  • Combine all the ingredients in a non-stick, deep sauce pan.
  • Turn heat on to medium high and let mixture come to a boil.
  • Put a tight lid ( or foil ) over the mix and immediately turn heat down to lowest level.
  • Let cook for 30 minutes ( do not open cover).
  • Turn heat off and let mix sit for another 15-20 minutes ( do not open cover).
  • Enjoy.

1 c brown sugar, firmly packed
1 c sugar
1 c butter or margarine, softened
1 medium egg
1 1/2 tsp vanilla
2 1/2 c flour
1/4 tsp salt
2 c flaked coconut
1 1/2 c cashews, salted and chopped
1 tsp baking soda

Steps:

  • 1. Heat oven to 350 and then beat together your first 5 ingredients until nice and creamy. Next add your flour, salt and baking soda an mix. Now add your coconut and cashews and stir together with a spoon.
  • 2. Now, use a cookie scooper or spoon and drop them onto a parchment lined cookie sheet pan. Bake from 8 to 10 minutes until lightly golden brown. Let sit for 2 minutes before removing from pan. These cookies are super chewy and delish!!!

1 stick (8 tablespoons) unsalted butter, at room temperature
1/2 cup packed light brown sugar
1/2 cup granulated sugar
1 large egg
1 1/2 teaspoons pure vanilla extract
1 cup smooth cashew butter
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine sea salt

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment or a silicone baking mat.
  • In a stand mixer fitted with the paddle attachment, combine the butter and both sugars. Beat on medium until light, fluffy and creamy. Add in the egg and vanilla. Mix to combine. Next, add in the cashew butter and mix until fully combined.
  • In a small bowl, whisk together the flour, baking powder, baking soda and salt. Slowly add to the butter mixture and mix on low speed until you no longer see any flour bits.
  • Using a medium cookie or ice cream scoop, scoop the dough, flattening the bottom, and place on the prepared baking sheet. Make lines or a crosshatch pattern on the top of each cookie with a fork.
  • Bake until the cookies are golden around the edges, puffed up and set, 11 to 12 minutes. Let cool for 2 minutes on the baking sheet then remove to a wire rack to cool fully. Repeat with the remaining cookie dough.

Steps:

  • Preheat oven to 375°. In a bowl, cream together butter and brown sugar until light and fluffy, 5-7 minutes. Beat in egg and vanilla. Combine dry ingredients; add alternately with sour cream to creamed mixture. Stir in chopped cashews. Drop by tablespoonfuls onto greased baking sheets. Bake until lightly browned, 8-10 minutes. Cool on a wire rack. For frosting, lightly brown butter in a small saucepan. Remove from the heat and cool slightly. Add cream and vanilla. Beat in confectioners' sugar until smooth and thick. 1 teaspoon white sugar
1 pinch salt
1 ½ cups jasmine rice

Steps:

  • Stir coconut milk, water, sugar, and salt together in a saucepan over medium heat until sugar dissolves. Add rice; bring to a boil, cover the saucepan, reduce heat to low, and simmer until rice is tender and liquid is absorbed, 18 to 20 minutes.

1 large egg plus 1 large egg yolk, room temperature

Steps:

  • Whisk flour, baking soda and cinnamon. In a 1-qt. glass jar, layer flour mixture, brown sugar, granulated sugar, oats and cashews in order listed. Cover and store in a cool dry place up to 3 months., To prepare cookies: Preheat oven to 350°. Beat butter and vanilla extract until light and fluffy. Add egg and yolk until well blended. Add cookie mixture; mix well., Drop by tablespoonfuls 1-1/2 in. apart on parchment-lined baking sheets. Bake until lightly browned, 10-12 minutes. Remove from pans to wire racks to cool. Store in an airtight container.
