1 1/4 lbs fresh spinach
2 tsp olive oil
2 shallots, finely chopped
4 cloves garlic, minced
2 tbsp lemon juice
1/8 tsp salt
1/4 tsp pepper
1 1/2 tbsp pine nuts, toasted

Steps:

  • PREPARATION INSTRUCTIONS 1. Trim away stems from spinach and wash well. Do not dry; allow water to cling to the leaves. Heat olive oil in Dutch oven over medium heat until hot. Add shallots and garlic; cook, stirring, until shallots are tender, 2 to 3 minutes. 2. Place spinach in pan. Drizzle with lemon juice; sprinkle with salt and pepper. Cover; cook 10 minutes, stirring occasionally. Sprinkle with pine nuts.

I have 6-8 months before I go in for a gastric bypass and I am trying to lose the weight before hand. Basicly I am trying to beat the clock. If I lose 100 lbs before the surgery, I won't need it.

4 portobello mushrooms
1/2 lb ground beef
1 pkg spinach, frozen
1 c muzzarella cheese
1 c tomato sauce, italian seasoned
4 slice tomatos (sliced thick)
1 tsp garlic powder (you can use fresh)
1 tsp oragano
1/2 tsp salt and pepper
1/2 tsp parsley flakes
2 Tbsp olive oil
1/4 dash(es) parmesan cheese

Steps:

  • 1. Remove the stem of the portobello mushrooms. Brush the inside with olive oil. Put aside. Heat tomato sauce in another sauce pan. Put parmesan cheese into the sauce and let it cook until bubbly, lower heat to simmer. In another pan steam the spinach (if using fresh or boil if using frozen)cook until soft
  • 2. Take the pound of ground beef, put in the frying pan with spices. Fry until crumbly. Drain the fat. The add the sauce to the pan.
  • 3. Once all ingredients are cooked, take the mushroom, layer the bottom with spinach, then the ground beef sauce mixture,put on thick slice of tomato on top and then muzzarella cheese. Put into a bake pan and put in the oven on 350 deg. for 15 minutes. Let stand for a minute or two after cooking.

1 cup chopped red onion
1 cup chopped yellow onion
2 tablespoons chopped Italian parsley
6 cloves garlic, chopped
1 teaspoon red pepper

1 tablespoon chopped fresh oregano
2 tablespoons chopped fresh parsley
8 ounces portabella mushrooms, chopped
2 (15 ounce) cans artichoke hearts
1 (16 ounce) packet frozen chopped spinach
2 lbs ricotta cheese
1 cup parmigiano-reggiano cheese, grated
4 tablespoons heavy cream (+-) or 4 tablespoons half-and-half (+-)

Steps:

  • heat oil and butter over medium heat.
  • add onion, mushrooms herbs, garlic and spices, sautee until browned and tender.
  • add artichoke, break into small pcs while browning.
  • add spinach.
  • continue to stir and cook until all moisture is absorbed and mixture appears to be dry.
  • add ricotta, mix well.
  • add parmesian, mix well.
  • create desired consistancey by adding cream or more parmesian.
  • salt to taste (needs quite a bit).
  • serve on crackers or chips.

2 lbs fresh spinach, washed
2 tablespoons water
3 tablespoons butter
2 cloves garlic, finely chopped
1/3 cup pine nuts
1/2 teaspoon salt
1/2 teaspoon nutmeg (pref. fresh grated)
1/4 teaspoon pepper

Steps:

  • Cover and cook spinach and water for about 10 minutes, until spinach is wilted; drain well.
  • Heat butter in a skillet over medium-high heat.
  • Saute garlic in butter.
  • Stir in spinach and remaining ingredients.
  • Cook uncovered over medium heat, stirring often, until heat through.

1 small onion, chopped
2 cloves garlic, chopped
14 ounces fresh mushrooms, sliced
10 ounces clean fresh spinach, roughly chopped
2 tablespoons balsamic vinegar
½ cup white wine
salt and freshly ground black pepper to taste
chopped fresh parsley, for garnish

Steps:

  • Heat the olive oil in a large skillet over medium-high heat. Saute onion and garlic in the oil until they start to become tender. Add the mushrooms, and fry until they begin to shrink, about 3 to 4 minutes. Toss in the spinach, and fry, stirring constantly for a few minutes, or until spinach is wilted.
  • Add the vinegar, stirring constantly until it is absorbed, then stir in the white wine. Reduce heat to low, and simmer until the wine has almost completely absorbed. Season with salt and pepper to taste, and sprinkle with fresh parsley. Serve hot.

From the Australian Pork site. I made this the other night and if I was rating it I'd give it 5 stars for speed of making and taste-it was DELICIOUS! I had no lemon thyme, so used a mix of regular thyme and lemon zest. That was great in it.

700 g ground lean pork
1 cup low-fat ricotta cheese (250g)
150 g spinach leaves, washed and roughly chopped
2 eggs
1 tablespoon lemon thyme, finely chopped
1/2 teaspoon fresh ground black pepper
8 -10 lasagna sheets, fresh ones
2 cups tomato sauce, for pasta
1 1/2 cups lowfat mozzarella cheese, grated

Steps:

  • Pre-heat the oven to 180°C.
  • In a large bowl combine the pork mince, ricotta, spinach leaves, eggs, lemon thyme and pepper and mix well.
  • Place the pork mixture into a piping bag with a large 4 cm plain tube.
  • Lay the lasagne sheets on flat board and cut sheets into 2 or 3 sections depending upon size.
  • Pipe the pork mixture onto the centre of each sheet of pasta. Roll to enclose filling. Brush the edge with a little water to seal. Place each roll fold side down in a shallow oven-proof dish in a single layer.
  • Pour over the tomato pasta sauce and sprinkle surface with grated mozzarella cheese.
  • Bake in the pre-heated oven for 25-30 minutes until cheese is bubbling. Serve hot with crisp garden salad.
  • Note:.
  • This dish can be prepared ahead of time and refrigerated for 48 hours prior to baking.

2 T olive oil
1 T onion, finely diced
2 garlic cloves, minced
2 pounds spinach, chopped
1/4 tsp ground nutmeg
1 T Parmesan cheese

Steps:

  • 1. Saute the prosciutto or bacon in the olive oil until desired doneness. 2. Add the onion, garlic, and spinach. Saute the spinach until it is limp. 3. Adjust seasonings with salt, nutmeg, Parmesan cheese and pepper. Serve immediately while still warm.
