ITALIAN SAUSAGE, PEPPERS AND ONIONS
Italian sausage, peppers and onion is a beloved, classic Italian meal that's easy to make and tastes so, so satisfying. This is a sheet pan dinner that feeds a crowd, but is easily halved. If you want to serve these as sandwiches, eliminate the potatoes and double the tomatoes.

- Preheat the oven to 425°F and grease two half-sheet pans. In a large bowl, combine all the ingredients (except the rolls, of course!) and mix well.
- Divide onto two half-sheet pans. Bake, uncovered, for about 1 hour, stirring every 30 minutes or so, or until everything is nicely browned, and the potatoes are fork tender. Depending how packed the sheet pans are, the time needed might be longer.PRO TIP: If the vegetables start to brown too much before the potatoes are soft and fully cooked, tent the sheet pans with foil.
- Taste for seasoning. Serve hot, plain, or on sub rolls.
GRILLED ITALIAN SAUSAGE WITH PEPPERS AND ONIONS
Italian sausage, bell peppers, and onions made easy on the grill. You can also serve the sausage in hot dog buns and finely chop the veggies once grilled as a "relish". I like to add a squirt of mustard when I serve them this way.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Combine bell peppers and onions in a large bowl. Add olive oil, Italian seasoning, salt, and pepper. Stir to combine. Using a toothpick, poke 4 holes into each sausage to prevent them from exploding on the grill.
- Place vegetables in a grill basket and cook for 2 minutes. Add sausage directly to the grate and grill for 4 minutes. Flip sausage over, stir vegetables, and grill for 4 minutes more.

Steps:
- 1. Simmer italian sausage in water till done. Then brown outside of sausage in skillet. Meanwhile cook veggies in a couple TBL of olive oil till tender, season with salt & pepper to taste if desired.
- 2. Place two slices of provolone on each sub bun. Cut each sausage link in half longwise and place both slices on bun, then top with veggies, and add grated mozzrella cheese. Pop in broiler for a couple of min. to melt cheese.
ITALIAN SAUSAGES WITH PEPPERS AND ONIONS
Steps:
- Place sausage in hot cast iron skillet and brown on all sides. Add water, cover and let steam for 5 to 8 minutes or until sausages are no longer pink in the middle. Remove to plate. Drain off any remaining water from skillet. Add olive oil to same skillet along with peppers and onions. Cook over medium heat until soft, about 20 minutes. Place sausage in a roll with peppers and onions. Serve.

- Heat the oil in a heavy large skillet over medium heat. Add the sausages and cook until brown on both sides, about 7 to 10 minutes. Remove from the pan and drain.
- Keeping the pan over medium heat, add the peppers, onions, salt, and pepper and cook until golden brown, about 5 minutes. Add the oregano, basil, and garlic and cook 2 more minutes.
- Add the tomato paste and stir. Add the Marsala wine, tomatoes, and chili flakes, if using. Stir to combine, scraping the bottom of the pan with a wooden spoon to release all the browned bits. Bring to a simmer.
- Cut the sausages into 4 to 6 pieces each, about 1-inch cubes. Add the sausage back to the pan and stir to combine. Cook until the sauce has thickened, about 20 minutes.
- Serve in bowls. Or, if serving as a sandwich, split the rolls in half lengthwise. Hollow out the bread from the bottom side of each roll, being careful not to puncture the crust. Fill the bottom half of the roll with sausage mixture. Top and serve sandwiches immediately.

- Seed wax peppers if desired; cut wax and bell peppers into 2-in. pieces. In a large skillet, saute peppers and onions in oil until tender. Stir in the tomatoes, tomato paste, water, garlic, bay leaves and seasonings; heat through., Meanwhile, in another large skillet, brown sausages. Transfer to an ungreased 13-in. x 9-in. baking dish.
