ITALIAN ROASTED POTATOES
Italian Roasted Potatoes are a simple and delicious recipe using baby potatoes, fresh garlic, and Italian seasoning. This recipe can easily be doubled if needed.

Steps:
- Preheat oven to 425 degrees. Place baking rack at the top third of oven.
- In a large bowl combine the halved baby potatoes, sliced garlic, olive oil, Italian seasoning, and kosher salt. Use a spoon to toss the mixture together well. Pour the potatoes on to a baking sheet and arrange so there is space between the potatoes.
- Roast the potatoes for 20-25 minutes, or until they are fork tender, stopping to stir them halfway through. Remove from oven and garnish with chopped fresh parsley if desired.

- In a large skillet, cook the beef, sausage, onion, pepper and salt over medium heat until meat is no longer pink. Meanwhile, in a small saucepan, combine the soup, milk, tomato sauce, garlic powder, oregano and sugar. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until heated through.
- Drain meat mixture; spoon half into a greased 13-in. x 9-in. baking dish. Layer with half of the potatoes. Repeat layers. Top with soup mixture.
- Cover and bake at 350° for 1-1/4 hours or until potatoes are tender. Uncover; sprinkle with cheese. Bake 15 minutes longer or until cheese is melted. Yield: 10-12 servings.

- Put the potatoes in a large pot and cover with water. Bring to a boil, salt the water, and cook 5 minutes. Drain.
- Heat the EVOO in a large skillet over medium-high heat. Add the garlic and cook until golden, about 2 minutes. Remove to a cutting board with a slotted spoon, then chop and reserve.
- Add the potatoes and rosemary to the skillet and season with salt and pepper. Cook until browned and crisp, 5 to 10 minutes. Transfer to a serving bowl and top with the garlic and cheese.
