Changing a meal's status requires more than a change of name, but not much more. Roast chicken is still roast chicken whether you label it haute cuisine, bourgeois cuisine or country cooking; even calling it "poulet roti" will not transmogrify this simple bird. Move, however, from the kitchen to the dining room and from everyday dishes to fine china, then add an appetizer and dessert, and a family meal becomes a festive dinner for guests.

1 3 1/2-pound chicken
Salt and ground pepper to taste

Steps:

  • Preheat the oven to 425 degrees. Sprinkle the chicken inside and out with the salt and pepper and fold the wings akimbo to position them closer to the body. Place the chicken on its side in an oven-safe skillet, preferably cast-iron.
  • Place the chicken in the skillet in the oven and cook for 20 minutes, then turn the chicken over and cook another 20 minutes. (By cooking the chicken on its sides, the juices stay in the breast and, since only the back is exposed, the chicken does not need constant basting.) Finally, turn the chicken onto its back, baste it with the cooking juices and continue to cook 10 minutes. It should be golden in color.
  • When the chicken is cooked, cut it into pieces and serve, with the drippings on the side.

1-1/2 cups hot water
3 Tbsp. margarine or butter, cut up
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 whole chicken or capon (5 lb.)
1/4 tsp. dried thyme leaves or dried tarragon leaves

Steps:

  • Heat oven to 325°F.
  • Mix hot water and margarine in large bowl until margarine is melted. Add stuffing mix; stir just until moistened. Set aside. (Do not stuff chicken until ready to bake.)
  • Stuff chicken lightly with prepared stuffing; close openings with skewers and string. Place, breast-side up, on rack in baking pan; sprinkle with thyme.
  • Bake 1 hour 40 min. or until chicken is done (165°F) and stuffing is heated through (165ºF), basting occasionally with pan juices.

If you can get savory from the Atlantic provinces to green your chicken; it would be the best. My father was a Newfoundlander and swore by their savory.

1 small onion, diced
½ cup diced celery, with leaves
6 slices stale bread, cut into cubes
1 tablespoon ground black pepper
1 tablespoon chopped fresh parsley
1 teaspoon dried sage
1 teaspoon dried rosemary
1 teaspoon dried thyme
1 teaspoon celery salt
½ cup melted butter
1 (3 pound) whole chicken
¼ cup chopped fresh savory

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Stir together onion, celery, bread, pepper, parsley, sage, rosemary, thyme, and celery salt in a large bowl; pour melted butter over bread mixture and stir to combine.
  • Spoon stuffing into the cavities of chicken; place chicken into a roasting pan. Sprinkle chicken with savory; cover with a lid or foil.
  • Bake in the preheated oven for 1 hour. Remove cover; increase oven temperature to 425 degrees F (220 degrees C). Roast until browned and an instant-read thermometer inserted into the thickest part of the thigh, near the bone, reads 165 degrees F (74 degrees C), about 15 minutes.

For the stuffing
1 Tbs unsalted butter
1 tsp virgin olive oil
l/2 cup minced shallots (4 or more large
shallots)
4 Tbs chopped fresh parsley
1 Tbs finely chopped fresh savory
1/8 tsp salt
1/8 tsp freshly ground pepper
1 chicken, 31/2 to 4 pounds
¼ tsp salt for sprinkling on the chicken
Butter or vegetable oil for the roasting pan
Lift the flap of neck skin to expose the wishbone. Using a knife, loosen the bone from the flesh around it, then pry it out with your thumb and fingers.
For the deglazing sauce
1 Tbs minced shallot
1/3 cup dry vermouth or dry white wine
2/3 cup chicken stock
Special equipment
A small frying pan; a shallow-sided heavy aluminum or copper roasting pan or heavy cast-iron skillet, just large enough to hold the trussed chicken; a 1 -quart glass measuring cup or deep bowl; cotton kitchen twine; a basting brush; a board or platter for resting and carving
Preheat oven to 425 °F

Steps:

  • Prepare the herb stuffing: Heat the butter and olive oil in the frying pan over medium high heat. When hot, add the shallots, parsley, savory, salt, and pepper, stirring well and tossing in the pan. Cook for about a minute, just until the shallots begin to soften. Let cool. Preparing the chicken: Remove any lumps of fat from inside the cavity near the tail. Loosen the breast skin by lifting the neck flap and work your fingers between the skin and the flesh, especially the thighs, taking care not to puncture the skin. Stuff the cooled herb mixture down between the skin and the flesh. Lay the chicken on its back, tuck the neck skin underneath, and smooth the surface, to distribute the stuffing evenly. Roasting the chicken: Sprinkle 1/4 teaspoon salt all over the chicken. Grease the center of the roasting pan. Set the chicken on its side in the greased pan and place in the oven. Roast for 25 minutes for a 3l/2-pound chicken (3 or 4 minutes longer for a 4-pound bird), then turn the chicken onto its other side, grasping it with kitchen tongs or towels. The first side on which it rested will be deeply colored; be careful not to tear the skin when turning. Lower the heat to 400°F and roast for another 25 to 28 minutes, depending on size, then turn the chicken breast side up; baste with the pan juices. Roast for 15 to 20 minutes and baste once again during this final cooking. Test the chicken for doneness; return to the oven for a few minutes if necessary. Remove the chicken to a cutting board, place it on one side or breast down, so the juices flow into the breast meat, and let rest for 15 minutes. Make the deglazing sauce in the roasting pan. Tip the pan to one side and skim as much fat as possible off the top of the juice. Stir in the minced shallot and then the vermouth and chicken stock. Add the juices accumulated on the carving board and bring to a boil.

4 skinless, boneless chicken breasts
1/4 cup orange juice
1 tablespoon mustard
1/2 cup white wine
1 teaspoon dried tarragon
4 ounces fresh spinach, washed, stems removed and coarsely chopped
4 ounces Goat cheese or cream cheese, softened
1/2 cup black greek olives, pits removed and chopped
1 teaspoon dried mint
1/2 cup chopped dried apricots

Steps:

  • Pound out the chicken breasts between two sheets of plastic wrap until thin and evenly thick. In a square glass baking dish combine orange juice, mustard, wine and tarragon. Place breasts in dish and coat with marinade and let sit for 30 minutes.
  • Preheat oven to 325 degrees. Lay one chicken breast out flat and top with some chopped spinach. In a small bowl mix together cheese, olives, mint and apricots. Roll up the breast and secure with toothpicks. Place chicken back into marinating dish and repeat procedure for remaining breasts. Bake for 40 minutes until firm.
