This Jasmine Tea Ganache adds a fun twist on any chocolate dipped or covered dessert.

9 oz chocolate pieces
1 C heavy cream
1 T. jasmine tea (not brewed)

Steps:

  • Place your chocolate in a heat proof bowl. Set aside.
  • Heat the cream in a medium sized sauce pan until lightly boiling. Stir in your tea and simmer 1 minute.
  • Place a strainer over your bowl of chocolate. Pour the cream through the strainer over your chocolate. Let it sit for a few minutes then stir together.

CHURROS WITH DULCE DE LECHE GANACHE



Churros with Dulce de Leche Ganache image

1 1/2 cups whole milk
4 tablespoons (1/2 stick) butter
2 1/2 tablespoons sugar
1/2 teaspoon salt
1 cup all-purpose flour
4 large eggs, lightly beaten
Grapeseed oil, for frying
Dulce de Leche Ganache, for dipping, recipe follows
1 cup heavy cream
2 1/2 tablespoons glucose syrup or corn syrup
1 1/2 cups melted white chocolate
1/2 cup dulce de leche
3 1/2 tablespoons butter

Steps:

  • In a saucepan, bring the milk, butter, sugar and salt to a boil. Sift the flour. Add the flour to the pan, then cook over high heat, stirring, until the mixture is dried out, as for a pate a choux.
  • Take the pan off the heat and fold the eggs in one at a time. Transfer the dough to a pastry bag fitted with an 8-millimeter fluted nozzle, and pipe long, straight stripes of dough onto a silicone baking mat fitted into a baking sheet.
  • Freeze until frozen through, about 30 minutes. Cut the frozen churros into various lengths, between 1 and 3 inches, and place on rectangles of parchment paper cut to size-- the parchment will facilitate the transfer of the churros to the hot oil, keeping them straight and avoiding splashes. Allow the churros to thaw fully.
  • Line a baking sheet with paper towels. Bring 4 to 5 inches of oil to 350 degrees F in a deep, heavy pot. Carefully invert the parchment over the oil to add the churros. Fry the churros in batches, stirring occasionally, until golden brown, a few minutes. Transfer to the paper towels to cool.
  • Serve with Dulce de Leche Ganache for dipping.
  • Heat the cream in a pan together with the glucose syrup. Pour over the melted white chocolate, then add the dulce de leche and blend with a hand-held blender until smooth. Add the butter and mix until well combined.

1 cup sugar
1 cup water
2 strips orange zest
1 handful pesticide-free jasmine flowers, plus more for garnish
1/2 cup vodka
1/4 cup Grand Marnier
1 lemon, juiced

Steps:

  • Combine the sugar, water, and lemon zest in a pot over medium heat. Gently simmer for 2 minutes until the sugar is dissolved, swirling the pot over the heat now and then - do not allow to boil or get dark. Put the jasmine in a mason jar or glass container and pour the sugar syrup on top; steep for 1 to 2 hours to infuse the jasmine flavor into the syrup.
  • In a martini shaker filled with ice, combine the vodka, Grand Marnier, lemon juice, and 4 tablespoons of the jasmine syrup. Shake until frothy and pour into chilled martini glasses. Float a jasmine flower in each glass for great presentation.

4 jasmine tea bags
3 cups boiling water
2 sticks cinnamon bark
2 star anise
2 tablespoons good honey
3 cups organic apple juice, chilled
Ice cubes
Strawberries
Raspberries
Sorbets (such as blood orange, peach, mango)
Fresh mint sprigs
Lemon slices

Steps:

  • In a large, glass heatproof pitcher, steep the tea bags in the boiling water. Add the cinnamon bark and star anise and let it infuse for 5 minutes.
  • Strain the steeped tea, and then stir in the honey and mix well. Cool the tea to room temperature, and then chill in the refrigerator for 1 hour.
  • When ready to serve, stir in the apple juice. Pour into glasses topped with some ice cubes, or pour over scoops of sorbet. Tumble in the fresh fruit and garnish with mint sprigs and lemon slices. Serve with fun straws.

  • Boil together the cream and light corn syrup. Add the jasmine tea and simmer for 1 minute. Strain the tea and pour over the bittersweet chocolate and milk chocolate. Mix the ingredients only enough to incorporate. Allow to cool to 90 degrees and stir in the rum. Pour into a shallow dish that has been lined with waxed or parchment paper. The filling should be 5/8 inches thick. Allow to cool overnight or until firm, covered in refrigerator. Cut into squares.
