3 ½ oz shrimp
3 ½ oz tofu, diced
1 teaspoon mayonnaise, divided
salt, to taste
pepper, to taste
2 eggs, beaten
flour, for dredging
panko bread crumb, for dredging
oil, for frying
10 ½ oz cooked rice
sesame oil
2 leaves green leaf lettuce
1 hard-boiled egg, minced
2 tablespoons mayonnaise
1 tablespoon pickle, minced
2 tablespoons onion, minced

Steps:

  • Roughly chop half of shrimp and finely chop the rest until it becomes a paste.
  • Place the shrimp and tofu in a medium bowl and break up with a spatula. Add the mayonnaise, salt, and pepper. Mix well.
  • Using your hands, form the shrimp mixture into 2 patties.
  • Place the flour, eggs, and panko in 3 separate medium bowls. Dredge the shrimp patties in the flour, then egg, then panko bread crumbs.
  • Heat the oil in a large pot until it reaches 350°F (180°C). Fry the shrimp patties until golden brown, then drain on paper towels.
  • Line a ramekin with plastic wrap, and mold a quarter of the rice into a patty. Repeat with the remaining rice to make 4 "buns".
  • In a medium nonstick skillet over medium-high heat, heat a splash of sesame oil, then add the rice buns. Cook, flipping once, until the outside is crispy.
  • Make the tartar sauce: In a small bowl, combine the boiled egg, mayonnaise, pickles, and onions.
  • Assemble the burgers: start with the rice "bun," then add the green leaf lettuce, shrimp katsu burger, a dollop of tartar sauce, and top with another rice "bun."

2 chicken thighs
1 tablespoon soy sauce
½ teaspoon mirin
½ teaspoon garlic
½ teaspoon ginger
2 tablespoons flour
2 tablespoons potato starch
3 tablespoons mayonnaise
½ tablespoon honey
1 teaspoon japanese mustard
½ tablespoon miso
1 ½ cups rice

Steps:

  • Put chicken thigh in a bag, add soy sauce, sake, mirin, garlic, ginger and marinate in the refrigerator for about 1 hour.
  • Put potato starch powder and sift flour in the bowl and mix well.
  • Heat frying oil to 350°F (176°C) add chicken and fry.
  • Make mustard mayonnaise. Put mayonnaise, honey, japanese mustard, and miso in a bowl and mix well.
  • Make Rice Buns. Put rice in a container. Wrapped in seran wrap, press with a small tool to shape it. In the same way, create three more.

rice, leftover rice, to form "buns"
soy sauce
¾ lb ground beef
⅓ cup onion, chopped
3 cloves garlic, minced
⅓ cup panko breadcrumbs
1 teaspoon worcestershire sauce
1 teaspoon oyster sauce
8 oz mushrooms, sliced
1 cup beef stock
1 tablespoon cornstarch slurry, 1 Tbsp. of cornstarch dissolved in 1 Tbsp. of water
2 eggs, sunny-side-up, optional
scallion, chopped, for garnish

Steps:

  • Form "burger buns" with the leftover rice. Firmly pack rice into your desired thickness. Pan fry until both sides are lightly crisped. Brush soy sauce on both sides of the rice buns and continue to fry until it gets some color. Set aside.
  • Form burger patties with ground beef, panko, onions, oyster sauce, Worcestershire sauce and garlic.
  • Heat pan over medium. Fry patties to your desired doneness. Set aside.
  • In the same pan, add mushrooms. Cook until soft. Pour in beef stock and soy sauce. Thicken with cornstarch slurry.
  • Optional: If using eggs, preparing them sunny-side up or over easy will go well with this loco moco rice burger.
  • Put the burger together. Start with the rice "bun," then the beef patty, cover with gravy, top with an egg, sprinkle on some scallions, and top with another rice "bun."
