JACK'S CHALLAH RECIPE

Number Of Ingredients 9

1/2 cup sugar, plus a pinch for the egg wash
2 tablespoons (three .75-ounce packets) active dry yeast, such as Fleischmann's
2 1/3 cups warm water, 100 to 110 degrees F
9 cups (2 1/2 pounds) bread flour, plus more for dusting
2 tablespoons kosher salt, plus a pinch for the egg wash
1/2 cup canola oil
1 large egg plus 1 yolk
Nonstick cooking spray, for the bowl
3 tablespoons zaatar, optional

Steps:

  • Whisk the sugar, yeast and 1 cup of the warm water in a medium bowl. Set aside to bloom.
  • Add the flour to the bowl of a stand mixer fitted with the hook attachment. Make a well in the center of the flour and bury the salt in the well. Add the canola oil, whole egg, remaining 1 1/3 cups warm water and the bloomed yeast, making sure no sediment is left behind. Mix on low speed for 30 seconds, increase to medium speed for 30 seconds and then increase to high speed for 3 minutes, mixing until the dough appears smooth.
  • Spray a large bowl with nonstick cooking spray and transfer the dough to the bowl. Cover with a damp towel or plastic wrap and set in a warm area to proof until doubled in size, about 1 hour.
  • Turn the dough out onto a lightly floured surface. Split the dough into 3 loaves. Divide each loaf into the desired number of braid strands (3, 4 or 6) and roll each strand to elongate. Braid the strands to a long loaf or a round shape and place on a baking sheet lined with parchment paper.
  • Whisk together the egg yolk with a pinch of salt and a pinch of sugar. Brush this egg wash over the shaped loaves and top with 1 tablespoon zaatar per loaf, if using. Let the loaves rise in a warm place until doubled in size, about 30 minutes.
  • Preheat the oven to 350 degrees F.
  • Bake until lightly golden, 30 to 35 minutes. Transfer to a rack to cool.
  • To freeze, cool completely before transferring to a ziptop bag.

1 package (1/4 ounce) active dry yeast
3 tablespoons sugar plus 1/2 teaspoon sugar
2-1/4 cups warm water (110° to 115°)
1 tablespoon salt
6-1/4 to 6-3/4 cups bread flour
2 tablespoons canola oil

Steps:

  • In a large bowl, dissolve yeast and 1/2 teaspoon sugar in warm water; let stand until bubbles form on surface. Whisk together remaining 3 tablespoons sugar, salt and 3 cups flour. Stir oil into yeast mixture; pour into flour mixture and beat until smooth. Stir in enough remaining flour, 1/2 cup at a time, to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 8-10 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, 1-1/2 to 2 hours., Punch dough down. Turn onto a lightly floured surface; divide dough in half. Shape each into a loaf. Place in 2 greased 9x5-in. loaf pans. Cover and let rise until doubled, 1 to 1-1/2 hours., Bake at 375° until golden brown and bread sounds hollow when tapped or has reached an internal temperature of 200°, 30-35 minutes. Remove from pans to wire racks to cool.

2 cups Gold Medal™ all-purpose flour
1 cup shredded Monterey Jack cheese with jalapeño peppers (4 ounces)
1 teaspoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1/4 cup butter or margarine, melted
2 eggs, slightly beaten

Steps:

  • Heat oven to 350°. Lightly grease bottom only of loaf pan, 9x5x3 or 8 1/2x4 1/2x2 1/2 inches, with shortening or spray bottom with cooking spray.
  • Stir together flour, cheese, sugar, baking powder, baking soda and salt in medium bowl. Stir in remaining ingredients just until moistened (batter will be lumpy). Spread in pan.
  • Bake 35 to 45 minutes or until golden brown and toothpick inserted in center comes out clean. Cool 5 minutes; run knife around edges of pan to loosen. Remove from pan to wire rack. Cool 30 minutes before slicing.

This savory bread is a must for any cheese fan. It can be served with anything from spaghetti to barbecue. Enjoy it fresh from the oven, toast it with a bit of butter or add a little garlic bread on top for cheesy garlic bread. The amount of Colby Jack in this bread is perfect. Yum!

2 pkg active dry yeast
3/4 c water, warm
3 c shredded colby jack cheese
3/4 c Parmesan cheese
2 c milk
3 Tbsp sugar
1 Tbsp butter, melted
2 tsp salt
3 c all-purpose flour
1 egg white
1 Tbsp water
TOPPING MIXTURE
1/2 c shredded Colby Jack cheese
1 clove garlic, minced
1/2 tsp sesame seeds
1/4 tsp paprika
1/4 tsp celery seed

Steps:

  • 1. In large bowl dissolve yeast in the 3/4 cup warm water.
  • 2. Add the cheeses, milk, sugar, butter, salt, and 3 cups of flour.
  • 3. Beat by hand or mixer for about 3 minutes. Stir in enough remaining flour to make a firm dough. DO NOT KNEAD!!!
  • 4. Cover and let rise in warm place until doubled about 1-2 hours.
  • 5. Punch dough down.
  • 6. Transfer to two greased loaf pans.
  • 7. Cover and let rise until doubled about 30 minutes.
  • 8. In a small bowl, combine egg white and water.
  • 9. In another bowl, combine topping ingredients.
  • 10. Brush loaves with egg white/water mixture.
  • 11. Sprinkle with topping.
  • 12. Bake at 375F for 25-30 minutes or until golden brown. (Exactly 27 mins in my oven.)
  • 13. Remove from pans and place on a wire rack to cool.
