- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9-inch square baking pan.
- Stir together whole kernel corn, cream-style corn, muffin mix, sour cream, melted butter, jalapeno peppers, and salt in a large bowl until combined. Pour batter into the prepared baking pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 45 to 60 minutes.

Steps:
- 1. Pre-heat oven to 350 degrees. Grease a 2.5 quart pyrex dish.
- 2. Melt a stick of butter over low heat in a small pan.
- 3. Fine chop the red bell pepper, green onions and the jalapeno slices, set aside.
- 4. In a medium mixing bowl add creamed corn, corn meal, cornstarch, sugar, garlic powder and stir to combine.
- 5. Beat the two eggs and add to the mixture.
- 6. Add fine chopped red bell pepper, green onions and jalapeno slices, add the melted butter, sprinkle with the red pepper flakes and stir.
- 7. Pour into greased dish. Bake at 350 degrees, depending on your oven, 1 hour 15 minutes to 1 hour 30 minutes or until mixture is set and a lovely golden brown. When it is done, it pulls slightly away from the dish and a toothpick inserted in center comes out clean. Enjoy!
JALAPENO CREAMED CORN
I saw something like this at a restaurant before, but there were a lot of things in it that I wouldn't dare eat! So I broke it down and made it a little more simple.

Steps:
- 1. In two seperate pans, get the 1/2 cup of heavy cream and Cheez Whiz melting (not boiling).
- 2. Dump the two cans of creamed corn in a mixing bowl along with the garlic and black pepper.
- 3. Dice up the jalapenos and add to the creamed corn. *If you don't want it too spicy, make sure to take the seeds out of the jalapenos first.
- 4. Once the heavy cream and Cheez Whiz has heated up, add it to the mixing bowl with the creamed corn and stir.
- 5. Place the corn in an oven baking dish and bake for about 15-20 minutes on 350*
- 6. *If you can find cornbread croutons: they're good to crumble up and put on top of the corn when you pull it out of the oven.
