Homemade Crispy Seasoned French Fries image

My family loves French fries and with 4 children the bag fries from the store just weren't enough and became too expensive. So I tried batter - after all it makes chicken, shrimp, and onion rings crispy so why not potatoes. Now even my husband can't get enough of these French fries. They even stay crispy when you reheat in the microwave.

2 ½ pounds russet potatoes, peeled
1 cup all-purpose flour
1 teaspoon garlic salt
1 teaspoon onion salt
1 teaspoon salt
1 teaspoon paprika
½ cup water, or as needed
1 cup vegetable oil for frying

Steps:

  • Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil.
  • Heat oil in a large skillet over medium-high heat. While the oil is heating, sift the flour, garlic salt, onion salt, (regular) salt, and paprika into a large bowl. Gradually stir in enough water so that the mixture can be drizzled from a spoon.
  • Dip potato slices into the batter one at a time, and place in the hot oil so they are not touching at first. The fries must be placed into the skillet one at a time, or they will clump together. Fry until golden brown and crispy. Remove and drain on paper towels.

2 medium zucchini, cut into 3x1/2-inch sticks
1 large egg, beaten
½ cup almond flour
½ cup grated Parmesan cheese
1 teaspoon Italian seasoning
salt and freshly ground black pepper to taste
olive oil cooking spray

Steps:

  • Preheat air fryer to 400 degrees F (200 degrees C).
  • Add egg to a shallow bowl. Combine almond flour, Parmesan cheese, Italian seasoning, salt, and pepper in a second bowl; mix to combine.
  • Dredge zucchini first in egg, then in almond flour mixture, and lay out on a baking sheet. Spray zucchini generously with olive oil cooking spray. Spread out zucchini in a single layer in the air fryer basket. You might need to work in batches.
  • Cook until crispy, about 10 minutes.

I just started making these, and thought I'd share since I didn't see anything exactly like it. Great for a individual snack!

1 small baking potato
cooking spray
1 -2 teaspoon mixed Italian herbs
salt

Steps:

  • Preheat oven to 450 degrees.
  • Cover an 8"x8" pan with tin foil and spray with cooking oil and sprinkle on salt.
  • Cut potato to desired wedge sizes.
  • Place potato pieces into quart size bag and spray in some cooking oil and add the herbs.
  • Shake until the pieces are coated evenly.
  • Pour into the 8"x8" pan and add some more salt on top (I like mine really saltly).
  • Place in oven and bake for 15-20 minutes for softer fries and 25-30 minutes for crispier fries.
  • Enjoy with sauce of your choice!

A twist on a recipe created by Lucinda's Italian relatives, these oven-baked fries are tossed in olive oil, grated cheese, and a medley of dried herbs. 6 or 7 Idaho potatoes, peeled and sliced into 1/3-inch-thick French fry-style strips, soaked in cold water
4 tablespoons (1/4 cup) extra-virgin olive oil
1 tablespoon dried Italian herbs or some combo of dried oregano, thyme, marjoram, and basil
2 cups freshly grated Romano cheese
1/4 cup parsley leaves, finely chopped
4 tablespoons (1/2 stick) salted butter, cut into 6 cubes
Coarse salt and freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees.
  • Drain the potatoes and pat dry with paper towels. Spread 1 tablespoon of the olive oil on each of 2 rimmed baking sheets and spread out the potatoes. Overlapping is fine.
  • Sprinkle the dried herbs evenly over the potatoes. Liberally spread the cheese and parsley on top. Drizzle the remaining 2 tablespoons of olive oil over the cheese. Scatter the cubed butter around the pans.
  • Bake until the potatoes are golden brown, rotating the pans after 30 minutes, for 45 to 50 minutes total. Use a spatula to lift off the potatoes with all the crusty cheese adhered to them. Sprinkle with salt and pepper to taste. Serve hot.
