- Bring a large pot of lightly salted water to a boil. Cook penne at a boil, stirring occasionally, until tender yet firm to the bite, about 11 minutes; drain and transfer pasta to a bowl.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes; add to pasta.
- Whisk pesto sauce mix, milk, and olive oil together in a small saucepan; bring to a boil while stirring constantly. Reduce heat to low and keep at a simmer until thickened, about 3 minutes; pour over pasta and sausage mixture and toss to coat.

PESTO PASTA WITH ITALIAN SAUSAGE
Incredibly easy Pesto Pasta made with Italian sausage and a yummy breadcrumb and parmesan topping.

Steps:
- Bring a large pot of salted water to a boil. Once the water is boiling, cook the pasta just to al dente. Reserve 1.5 cups of pasta water and then drain the pasta and set it aside.
- While heating the water in step 1, heat a large oven-safe skillet over medium heat. Add the Italian sausage and break it into bite-sized pieces as it cooks. Continue stirring and cooking until the sausage is browned-- about 5 minutes.
- Add the shallot and garlic and cook for an additional 1-2 minutes, stirring often.
- Deglaze the pan by adding the pasta water and scraping the bottom to remove any browned bits.
- Next stir in the pesto and ¼ cup mozzarella. Add the pasta and toss to combine. Cook until the sauce has thickened and coated the pasta-- about 2 minutes.
- Top the pasta with the remaining ¼ cup grated mozzarella.
- In a small bowl, stir together the breadcrumbs, garlic powder, and Italian seasoning. Spread the breadcrumb mixture over the pasta and then top with the grated parmesan.
- Place the pan under the broiler for 2-3 minutes or until the breadcrumbs are crisp and golden brown.
- Serve immediately, topped with fresh basil.
- Store any leftovers in an airtight container in the fridge for up to three days.

- Arugula Pesto Grate your cheese. Pop all ingredients in a food processor or blender and while it's running drizzle in about 1/2 cup good olive oil. This will be used to garnish your Chorizo pieces. Season to taste with S&P. If too thick you can thin out with a bit of water. Italian Sausage Cut sausage in large 1 1/2 inch (3.8 cm) chunks. Pan fry till starting to brown on the edges (about 3 - 4 min), tossing to allow them to cook all over. Add a dash of sherry vinegar to the pan Plate up with a dollop of arugula pesto. Add little cocktail sticks or toothpicks to each piece for easy eating.
POTATO, ITALIAN SAUSAGE, AND ARUGULA SALAD

- Soak onion in cold water to cover 15 minutes. Drain and pat dry.
- Meanwhile, cover potatoes with salted cold water by 2 inches in a 3-quart heavy saucepan and simmer, uncovered, until just tender, 15 to 25 minutes. Drain in a colander and cool slightly.
- While potatoes are simmering, prick sausages once or twice with a fork, then cook in 1 tablespoon oil in a large heavy skillet over moderate heat, turning occasionally, until browned and cooked through, about 10 minutes. Transfer to paper towels to drain. When sausages are cool enough to handle, cut diagonally into 1/2-inch pieces.
- Whisk together vinegar and salt in a large bowl until salt is dissolved. When potatoes are just cool enough to handle (but still warm), peel and cut into 1-inch cubes, adding to vinegar as cut, and toss gently.
- Add onion, sausages, roasted peppers, arugula, remaining 3 tablespoons oil, and salt and pepper to taste to potatoes and toss well.
GRILLED SAUSAGE WITH ARUGULA PESTO
Save extra pesto to use on other grilled meats or fish. It will last up to 1 week in the refrigerator.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch casserole dish with cooking spray.
- Bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally, for about 9 minutes (pasta will not be fully cooked.) Drain, reserving 1/2 cup cooking water. Set aside.
- While pasta is cooking, place sausage in a large skillet over medium-high heat; cook and stir until browned and crumbly, 5 to 7 minutes. Remove sausage to a paper towel-lined plate and leave grease in the pan.
- Add oil to the skillet and saute for 5 minutes. Add garlic and cook for 1 minutes. Add kale, nutmeg, pepper flakes, salt, and pepper. Deglaze the pan with white wine and cook until kale is soft, 5 to 10 more minutes.
- Return sausage back to the pan. Add ricotta, pesto, and 6 ounces mozzarella cheese. Add reserved pasta and cooking water. Taste and season with salt and pepper if needed. Pour into the prepared casserole dish and sprinkle remaining mozzarella over top. Cover with foil.
- Bake in the preheated oven for 30 minutes. Remove foil and bake for 10 more minutes. Let cool 10 minutes before serving.

ARUGULA PESTO
To most people, pesto means one thing: pesto Genovese, the famous and fabulous basil paste from the Italian Riviera. But there are sauces made with copious amounts of other herbs or greens not destined for pasta. They aren't called pestos, yet that's what they are - all made by grinding herbs and other ingredients to a paste, then thinning out and enriching with oil. This dish is inspired by one found in southern Italy. This sauce, like other forms of pesto, is all pungent with garlic. In addition to serving this vibrant pesto with pasta, it can be used with grains - risottos made with rice, barley, or wheat - and as a topping for tomatoes. It's great on its own, spooned onto a thick slice of country bread. Don't use a sharp olive oil with this, or it will overwhelm the arugula.

- Turn on a food processor fitted with the steel blade, and drop in the garlic cloves. When they are chopped and adhering to the sides, stop the machine, scrape down the sides of the bowl and add the walnuts. Turn on the machine, and process until they are finely ground. Scrape down the bowl again, and add the arugula and the salt. Pulse until the arugula is finely chopped, then turn on the machine and run while you slowly drizzle in the olive oil. When the mixture is smooth, stop the machine, scrape down the sides and process for another 30 seconds or so. Scrape out into the bowl of a mortar and pestle. Grind the mixture with the pestle for a smoother texture. Work in the cheese and combine well.
