ALL JACK'D UP STUFFED SMOKED MEATLOAF
A moist tender meatloaf infused with the flavor of Jack Daniels, stuffed with melted pepper jack cheese, and slathered in a bold spicy sauce.

Steps:
- Preheat your smoker to 225 degrees F, using a blend of hickory and apple wood chips.
- In a large mixing bowl add the beef, bread crumbs, onion, garlic, eggs, Worcestershire, whiskey, steak seasoning, and milk.
- Using your hands, mix all of the ingredients just until evenly combined.
- In the bottom of a small, shallow metal pan- spread out half of the meat mixture. Use your fingers to create a shallow well in the center. Add the pepper jack cheese to the well, leaving about an inch of meat on all sides.
- Top with the remaining meatloaf mixture. Gently squish everything together to form a loaf, and use your fingers to securely seal up any holes so that the cheese doesn't leak out during cooking.
- Stir together the sauce ingredients. Spoon the sauce evenly out over the meatloaf. Letting it drip down the sides a bit is a plus.
- Transfer the meatloaf to the smoker, close and seal it and smoke for 4 hours- or until the internal temp reads 165 degrees F.
- Remove the meatloaf from the smoker. Let it rest for five minutes. Slice and serve with your desired sides.

- Grease a 3" X 9" loafpan w/ margarine, Mix all ingredients well, in a bowl, & form in a loaf in the pan. Bake @ 350' for 1 hour.
- Can make an optional sauce for the top = 1/4 C Ketchup, 1 tsp Onion Powder & 1 tsp of Prepared Dijon or Yellow mustard. Spoon on top and sprinkle a few minced onion flakes on top before baking.
PEPPERJACK MEATLOAF

- 1. In a large bowl, combine the egg, seasoned pork rinds , onion, salt and pepper. Crumble beef over mixture and mix well. Press half of the beef mixture onto the bottom and halfway up the sides of a greased 8-in. x 4-in. loaf pan. Sprinkle 3/4 cup cheese over meat to within 1/2 in. of sides. Pat remaining beef mixture over cheese. Bake, uncovered, at 350° for 50-55 minutes or until meat is no longer pink and a meat thermometer reads 160°. Sprinkle with remaining cheese. Bake 5 minutes longer or until cheese is melted. Let stand for 10 minutes before slicing. Serve with salsa if desired.
PEPPER-JACK MEATLOAF
I had some leftover Pepper-Jack cheese from a picnic which we didn't use. My family will not eat this cheese on sandwiches or burger so I thought I'd try making a meat loaf with it. Oh my this was a good combination of ingredients!

- 1. Preheat oven to 350°F.
- 2. In large bowl, thoroughly combine all ingredients except cheese slices.
- 3. Spray a 2-1/2-Quart Oval Casserole Dish or large loaf pan lightly with cooking spray. Turn meat mixture into casserole and mold into a loaf shape.
- 4. Bake 1 hour then layer pepper-jack cheese over top and bake for another 10 minutes. Meatloaf should not be pink in center and the juices should show no pink color. Let stand 5 minutes; drain off any grease before slicing.

- Whisk eggs, milk, salt, and ground black pepper in a large bowl. Add crumbled bread and stir until dissolved. JAMAICAN JERK MEATLOAF
A quick and easy recipe with lots of flavour and a little kick. I use store bought Jerk seasoning sauce, it lasts for ages as you only need a small amount, Walkerswood is a great brand if you can find it. This Is great served with good old-fashioned mashed potatoes or even eaten cold the next day.
