2/3 cup diced peeled papaya
2/3 cup diced peeled mango
1/4 cup finely chopped red bell pepper
1/4 cup finely chopped red onion
2 tablespoons chopped fresh cilantro
1/2 teaspoon grated lime rind
2 tablespoons fresh lime juice
1 cup finely chopped red onion
1/2 cup dry breadcrumbs
1/3 cup bottled sweet and sour sauce
1/4 cup finely chopped red bell pepper
1 tablespoon jamaican jerk seasoning (such as Spice Islands)
1 large egg white
1 lb ground turkey
cooking spray
4 (2 ounce) kaiser rolls or 4 (2 ounce) hamburger buns

Steps:

  • For the salsa:.
  • Combine papaya, mango, red pepper, red onion, cilantro, lime rind and juice.
  • Let stand at room temperature at least 30 minutes before serving.
  • Prepare grill to medium heat.
  • For the burgers:.
  • Combine 1 cup onion , breadcrumbs, sweet and sour sauce, red pepper,jerk seasoning,and egg white. Stir well.
  • Add turkey; mix well to combine.
  • Divide turkey mixture into 4 equal portions, shaping each into a 1-inch-thick patty. Cover and refrigerate 20 minutes.
  • Lightly coat patties with cooking spray; place on a grill rack coated with cooking spray. Grill 7 minutes on each side or until done.
  • Cut rolls in half horizontally.
  • Place rolls, cut sides down, on grill rack; grill 1 minute or until lightly toasted.
  • Place 1 patty on bottom half of each roll; top with 1/2 cup salsa and top half of roll.

Orange-chipotle mayonnaise
1 cup mayonnaise
3 tablespoons orange juice
1 tablespoon minced canned chipotle chilies*
Jerk sauce
1 bunch green onions, coarsely chopped (about 1 1/2 cups)
1 tablespoon chopped fresh thyme
1 small habañero chili or 2 medium jalapeño chilies, seeded, chopped
1 garlic clove, peeled
1/2 cup (packed) golden brown sugar
1/2 cup vegetable oil
1/2 cup soy sauce
1 teaspoon ground allspice
2 pounds ground beef (15% fat)
6 sesame-seed hamburger buns, toasted
1 onion, thinly sliced
3 tomatoes, sliced
6 romaine lettuce leaves

Steps:

  • For orange-chipotle mayonnaise:
  • Mix all ingredients in small bowl. Season to taste with salt and pepper.
  • For jerk sauce:
  • Finely chop first 4 ingredients in processor. Add sugar and next 3 ingredients; process until almost smooth. Season with salt and pepper.
  • Prepare barbecue (medium-high heat). Set aside 3/4 cup jerk sauce. Shape ground beef into six 1/2- to 3/4-inch-thick patties; place in 13x9x2-inch glass baking dish. Pour 1/2 cup jerk sauce over patties and turn to coat; let stand 20 minutes.
  • Sprinkle patties with salt and pepper. Grill to desired doneness, brushing occasionally with remaining jerk sauce, about 4 minutes per side for medium.
  • Spread mayonnaise over cut surfaces of buns. Place burgers on bottom halves of buns. Top with onion slices, tomato slices, lettuce, and bun tops. Serve, passing reserved 3/4 cup jerk sauce separately.

1/2 cup papaya, diced
1 cup mango, diced
3/4 cup red onion, finely chopped
1/2 cup green pepper, finely chopped
2 tablespoons cilantro, fresh, chopped
2 tablespoons fresh lime juice
1/2 cup quick oats, uncooked
1/3 cup ketchup
1 tablespoon caribbean jerk seasoning
1 egg
1 lb lean ground turkey

Steps:

  • To prepare salsa, in a medium bowl, combine papaya, mango, 1/4 cup of red onion and 14/ cup green pepper, cilantro and lime juice. Set aside.
  • To prepare burgers, in a large bowl, combine remaining 1/2 cup red onion, remaining 1/4 cup of green pepper, oats, ketchup, jerk seasoning and egg and mix well. Add turkey; mix thouroughly. Shape turkey into four 1 inch thich patties; cover and refrigerate for a minimum of 20 minutes.
  • Preheat broiler. Broil burgers until cooked through, flipping once, about 20-25 minutes total. Serve each bruger topped with about a heaping 1/3 cup of salsa.

