This is easy and very tasty, it's good served hot or at room temperature for a side dish, or as a main meal. All ingredients can be adjusted to taste. Add in finely chopped jalapeno pepper or crushed chili peppper for some heat.

1 lb ground beef
1 onion, finely chopped
1 -2 tablespoon fresh minced garlic
1 small green bell pepper, chopped
1 (14 1/2 ounce) can tomatoes (drained)
1 cup water (or use juice from tomatoes with water to make 1 cup)
1/2-3/4 cup uncooked long-grain rice
1/2 cup chili sauce
salt and pepper
1 -2 teaspoon brown sugar
1 teaspoon cumin (or to taste)
2 -3 teaspoons Worcestershire sauce
1 1/2 cups shredded cheddar cheese (can use more)
3 tablespoons chopped fresh cilantro (optional and to taste)

Steps:

  • Set oven to 375 degrees.
  • Grease a 2-quart casserole dish.
  • In a large skillet, brown the ground beef over medium-high heat; drain the fat, and transfer beef to a large pot over medium low heat.
  • Stir in onion, garlic green pepper, tomatoes, water, rice, chili sauce, salt, pepper, brown sugar, cumin and Worcestershire sauce.
  • Let simmer for about 30 minutes, stirring occasionally, then transfer to a 2-quart casserole dish; press mixture down firmly.
  • Sprinkle with grated cheddar cheese.
  • Bake for 10-15 minutes, or until cheese is melted and bubbly.
  • Garnish with fresh cilantro if desired.

1 cup water
¾ cup uncooked long grain rice
½ cup chile sauce

½ teaspoon ground cumin

1 pinch ground black pepper
½ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Brown the ground beef in a large skillet over medium-high heat. Drain excess fat and transfer beef to a large pot over medium low heat.. Stir in the onion, green bell pepper, tomatoes, water, rice, chile sauce, salt, brown sugar, cumin, Worcestershire sauce and ground black pepper.
  • Let this simmer for about 30 minutes, stirring occasionally, then transport this to a 2-quart casserole dish. Press down firmly and sprinkle with the shredded Cheddar cheese.
  • Bake at 375 degrees F (190 degrees C) for 10 to 15 minutes, or until cheese is melted and bubbly. Garnish with chopped fresh cilantro.

rice (that you previously cooked for example minute rice or from another meal that is leftover)
0.5 (1 ounce) envelope onion soup
1 lb cooked crumbled lean hamburger
chopped fresh onions or chopped dehydrated onion
spaghetti sauce (leftovers if possible) or taco sauce (leftovers if possible)
canned corn or frozen corn, drained
canned mushroom, drained
fresh cooked drained bacon (save the drippings)
shredded cheese

Steps:

  • Mix the rice and tomato sauce together place in a microwave safe casserole.
  • Take the hamburger that is mixed with a little bacon drippings (this is ok because the hamburger was 90% lean).
  • Layer the meat in next.
  • Layer in the corn then layer the mushrooms.
  • Then the corn then the bacon for flavor and decoration.
  • Now the shredded cheese.
  • Microwave on high 5 minutes or so until heated through and the cheese is melted.
  • This sounds strange, so if you are a health nut remember that the hamburger was 90% lean and the bacon is for garnish so there is only a little (do not use bacon bits). Did you know you can also add chili beans as a layer if you want. The 1/2 envelope of onion soup might be used to add flavor to the tomato sauce if the sauce is a variety that is boring or bland. Use a little and taste to see if you want to add more or use none if not needed.

4 ounces chorizo, cut into brunoise
2 ounces olive oil
6 ounces Spanish onion, cut into brunoise
4 cloves garlic, minced
10 chicken bone-in thighs, quartered
8 ounces tomatoes, peeled, seeded, and cut
1/2 teaspoon Spanish paprika
1 3/4 pounds long-grained rice, soaked in cool water for 30 minutes, then drained
1 1/2 quarts chicken stock, heated to a boil
Salt and ground pepper
1/2 teaspoon saffron, soaked in 1 cup stock for 20 minutes
3 (4-ounce) shell-on lobster tails, quartered
10 snails, cleaned
5 ounces squid, cleaned and sliced into thin rings
10 small clams, scrubbed, opened, and upper shell removed
5 ounces fresh pea pods, washed and trimmed

Steps:

