I am trying to duplicate the clear broth soup that is served at "Miyabi" - our local Japanese steakhouse. Our whole family loves this soup!

3 cups beef broth
7 cups chicken broth
1 large carrot
1 medium onion, chopped
2 garlic cloves, crushed
1 green onion, thinly sliced
1 mushroom, thinly sliced
1 tablespoon Durkee onions

Steps:

  • Combine beef and chicken stock in a pot.
  • Add carrot, onion and garlic.
  • Bring to a boil, lower heat, cover pot and simmer for 30 minutes.
  • Discard the carrot, onion and garlic and strain the soup through cheesecloth.
  • Place a small amount of each of the green onions, mushrooms and french fried onions in serving bowls and ladle the broth over them. Serve.

The basic Japanese soup that's given out as an appetizer at most Japanese restaurants. Very mild, a bit salty, and a touch of tang. It's a very improvisable recipe; most of the ingredients' quantities can be changed according to taste. Use your favorite mushrooms in this recipe.

½ stalk celery, chopped
1 small onion, chopped
½ carrot, chopped
1 teaspoon grated fresh ginger root
¼ teaspoon minced fresh garlic
2 tablespoons chicken stock
3 teaspoons beef bouillon granules
1 cup chopped fresh shiitake mushrooms
2 quarts water
1 cup baby portobello mushrooms, sliced
1 tablespoon minced fresh chives

Steps:

  • In a large saucepan or stockpot, combine the celery, onion, carrot, ginger, garlic, and a few of the mushrooms. Add chicken stock, beef bouillon, and water. Place the pot over high heat, and bring to a rolling boil. When the mixture reaches boiling, cover, reduce heat to medium, and cook for 45 minutes.
  • Place all of the remaining mushrooms into a separate pot. When the boiling mixture is done, place a strainer over the pot with the mushrooms in it. Strain the cooked soup into the pot with the mushrooms. Discard strained materials.
  • Serve the broth with mushrooms in small porcelain bowls, and sprinkle fresh chives over the top. Use Asian soup spoons for an elegant effect.

4 cups canned chicken broth
2 cups water
1 white onion
1/2 carrot, coarsely chopped (about 1/4 cup)
1/2 celery, coarsely chopped (about 1/4 cup)
1/2 teaspoon salt
1 cup vegetable oil
1 cup milk
1 cup all-purpose flour
6 medium mushrooms, thinly sliced
4 green onions, diced (green part only)

Steps:

  • Combine chicken broth and water in a large saucepan over high heat.
  • Slice the white onion in half, then coarsely chop one half (save the other half for later).
  • Add coarsely chopped onion, carrot, celery and salt to the saucepan and bring to a boil. Reduce heat and simmer for 10 minutes, or until the onions start to become translucent. As the broth simmers, heat up 1 cup of vegetable oil in a small saucepan over medium heat.
  • Slice the remaining white onion into very thin slices. Separate the slices, dip the slices into the milk, then into the flour. Fry the breaded onions, a handful at a time in the oil until golden brown. Drain on a paper towel.
  • When the soup has simmered for 10 minutes, strain the vegetables out of the broth and toss them out. Pour the broth back into the pan and keep it hot over low heat.
  • To serve soup, ladle about 1 cup of broth into a bowl.
  • Drop a few pieces of fried onion into the soup, followed by 6 to 8 mushroom slices (about 1 mushroom each) and a couple pinches of diced green onion. When the fried onions sink to the bottom of the bowl (a couple of minutes), serve the soup.

Very simple looking soup with an amazing flavor.

2 Tbsp oil
2 medium onions diced
2 stalk(s) celery diced
2 large carrots diced
6 clove garlic rough chop
8 c chicken, or vegetable stock or just water
2 tsp salt
4 oz button mushrooms sliced paper thin
3 green onions chopped
1 Tbsp soy sauce
sriracha sauce for serving

Steps:

  • 1. Place the oil in a large pot. Saute the onion until browned. Add the stock or water, celery, carrots, garlic and salt. Bring to a boil and reduce the heat and simmer for 30 to 45 minutes. Strain the broth and discard the solids.
  • 2. Place the broth back on the stove and add the mushrooms and green onions. Add the soy sauce taste and adjust for salt.
  • 3. Serve with a squirt of Sriracha.

2 celery ribs (diced)
2 carrots (peeled and diced)
2 garlic cloves (minced)
1/2 cup button mushroom (thinly sliced)
1/4 cup scallion, sliced

sriracha sauce

Steps:

  • Sauté the onions in a pot in a little bit of oil until slightly browned.
  • Add the carrot, celery, and garlic and 6 cups of vegetable broth.

This is my take on the classic Hibachi steakhouse onion soup that is typically served before the meal. I like to season further with a splash of soy sauce and pinch of white pepper.

48 oz chicken broth, store bought
1 large yellow onion, coarsely chopped
1 stalk(s) celery, coarsely chopped
1 large carrot, cut into rounds
1 tsp kosher salt
6 button mushroom
green onion, sliced on bias for garnish
french fried onions

Steps:

  • 1. In a large saucepan, add the chicken broth, chopped onion, celery, carrot and salt.
  • 2. Over high heat, bring mixture to a boil.
  • 3. Reduce heat to simmer about 15 minutes until the vegetables are very tender.
  • 4. Remove vegetables from broth and discard vegetables.
  • 5. Divide broth among 6 servings and garnish with thinly sliced mushroom, green onion and french fried onion.

2 medium carrots
2 medium celery stalks
2 garlic cloves, smashed
6 cups chicken broth, reduced sodium fat free
1 medium Onion, cut into wedges
8 ounces mushrooms, sliced
4 green onions, sliced (Optional Garnish)

Steps:

  • Place everything but the mushrooms and green onions into a slow cooker. I added in the bottom halves of the chopped green onions at this time as well and reserved the green upper halves for garnishing. Cover and cook on high for 2-4 hours or low for 4-5 hours. An hour before serving remove the cooked veggies from the crock pot with a slotted spoon Place the sliced mushrooms into the crock pot with the broth. Give it all a good stir. Cover to cook for another hour or until the mushrooms are tender. Divide amongst the bowls and serve!

My oldest son loves a Japanese restaurant in Springfield, Missouri named Nakato's. His favorite of all is their Japanese onion soup. After trial & error in the kitchen, I came up with this recipe that my son says is almost a perfect match for his favorite soup. While the restaurant removes almost all the veggies before serving, we actually prefer leaving them in. Enjoy!

1/2 stalk celery, chopped
1 small onion, chopped
1/2 large carrot, peeled & chopped
1 tablespoon ground ginger

1 (15 ounce) can chicken broth
1 1/2 cups water
2 cups fresh mushrooms, brushed & sliced
1 beef bouillon cubes or 3 tablespoons beef bouillon granules
1 tablespoon minced fresh chives or 2 teaspoons dried chives

Steps:

  • In a large saucepan, combine all ingredients except chives.
  • Place over high heat & bring to a rolling boil. Cover & reduce heat to medium. Continue cooking for 45 minutes.
  • Remove from heat & strain out the vegetables.
  • Place a few of the chopped mushrooms from the strained vegetables in the bottom of each soup bowl & pour strained broth over them.
  • Sprinkle soup with chives & serve.
