Delicious and easy Pulled Pork Chili recipe that is perfectly seasoned. A great way to use up your leftover pulled pork.

2 c. leftover pulled pork
1 Tbsp olive oil
2 cans petite diced tomatoes (14.5 oz cans)
15 oz corn (drained)
15.5 oz chili beans
1 Tbsp chili powder
1 tsp cumin
1 tsp sweet and smokey rub
1 c. beef broth
Additional toppings; crushed chips, shredded cheese, sour cream, avocados etc

Steps:

  • In a large dutch oven heat olive oil over medium heat. Add leftover pork in a single layer. Saute about 4-5 minutes or until crispy on bottom side and warm.
  • Add in the rest of the ingredients and bring to a boil. Reduce heat and simmer for about 15-20 minutes or until warmed through.
  • Serve immediately. Top with crushed chips, sour cream, shredded cheese, avocados etc.

2 tablespoons tomato paste
2 tablespoons vegetable oil
2 tablespoons chili powder
1 tablespoon ground cumin
4 cloves garlic, minced
2 onions, minced
3 pounds boneless pork shoulder, trimmed of excess fat and cut into 1-inch cubes
2 cups chicken stock
1 tablespoon chipotle adobo sauce
1 tablespoon kosher salt, plus more if needed
Two 15-ounce cans great Northern beans, drained and rinsed
1 1/4 cups smoky BBQ sauce
1 cup sour cream
1/4 teaspoon garlic powder
2 cups crushed pork rinds
4 scallions, thinly sliced
Blue corn chips, for serving

Steps:

  • Mix together the tomato paste, vegetable oil, chili powder, cumin, garlic and onions in a microwave-safe bowl. Cover the top of the bowl with a very wet paper towel. Microwave for 5 minutes. Transfer the mixture to a slow cooker.
  • Add the pork to the slow cooker along with the stock, adobo sauce, salt, beans and 1 cup of the BBQ sauce. Cook on high until the pork is cooked through and tender, 4 to 5 hours (or on low for 6 to 8 hours). Skim any excess fat off the top and discard. Adjust the seasoning if necessary.
  • In a small bowl, mix together the sour cream, garlic powder and remaining 1/4 cup BBQ sauce.
  • Top the chili with the sour cream mixture, pork rinds and scallions. Serve with the chips on the side or crumbled on top.

2 Tablespoons Brown Sugar
1 Teaspoon Garlic Powder
1 Teaspoon Salt
1 Teaspoon Pepper
1 Teaspoon Chili Powder
1/2 Teaspoon Cumin
1/4 Teaspoon Cayenne Pepper
1 Small Red Onion, (Diced)
2 Cups Beef Broth
1 28 Ounce Can Tomato Sauce
1 28 Ounce Can Diced Tomatoes
1/2 Cup BBQ Sauce
2 14 Ounce Cans Chili Beans
1 Teaspoon Hot Sauce, (Optional)

Steps:

  • In a small bowl mix together the brown sugar, garlic powder, salt, pepper, chili powder, cumin, and cayenne.
  • Season the pork roast well on both sides and place into your slow cooker.
  • Add the onion, beef broth, tomato sauce, diced tomatoes, bbq sauce, chili beans, and hot sauce to the slow cooker.
  • Cover and cook on low for 8-10 hours.
  • Shred the pork using two forks and stir the chili well. Serve immediately.

1 pound leftover pork tenderloin, shredded (shredded)
1 16-ounce can of chili beans, mild sauce
1 16-ounce can of black beans, rinsed and drained
1 4-ounce can green chilies
3 14-ounce cans fire roasted tomato
1 4-ounce can of sweet corn
2 teaspoon cumin
1/2 teaspoon red pepper flakes
1/4 teaspoon paprika
Shredded cheddar cheese
Diced avocado

Steps:

¼ cup red chile paste

6 slices bacon, cut into 1-inch pieces

2 (10.75 ounce) cans fat-free, low-sodium chicken broth
2 cups diced tomatoes
1 cup drained and rinsed kidney beans
1 large onion, chopped
2 tablespoons chili powder
2 teaspoons ground cumin
1 (2 pound) pork shoulder roast
1 (8 ounce) package shredded Cheddar cheese (such as Kraft®)
1 ¼ cups sour cream

Steps:

  • Combine chicken broth, tomatoes, kidney beans, onion, chili powder, and cumin in a slow cooker. Add pork shoulder and cover.
