1/4 cup mild-flavored (light) molasses
1/4 cup red wine vinegar
1 tablespoon tomato paste
1 tablespoon finely chopped onion
1 1/2 teaspoons chopped fresh thyme
1 large garlic clove, peeled
1/2 teaspoon cayenne pepper
1/2 teaspoon ground allspice
4 boneless chicken breast halves with skin
2 semi-ripe plantains (yellow-black skin), peeled, cut on diagonal into 1/3- to 1/2-inch-thick slices

Steps:

  • Brush grill rack with oil. Prepare barbecue(medium heat). Puree molasses and next 7 ingredients in blender until smooth. Season with salt and freshly ground black pepper. Spoon 1/4 cup sauce into pie dish. Add chicken; turn to coat. Marinate 15 minutes.
  • Brush plantains with oil; sprinkle with salt and pepper. Grill plantains and chicken, skin side down, 8 minutes. Turn chicken and plantains over. Grill until chicken is cooked through and plantains are tender, 8 minutes for chicken and 4 minutes for plantains. Serve plantains and chicken drizzled with remaining sauce.

Rich and hearty with a great flavor when you can't get the real thing in the islands. Try a variety of hot peppers to change the flavor - even sweet bell peppers give a different taste. Use fresh thyme to really bring out the fresh taste.

¼ cup vegetable oil
1 onion, chopped
1 tomato, chopped
1 garlic clove, chopped
2 tablespoons Jamaican-style curry powder
2 slices habanero pepper
¼ teaspoon ground thyme
2 skinless, boneless chicken breast halves, cut into 1 1/2-inch pieces
1 cup water
½ teaspoon salt, or to taste

Steps:

  • Heat vegetable oil in a skillet over medium-high heat; cook and stir onion, tomato, garlic, curry powder, habanero pepper, and thyme until onion is golden, about 7 minutes. Stir in chicken and cook until chicken is lightly browned, about 5 minutes.
  • Pour water into the skillet, reduce heat to low; cover and simmer until chicken is no longer pink at the center, about 30 minutes. Season with salt.

A delicious, easy and authentic Jamaican recipe! This recipe was shared with us by a true Jamaican chef. Perfect meal when served with white rice and a salad. As per the chef, for best flavor always use chicken with bone.

3 lbs chicken
3 tablespoons curry powder
1 onion, chopped
2 sprigs fresh thyme
3 garlic cloves, chopped
2 stalks scallions, chopped
1 scotch bonnet pepper (keep whole!)
1/2 teaspoon black pepper
1 teaspoon salt
3 tablespoons oil

Steps:

  • Chop chicken into serving pieces, and wash with vinegar or lime, then set aside.
  • In a large cooking pot heat up the cooking oil. When oil is hot, add in the garlic, black pepper, onion, scallions, and fresh thyme.
  • Fry for about 3 minutes while stirring, then add curry powder and continue to fry on medium heat for about 4 more minutes.
  • Add chicken pieces, and salt, stir and cover with a tight fitting lid.
  • Cook for about 5 minutes. then lift lid and stir again. Check again in 10 minutes. The chicken should have made enough of it's own liquid by now to cook in it's own juice, if not, then add a couple tablespoons of water. Cook for 20 more minutes, then add a whole scotch bonnet pepper (just lay the pepper on top of chicken, do not puncture it or the food will be too spicy!), put lid back on, and cook for five more minutes or until chicken is tender. Serve over hot white rice.

1 tablespoon onion, finely chopped
3 tablespoons light brown sugar
4 tablespoons soy sauce
4 tablespoons orange juice, frozen concentrate, undiluted
2 teaspoons thyme
3 teaspoons rosemary
2 tablespoons olive oil
3 garlic cloves, chopped fine
1/2 teaspoon allspice
1 tablespoon jalapeno pepper, chopped fine
6 pieces chicken, cut-up

Steps:

  • Combine all ingredients, except the chicken in a bowl (food processor works best).
  • Mix well, until smooth.
  • Place chicken pieces in zip-lock bag.
  • Pour sauce mixture over chicken & close the bag.
  • Lay flat on a plate or whatever you have.
  • Refridgerate for AT LEAST 4hours -- overnight is preferred, for best flavor.
  • Turn bag over, every couple hours if possible.
  • Preheat oven to 350°.
  • Lightly coat a 9 X 13 pan with cooking spray.
  • Place chicken in a single layer in the pan.
  • Pour remaining sauce over all.
  • Bake, uncovered, 1 to 1½ hours.

10 habanero chile peppers, pureed
6 tablespoons mustard seeds
4 tablespoons dried rosemary
4 tablespoons chopped fresh flat-leaf parsley
4 tablespoons dried basil
4 tablespoons dried thyme
6 scallions, chopped
2 teaspoons kosher salt
2 teaspoons coarsely ground black pepper
1/2 cup yellow mustard
6 tablespoons orange juice
2 tablespoons lime juice
2 tablespoons cider vinegar
2 cans beer
2 whole chickens, 3 1/2 pounds each

Steps:

  • Paste:
  • Blend all the ingredients for the paste together in a blender. Pour into a bowl and cover with plastic wrap. Let sit for 24 hours.
  • Using a backyard grill, start your charcoal with charcoal chimney (Never use lighter fluid). When all the coals are covered in a fine grey ash, dump them on 1 side of your grill. Using a stick or spatula push all the coals into a pile. Put your grate on the grill.
  • Chicken:
  • Open the beer and pour about a quarter of the beer out of each can. Literally rub the chicken cavities and exterior of the chickens with the jerk paste. Carefully put each can of beer into the cavity of the chickens, bring the legs around the can and truss together. Put the chickens on the opposite side of the fire. Sometimes you may need to put a brick or rock on the backside of the chicken to keep it stable and upright. Put the lid on the grill and make sure the vent holes are directly above the chicken to provide adequate drafting of heat and smoke over the bird. Keep the vent holes open all the way.
  • Cook chickens for 4 to 5 hours at a temperature of 225 degrees F. You will want to rotate the birds a quarter turn every hour and add coals, when needed, to maintain the temperature. Be careful not to add too many coals at once when attempting to bring your temperature back up. You may get it too hot and will have a tough time bringing it back down. Open the lid only when you have to check the temperature.
  • Remove the chickens from the grill and set aside for 10 minutes. Discard the beer cans and refrigerate the chicken until ready to serve.

1/2 cup olive oil
1/4 cup lime juice (from about 2-limes)
1/4 cup soy sauce
2 tablespoons ground allspice
2 tablespoons dark brown sugar
2 tablespoons fresh thyme leaves
1 tablespoon kosher salt
1 tablespoon freshly ground black pepper
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons ground nutmeg
5 cloves garlic, crushed
2 bunches scallions (6 to 8 per bunch), roughly chopped
2 jalapenos*, chopped
1 (3-inch) piece ginger, peeled and chopped
3 chickens, quartered (you can ask your butcher to do it for you)
NOTE: The jalapenos didn't impart a LOT of heat. If you prefer spicier food, then go for habaneros or scotch bonnets. Just be careful because they pack a lot of heat!

Steps:

  • Special equipment: a meat thermometer Put the olive oil, lime juice, soy sauce, allspice, sugar, thyme, salt, black pepper, cinnamon, nutmeg, garlic, scallions, jalapenos and ginger in a food processor and blend until smooth. Put the chicken into resealable bags and evenly distribute the marinade among the bags. Seal tightly, thoroughly coat the chicken in the marinade and marinate, refrigerated, for at least 30 minutes but preferably overnight.
