JACK'S BBQ CHICKEN

4 (3 to 4-pound) chickens, halved
Jack's Old South Meat Marinade, recipe follows
1 cup apple juice
Jack's Old South BBQ Rub, recipe follows
Jack's Old South Competition Vinegar Sauce, see recipe
2 quarts apple juice
1 cup Worcestershire sauce
1 cup orange juice
1 cup light brown sugar
1/2 cup olive oil
1/2 cup lemon juice
2 tablespoons hot sauce
1/2 cup apple cider vinegar
1/2 cup salt
1/4 cup brown sugar
1/4 cup sweet paprika
1/4 cup kosher salt
3 tablespoons black pepper
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon cayenne pepper
1 teaspoon dried basil

Steps:

  • Combine the chicken and marinade in a large non-reactive pan. Refrigerate for at least 2 hours and up to 6.
  • Preheat the oven to 300 degrees F.
  • Remove the chicken from the marinade and coat generously with some of the rub. Arrange the chicken, skin side-up, in a baking pan and pour the apple juice in the bottom. Cover the pan with aluminum foil and roast for 1 1/2 to 2 hours.
  • Uncover the chicken and continue roasting, basting with the sauce occasionally, until the skin is golden.
  • Combine all the ingredients in a saucepan and bring to a boil. Whisk until the sugar and salt dissolve. Let cool.
  • Combine all ingredients and mix well.

1 tablespoon olive oil
2 garlic cloves, finely chopped
1 (14 1/2 ounce) can stewed tomatoes, drained and 1/2 cup liquid reserved
1 lb chicken breast, cut into 1/2-inch strips (boneless and skinless)
1 medium onion, thinly sliced and separated into rings
1 1/2 teaspoons fresh oregano leaves, chopped
1/8 teaspoon pepper
1 1/2 cups chicken broth
1 medium zucchini, cut lengthwise in half, then cut crosswise into 1/4-inch slices
0.5 (10 ounce) package couscous (3/4 cup)

Steps:

  • Heat oil in 10-inch skillet over medium heat. Cook garlic in oil 1 minute, stirring frequently.
  • Stir in reserved tomato liquid, chicken, onion, oregano, and pepper. Heat to boiling; reduce heat. Cover and simmer about 10 minutes, stirring occasionally, until chicken in no longer pink in center.
  • Stir in broth; heat to boiling. Stir in zucchini, couscous and tomatoes, breaking up tomatoes with a fork or snipping with kitchen scissors; remove from heat. Cover and let stand about 5 minutes or until couscous is tender and liquid is absorbed.

Our favorite "company is coming" dish. I have NEVER made this without guests asking for the recipe. It supposedly is the recipe that Jacqueline Kennedy used for state dinners

4 tablespoons margarine
1/4 lb bacon or 1/4 lb salt pork
1 large onion, chopped
1 carrot, sliced
1 minced garlic clove
2 minced shallots
8 boneless skinless chicken breasts
2 tablespoons flour
2 tablespoons chopped fresh parsley
1 teaspoon marjoram
1 bay leaf
1/2 teaspoon thyme
1 pinch salt
1 pinch pepper
2 cups dry white wine
3/4 lb sliced mushrooms

Steps:

  • Melt butter in a dutch oven, add bacon, onions, carrots, garlic, and shallots.
  • Brown lightly.
  • Remove veggies to a separate plate with a slotted spoon, and brown the chicken in the remaining juices.
  • Remove the chicken to a separate plate, add the wine and seasonings, and stir to incorporate all the little brown bits in the pan.
  • Put the chicken back in, turn to low, and simmer for 40 minutes with lid OFF.
  • Lightly saute mushrooms to get rid of the moisture.
  • Drain.
  • Remove chicken from pan, whisk in flour until sauce is thickened and bubbly.
  • For the last 10 minutes of the chicken cooking, add the mushrooms and the vegetable mixture to the chicken.
  • Alternatively, if preparing ahead, once the sauce is thickened and bubbly, you can put the chicken, vegetables, and mushrooms in an oven safe serving dish, and pour the sauce over the top. Place in oven on "warm setting." Do not increase oven temp, so youdon't dry out the chicken.

