Chicken and Potato Napoleon with Spicy Tomato Sambal Sauce image

4 tablespoons olive oil, divided
2 boneless, chicken breast halves with skin
Salt and freshly ground black pepper
Salt and freshly ground black pepper
1 tablespoon olive oil
3 garlic cloves, chopped
1 small onion, diced
1 (15-ounce) can plain tomatoes
2 fresh tomatoes, seeded and diced
2 tablespoons sambal oelek sauce
1 tablespoon sugar
2 teaspoons salt, plus more for seasoning
1 sprig fresh rosemary, plus sprigs, for garnish
Freshly ground black pepper
1 small bunch Italian parsley, leaves chopped, plus more for garnish
6 large Yukon gold potatoes
Salt
Olive oil
2 tablespoons grapeseed oil
Sea salt

Steps:

  • Chicken:
  • Preheat the oven to 375 degrees F.
  • In a large oven-proof saute pan over high heat, heat 2 tablespoons olive oil. Season the chicken breasts with salt and pepper, to taste, and add them to the oil. Cook for 3 minutes on each side. Put the saute pan in the oven and the let the chicken finish cooking, about 15 minutes. Remove from the oven to a cutting board and allow to rest, covered, for 5 to 10 minutes.
  • Tomato sauce: In a medium-sized skillet over medium heat, add the olive oil. Add the chopped garlic and onions and saute until softened. Stir in the tomatoes, sambal, sugar, 2 teaspoons of salt and the rosemary. Saute over medium heat and allow the sauce to reduce and flavors to blend together, about 8 minutes. Taste and season with salt and pepper, if needed. Remove the rosemary sprig and stir in chopped parsley just before serving.
  • Potatoes: Fill a large saucepan 2/3's full with cold water. Add the potatoes and a good pinch of salt and bring to a gentle boil over medium heat. Cook the potatoes until they are just tender, about 10 minutes. Once the potatoes tender, drain them and cut them into 1/4-inch slices. Heat a combination of olive oil and grapeseed oil in a large skillet until it just begins to smoke. Add the potato slices and fry until crispy on the outside and completely tender on the inside. Remove the potatoes to paper towels to drain and sprinkle with sea salt.
  • Arrange potato slices in a circular layer on each serving plate. Put a thin layer of tomato sauce over the potatoes, leaving a small border. Slice the chicken breasts into serving portions and arrange on top of the potato-tomato layers. Garnish each serving with a sprig of rosemary and fresh parsley. Serve and enjoy!

1 tablespoon olive oil
12 medium green prawns, peeled, deveined
1 garlic clove, crushed
1 small red chile, finely chopped
2 tomatoes, chopped
2 tablespoons basil leaves, shredded
1/4 cup sour cream
4 cooked jacket potatoes

Steps:

  • Heat oil in a non-stick frying pan over medium-high heat. Add prawns. Cook for 1 to 2 minutes each side or until prawns turn pink. Remove to a board.
  • Add garlic and chilli to frying pan. Cook for 1 minute. Add tomatoes and 1/4 cup cold water. Cook, stirring occasionally, for 5 minutes or until softened. Chop prawns. Add prawns, basil and salt and pepper to tomato mixture. Stir to combine.
  • Spoon sour cream and prawn mixture over cooked jacket potatoes. Serve with lemon wedges.

2 baking potatoes (Vivaldi have a lovely, creamy texture)
1 tbsp sunflower oil
½ tsp cumin seeds
½ tsp black mustard seeds
½ tsp turmeric
1 onion , thinly sliced
3 garlic cloves , sliced
1 red chilli , deseeded and sliced
85g red lentils
1 tomato , chopped
400ml vegetable stock
210g can chickpeas , drained
good handful chopped coriander
chutney or lime pickle, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Put the potatoes in the oven and bake for 1 hr until tender and the skin is crispy.
  • While they are baking, make the dhal. Heat the oil in a medium pan and fry the spices to release their flavours. As soon as they start to crackle, tip in the onion, garlic and chilli, with a splash of water to stop the spices from burning. Cook for 5 mins until the onion softens.
  • Add the lentils, tomato and stock, then cover and cook for 10 mins. Tip in the chickpeas, cover and cook for 10 mins more until the lentils are tender. Season to taste, stir in the coriander and spoon onto the jacket potatoes. Serve with chutney or lime pickle.

1 tablespoon vegetable oil, or as needed
¼ teaspoon sea salt, or to taste
1 pinch lemon-pepper seasoning, or to taste
12 large squares aluminum foil

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Drizzle potatoes with a thin layer of oil. Sprinkle on sea salt and about 1/2 as much lemon-pepper seasoning. Wrap each potato in a square of foil, then wrap with a second square. Place foil-wrapped potatoes in a glass or ceramic baking dish.

1 teaspoon curry powder
210 g butter beans
200 g chopped tomatoes
100 g spinach

Steps:

  • Peel and slice the onion and garlic and fry them together until soft. Add the curry powder and stir it inches.
  • Drain and rinse the butter beans and add them to the pan along with the chopped tomatoes. Simmer for 10 minutes.
  • Stir in the spinach and leave to simmer for another 5 minutes.
  • Serve hot over your jacket potatoes.

1 pound medium shrimp
2 teaspoons coarse salt
2 tablespoons olive oil
2 cloves garlic, minced
2 shallots, finely chopped
1 cup canned Italian plum tomatoes, drained and chopped
1/2 cup dry white wine
1/4 teaspoon dried red pepper flakes
Freshly ground pepper to taste

Steps:

  • Peel the shrimp and place in a bowl. Sprinkle with salt and cover with cold water. Set aside.
  • Heat one tablespoon oil in a skillet. Add the garlic and the shallots and cook until soft. Add the tomatoes, wine and pepper and simmer gently for 10 minutes.
  • Rinse and drain the shrimp. In a separate skillet, heat the remaining tablespoon oil and saute the shrimp just long enough for them to turn pink. Add them to the tomato sauce and mix well. Serve immediately.
