4 cups chicken stock
4 cups whole milk
½ cup butter
2 teaspoons salt
2 cups cornmeal
2 tablespoons oil
4 cloves garlic, minced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 green bell pepper, diced
½ large red onion, diced
½ scotch bonnet pepper
12 spears okra, chopped
1 large tomato, diced
½ cup chicken stock
2 tablespoons jerk seasoning
10 jumbo shrimps, peeled and deveined
2 teaspoons salt
1 teaspoon sugar
2 bunches fresh italian parsley, chopped to serve

Steps:

  • In a heavy pot, add the chicken stock, butter, and milk, and bring to a simmer over medium heat. Gradually add in the grits a little at a time, stirring until creamy. Remove from the heat.
  • Add oil to a large pan over medium-high heat.
  • Once the oil begins to shimmer, add the garlic and cook until aromatic, about 30 seconds.
  • Add in the red bell pepper, yellow bell pepper, green bell pepper, red onion, and Scotch bonnet pepper, and cook until onions are translucent.
  • Add in the okra and cook for 1 minute.
  • Add in the diced tomatoes and juices, jerk spice, and chicken stock, and simmer on low heat for 10 minutes.
  • Season the stew with salt and sugar.
  • Place shrimp on top of the okra stew. After two minutes, flip the shrimp and cook for 1-2 minutes, until cooked through. Sprinkle the stew with chopped parsley.
  • Serve the shrimp stew over the grits.
  • Enjoy!

1 tablespoon vegetable oil
2 onions, finely chopped
3 cloves garlic, minced
1 tablespoon minced ginger
2 tablespoons chili powder
1 scotch bonnet peppers or 1 habanero pepper, seeded and minced
1 teaspoon whole coriander seed
1 teaspoon celery seed
1 teaspoon salt
1 teaspoon cracked black pepper
1 tablespoon brown sugar
4 cups butternut squash, peeled and cut into 1 inch cubes or 4 cups carrots, peeled and diced
1 (16 ounce) can kidney beans, rinsed and drained
1 (28 ounce) can whole tomatoes, chopped,including juice
4 cups vegetable stock or 4 cups chicken stock
1 (14 ounce) can unsweetened coconut milk
1/4 cup chopped cilantro

Steps:

  • Cook onions in oil in a skillet until tender.
  • Place onions in crockpot along with garlic, ginger, chili powder, scotch bonnet, coriander, celery seeds, salt, pepper, sugar, squash (or carrots), kidney beans, tomatoes and stock.
  • Stir to mix well.
  • Cover and cook on low for 8-10 hours or on high for 4-6 hours or until vegetables are tender.
  • Add coconut milk and stir well.
  • Set crockpot to high and cook for 15-20 minutes more.
  • Garnish with cilantro before serving.

1 stalk celery, sliced
1 teaspoon jamaican jerk spice
6 ounces large shrimp, defrosted if frozen
2 tablespoons cornstarch
1 3/4 pints vegetable stock

Steps:

  • Heat the oil in a large saucepan. Fry the vegetables for 1-2 minutes.
  • Add the jamaican jerk seasoning and the shrimp.
  • Blend the cornstarch with the stock and add to the pan. Bring to the boil, stirring.

A classic Caribbean soup and a specialty of Sign Great House near Montego Bay, Jamaica

Number Of Ingredients 15

2 pounds pig tails, scrubbed, rinsed in cold water, and cut into 1-inch pieces
1 pound salt beef, cut into 1/2-inch cubes
6 1/2 pints water
1 pound yams, peeled and chopped into 1-inch cubes
1 pound coco, peeled and chopped
4 cups ice water
12 okra, rinsed
8 ounces Indian kale, trimmed of heavy stalks and finely sliced
1 teaspoon powdered thyme
Freshly ground salt
Freshly ground pepper
6 ounces onion, thinly sliced
3 scallions, finely chopped
1 can callaloo* or 1 pound fresh spinach, shredded
*a Jamaican green vegetable that tastes like a cross between broccoli and spinach

Steps:

  • In a pot large enough to hold at least 20 cups of water, add pig tails. Cook on medium heat to render fat. Pat salt beef dry with a towel. When drippings have accumulated, add salt beef to pot and saute until brown.
  • Once browned, add 6 1/2 pints of water and bring to a simmer. Simmer for 1 hour, occasionally skimming off the foam that rises to the surface and clings to the sides of the pot.
  • After 1 hour, add the yams and coco. Add ice water to congeal fat and cause it to rise to the top. Skim off fat. Simmer for 1/2 hour more.
  • Add okra and kale. Add thyme, salt, and pepper to taste. Add chopped onion and scallion. Cook another 1/2 hour. Add callaloo or spinach and boil for 3 minutes. Serve immediately.

JAMAICAN HOT PEPPER SHRIMP

1/2 cup chopped scallion
4 garlic cloves, crushed
3 fresh thyme sprigs
3 fresh Scotch bonnet or habanero chiles, halved and seeded
2 tablespoons salt
1/2 teaspoon black pepper
10 whole allspice
1 lb large shrimp in shell (21 to 25 per lb)

Steps:

  • Combine all ingredients except shrimp in a 4-quart heavy pot and bring to a boil, then reduce heat and simmer, covered, 20 minutes.
  • Stir in shrimp, making sure they are just covered by liquid, and remove pot from heat. Cool shrimp in liquid to room temperature, uncovered, about 1 hour. Transfer shrimp with a slotted spoon to a plate or bowl and drizzle some of cooking liquid on top.

1 lb Callaloo or 1 lb spinach
12 fresh okra
12 cups water
1/2 lb salt beef
1/2 lb shin beef
10 cups water
1 (15 ounce) can coconut milk
1/2 lb yam (peeled)
crushed scallion
1 small scotch bonnet pepper (Whole)
black pepper

Steps:

  • Wash the callaloo then chop finely boil in water with the corned beef until beef is tender, usually about 2 hours.
  • Add the coconut milk, yam, okras, scallion, hot peppers, and black pepper add additional water if necessary, simmer for 30 min and your soup should be ready to serve.

The cream of coconut gives the soup a sweet flavour and the scotch bonnet pepper spices it up. The flavour is actually better the second day when reheated.

1 lb boneless skinless chicken thighs or 1 lb boneless skinless chicken breast, cut into 1/2 inch cubes
6 slices bacon, diced
1 large sweet potatoes or 1 large yam, diced
1 red pepper, seeded and chopped
1 green pepper, seeded and chopped
1 (10 ounce) package frozen okra, sliced
1 medium onion, chopped
1 cup fresh spinach, chopped
2 garlic cloves, finely chopped
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon thyme
1/2 teaspoon marjoram
1/2 teaspoon allspice
1 scotch bonnet pepper, finely chopped
6 cups chicken stock
3/4 cup cream of coconut (not coconut milk)

Steps:

  • Fry bacon over medium heat in large stock pot.
  • Remove bacon with slotted spoon.
  • Add chicken pieces and cook for 5 minutes or until done.
  • Return bacon to pot.
  • Add vegetables, spices and chicken broth.
  • Reduce heat and simmer for 30 minutes.
  • Add cream of coconut and simmer for 10 more minutes.
  • Serve in individual bowls.
  • Suggested garnishes: sprig of thyme, slice of lime, chopped scallion, thin slice of scotch bonnet pepper.
