JALAPEñO BOTTLE CAPS WITH BLUE CHEESE DIP

- Heat the oil in a deep skillet to 375º.
- While the oil heats up, combine the fry mix with the beer, stirring until smooth. Toss the jalapeño slices in the batter. Using a slotted wooden spoon or tongs, carefully lower the jalapeño slices into the oil. Fry for about 2 minutes, turning them often to brown evenly. Drain on a paper towel-lined plate and season with salt. Serve immediately with Blue Cheese Dip.
- Place all ingredients into a bowl and mix.
- Combine the sour cream, mayonnaise, salt and pepper. Fold in the blue cheese and green onions. Cover and refrigerate until ready to use.

Steps:
- Heat a few inches of oil in a deep fryer or Dutch oven to 375 F.
- Add beer to the fry mix and mix until smooth. You might have to add more beer. Don't make it too thin, you want it to stick to the jalapenos.
- Add in the jalapenos and cover in the batter.
- Working in batches if needed, deep fry the jalapenos 2-3 minutes per side until golden brown. Remove to a paper towel-lined plate and sprinkle with salt.
- Serve hot with cool blue cheese dip.
- Combine all ingredients. Store unused portion in an airtight container.

- Preheat the broiler.
- Toss the Monterey jack and Cheddar cheeses together in a small bowl.
- Heat the oil in a medium cast-iron or ovenproof skillet over medium-high heat. Add the scallions, jalapeno and a pinch of salt and cook, stirring, until tender, about 3 minutes. Add the tomato and cook, stirring, until soft, about 1 minute. Add the beer and cook until all the liquid has evaporated, about 7 minutes. Remove the skillet from the heat. Add the cheese mixture to the skillet and stir once or twice to combine.
- Put the skillet under the broiler and broil until the cheese is melted, bubbling and lightly browned on top, 2 to 3 minutes. Serve hot with warm tortillas or tortilla chips.