2 tablespoons olive oil
2 ¼ cups chopped onion
3 cloves garlic, minced
1 habanero pepper, chopped
1 ½ tablespoons grated fresh ginger root
1 teaspoon salt
¾ teaspoon ground allspice
¾ teaspoon ground nutmeg
2 ¼ cups cooked black beans, rinsed and drained
2 ¼ cups cooked long-grain white rice
2 ½ cups dry bread crumbs
6 hamburger buns, split

Steps:

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add onions and garlic; cook and stir for a few minutes. Mix in the habanero pepper and continue cooking until tender. Remove from the heat and transfer to a bowl. Pour in the beans, rice and bread crumbs. Season with ginger, salt, allspice and nutmeg. Mix thoroughly using your hands. Form into 6 patties.
  • Heat the remaining oil in a large skillet over medium-high heat (you can use the same one). Fry the patties until golden on each side, about 10 minutes total. Serve on buns with your favorite toppings.

1tbsp. Minced Jalepenos (from the jar)
3tbsp orange juice
Jerk Sauce:
1 bunch green onions, coarsely chopped (about 1-1/2c)
1/2tsp Thyme
1 garlic clove, peeled
1/2c. brown sugar
1/2c. vegetable oil
1/2c. soy sauce
1tsp. ground All Spice
Burgers:
2lbs. Ground Beef
sesame burger buns
1 onion, thinly sliced
3 tomatoes, sliced
lettuce (optional)

Steps:

  • For Orange-Jalapeno Mayonnaise: Mix all ingredients in a small bowl. Seaso to taste with salt & pepper For Jerk Sauce: Finely chop first 4 ingredients (onion, jalapenos, thyme, garlic) in food processor. Add sugar & vegetable oil, soy sauce and All Spice. Process until smooth. Season with salt & pepper. For Burgers: Shape ground beef into patties. Place in baking pan. Pour jerk sauce over patties and turn over to coat. Cover with plastic wrap and refrigerate for 2-3 hours. Remove patties from refrigerator and grill until your desired temperature. Place burgers on buns and serve with Orange-Jalapeno Mayonnaise, onions, lettuce & tomatoes.

1/2 cup mayonnaise
2 tablespoons unsweetened dried shredded coconut
1 tablespoon chopped macadamia nuts
1 tablespoon chopped cilantro
1/3 cup Chinese duck sauce
1/3 cup prepared salsa
1 large banana, chopped
2 plum tomatoes, chopped
1 1/2 lbs ground beef
2 tablespoons chopped green bell peppers
2 tablespoons chopped green onions
1 tablespoon soy sauce
2 teaspoons ground allspice
1/2 teaspoon crumbled dried thyme
1/2 teaspoon cayenne pepper
vegetable oil
6 kaiser rolls, split
3 cups watercress, chopped

Steps:

  • Prepare a medium-hot fire in a charcoal grill with a cover, or preheat a gas grill to med-high.
  • Make the mayonnaise: combine all the Coconut Mayonnaise ingredients in a bowl; stir to combine; cover and refrigerate until ready to serve.
  • Make the chutney: combine the duck sauce, salsa, and banana in an 8-inch fire-proof skillet; place on the grill rack and cook, stirring, until thickened-about 5 minutes.
  • Remove from heat, stir in the chopped tomatoes, cover, and refrigerate until serving.
  • Make the patties: combine the beef, bell pepper, green onion, soy sauce, allspice, thyme, and cayenne.
  • Handle as little as possible but combine mixture well.
  • Divide mixture into 6 equal portions; form into patties to fit rolls.
  • When the grill is ready, brush grill rack with oil; place the patties on the rack, cover, and cook, turning once, until done to preference-5-7 minutes on each side for medium.
  • During the last few minutes of cooking, place the rolls, cut side down, on the outer edges of the rack to toast lightly.
  • Assemble burgers: spread mayonnaise over the cut sides of the roll tops; on each roll bottom, place ½ cup watercress, a patty, and an equal portion of the chutney; add the roll tops and serve.