4 -6 chicken cutlets
1 1/2 cups cheddar cheese, shredded
1 (10 3/4 ounce) can cream of chicken soup
1/4 cup white wine
1 1/2-2 cups pepperidge farm seasoned stuffing mix
1/4 cup butter, melted

Steps:

  • Spray pyrex baking dish with cooking oil and place chicken in the dish.
  • Sprinkle shredded cheese on top of the chicken.
  • Mix the soup with the wine and pour over that over the cheese and then top with the stuffing mix.
  • Pour the melted butter over the crumbs and bake for 40 minutes (if thin chicken or longer if chicken is thicker) at 350 degrees F.

This is one of my FAVE's; big on flavor, ease, and the use of common ingredients normally found in your kitchen. I've been making this recipe since I received it on June 2, 1997. I heard it given over a radio program called "The Yankee Kitchen" which was hosted by the late Gus Saunders. People would call into this radio program and give out their favorite recipes over the radio (AM station in Boston) and listeners would jot them down. I have many of these "jotted-down" recipes and they are treasures to me. The Yankee Kitchen is no longer on the radio and boy, oh-boy do I miss it and I especially miss Gus and all the callers. This recipe came from Jackie P....., a wonderful lady and a regular caller to the program.

1 1/2 lbs chicken breasts
3 -4 garlic cloves, minced
1 teaspoon salt
1 teaspoon dry mustard
1/2 teaspoon ground black pepper
6 tablespoons parsley, chopped
1 teaspoon dried oregano
1 teaspoon dried basil
4 tablespoons lemon juice, freshly squeezed
1/2 cup extra virgin olive oil
Ritz cracker, crushed
grated parmesan cheese

Steps:

  • Cut fat from chicken if necessary. Cut chicken into bite-size pieces. Place chicken in a bowl or large ziplock bag.
  • Combine next 9 ingredients and add to chicken. Mix chicken with marinate to combine evenly throughout. Place in refrigerator and marinate for 1 - 2 hours.
  • Place chicken mixture in a 7 x 11 pyrex pan.
  • Sprinkle with enough crushed Ritz crackers to cover the top evenly.
  • Bake in a preheated 350 degree Fahrenheit for 15 minutes until chicken is done.
  • Once chicken is removed from oven sprinkle with enough parmesan cheese to your liking. Making sure it is sprinkled while chicken is hot so it can melt into the chicken, which gives it a pronounced "parmesany" taste.
  • NOTE: Some of you might think that 15 minutes is not enough time, but because your dealing with the breast and the size (bite-size), it cooks quickly. Therefore, be careful not to overcook or else the chicken will be dry and unappealing.

1 (14 ounce) package frozen broccoli florets, thawed, and drained
1 (7 7/8 ounce) box betty crocker deluxe creamy cheddar au gratin potato mix
2 cups boiling water
2 tablespoons margarine or 2 tablespoons butter
1/2 cup milk
4 boneless skinless chicken breast halves (1 1/4 pounds)
2 slices cheddar cheese, cut diagonally in half (1 oz. slices)

Steps:

  • Heat oven to 400.
  • Spray 11x7" baking dish, or 2 quart casserole with cooking spray.
  • Spread broccoli in baking dish.
  • Stir potatoes, sauce mix, cheese sauce, boiling water and margarine in a medium bowl.
  • Stir in milk.
  • Spread over broccoli.
  • Place chicken breast halves on potato mixture.
  • Bake uncovered for 30 minutes.
  • Place cheese slices on chicken.
  • Sprinkle with topping.
  • Bake 3-5 minutes longer, or until cheese is
  • melted, and juice of chicken is no longer pink when centers of thickest pieces are cut.
  • Let stand 5 minutes, or until sauce is as

A friend of mine gave this to me quite some time ago and she called it "Kerri's Chicken" because her name was Kerri and I am not sure where this comes from but I decided to call it "Jackie's Chicken". The flavor of this is outstanding! :)

2 lbs boneless chicken breasts
1 (8 ounce) jar roasted red peppers
1 (6 ounce) jar marinated artichoke hearts
1 (4 ounce) can sliced black olives
1 (10 ounce) package sliced mushrooms
1 package Good Seasons garlic and herb seasoning mix
1 package Good Seasonings Italian salad dressing mix

Steps:

  • Cut roasted red peppers and artichoke hearts in small pieces.
  • Cut chicken in pieces.
  • Mix dressings according to package directions.
  • Mix all ingredients together and marinate for 6 hours.
  • Pour all of the ingredients in a baking dish and cook for 1 hour on 350 degrees.
  • Serve over rice, linguine, or a pasta of your choice!