  • Preheat oven to 200 degrees F.
  • In a large braising pan, render chorizo in oil over low heat, creating a flavored oil. Once rendered, heat the flavored oil to almost smoking and saute onions and garlic until translucent.
  • Add chicken pieces to pan and cook until brown on all sides. Remove chicken from pan and hold at 200 degrees, in the oven.
  • Add tomatoes to pan with paprika and saute for 2 to 3 minutes. Add drained rice and saute for 3 minutes, stirring frequently.
  • Return chicken pieces to pan and add boiling stock. Season, to taste, and add saffron stock.
  • Cover and simmer for 10 minutes. Remove the cover and place all seafood on top. Replace cover and continue to simmer until chicken and seafood are tender and liquid is absorbed by the rice.
  • Add pea pods to the pan and cook, covered for an additional 2 minutes.
  • Serve immediately. Plate onto preheated dinner plates being sure each portion has rice, chicken, lobster, snails, squid, and clams.

1 small onion, diced
1 tablespoon minced garlic
1 pound smoked sausage, cut into bite-sized pieces
1 ½ cups uncooked white rice
2 cups water
¾ (8 ounce) can tomato sauce, or to taste
1 teaspoon adobo seasoning
salt and ground black pepper to taste

Steps:

  • Heat the vegetable oil in a skillet over medium heat. Stir in the onion and garlic; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the sausage; cook and stir until the sausage is crisp. Mix in the rice, water, tomato sauce, adobo seasoning, salt, and black pepper. Bring to a boil, then reduce heat to low. 1 pound Italian sausage
1 tablespoon canola oil
1 medium onion, chopped
1 cup uncooked brown rice
1 medium sweet red pepper, thinly sliced
2 medium carrots, diced
3 teaspoons beef bouillon granules
3 cups boiling water
1 cup frozen peas, thawed
2 cans (4 ounces each) mushroom stems and pieces, drained
3 medium tomatoes, peeled and diced
1/2 cup sliced pimiento-stuffed olives
3 hard-boiled large eggs, sliced
1/4 cup grated Parmesan cheese

Steps:

  • In a large skillet, cook sausage in oil until a thermometer reads 160°; drain. Cut into 1/2-inch slices. Return to pan; add onion and rice. Cook until rice is lightly browned. Stir in the red pepper, carrots, bouillon and water. Bring to a boil. , Cover and simmer for 30 minutes or until the liquid is almost absorbed, stirring occasionally. Add the peas, mushrooms and tomatoes. Cook 5 minutes longer or until heated through. , Remove half the mixture to a serving bowl. Top with half of the olives, eggs and cheese. Repeat layers.

1 lb mild bulk sausage (Jimmy Dean is best)
1 cup uncooked rice
1 medium onion, finely chopped
2 cups chicken stock or 2 cups broth
1 (14 1/2 ounce) can diced tomatoes, undrained
3 teaspoons chili powder
1/2 teaspoon garlic powder
1/2 teaspoon pepper

Steps:

  • Cook sausage in a large skillet over medium-high heat, stirring to crumble, until browned.
  • Drain sausage on paper towels, reserving drippings in skillet. (Use a big slotted spoon to remove sausage from the skillet.).
  • Combine rice and onion in reserved drippings, stirring to brown lightly over medium-high heat.
  • Add chicken stock, tomatoes, chili powder, garlic powder and pepper. Add sausage. Stir to combine.
  • Spoon into a greased 2 quart casserole.
  • Bake (covered) at 350 for 1 hour.

1 pound bacon
1 cup chopped onion
1 cup chopped green bell pepper
1 (16 ounce) can whole peeled tomatoes, halved
1 (15 ounce) can tomato sauce
1 tablespoon ground black pepper
salt to taste
4 cups cooked white rice
4 cups shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Partially drain fat from the skillet.
  • Heat remaining bacon fat in the skillet over medium heat. Cook onion and bell pepper in the fat until tender, about 5 minutes. Add tomatoes, tomato sauce, pepper, and salt; continue to cook over medium heat, stirring occasionally, for 10 minutes. Add cooked rice to sauce mixture. Transfer rice and sauce mixture to a large mixing bowl.

½ cup dry bread crumbs

1 yellow onion, sliced
1 (23 ounce) jar tomato puree (passata)

¼ cup chopped fresh basil
1 tablespoon dried oregano
1 tablespoon dried thyme
1 clove garlic, minced

Steps:
