SPICED UP POTATOES
Sliced potatoes with seasonings to give it an excellent flavor. This is a great side dish for any main course meal. You can add more of the seasonings for your liking. I suggest a little more paprika, it gives it a great flavor. You can also put in bacon bits when cooking if you would like.

- Melt butter in a large skillet at a medium heat. Stir in the potatoes, garlic salt, Italian seasoning and paprika. Stir the potatoes around occasionally. The potatoes should cook for about 12 minutes or until potatoes are a red-brown color.

- Preheat oven to 425 degrees. Place baking rack at the top third of oven.
- In a large bowl combine the halved baby potatoes, sliced garlic, olive oil, Italian seasoning, and kosher salt. Use a spoon to toss the mixture together well. Pour the potatoes on to a baking sheet and arrange so there is space between the potatoes.
- Roast the potatoes for 20-25 minutes, or until they are fork tender, stopping to stir them halfway through. Remove from oven and garnish with chopped fresh parsley if desired.

This recipe I got from Masterfoods & it is a great simple side dish to any meal. When I'm out of potatoes I sometimes even use tinned baby potatoes & it still works great.

- Heat oil in a baking dish with garlic at 200.C for 2-3 minutes.
- Add potatoes & stir well to coat with mixture, sprinkle with herbs & chilli.
- Return to oven for approx 1 hour turning every 15 mins or so until golden & crisp.
