I made this once for my Boyfriend, on our first home dinner date. I was worried because he is 1/2 Italian & jokes with me "if you can't say it, you shouldn't say it" lol. But I could say this one easy & he liked it... Note: I wanted to share a pic of it, so I found a pic that kind of looks like it....

1/3 c biscuit mix
1 egg white
1 Tbsp water
1/8 tsp garlic powder
1/4 c green or yellow bell pepper, diced
1/4 c onion, chopped
1/2 c chicken breast, cooked
1/2 c tomatoes, canned italian-style and diced
1/4 tsp italian seasoning
1/4 c mozzarella cheese

Steps:

  • 1. Heat oven to 400F. Spray 8x4-inch loaf pan with cooking spray.In a small bowl stir biscuit mix,egg,water & garlic powder. Then spread in pan.
  • 2. In 10 inch nonstick frying pan,cook bell pepper & onion over medium-high heat until tender. Stir in already cooked chicken,tomatoes & seasoning. Cook until hot. Spoon over batter. Then sprinkle with the cheese.
  • 3. bake for 20 to 23 mins or until golden brown, cheese has melted & Loosen from sides of the pan.

2 pounds ground beef
1 large onion, chopped
2 garlic cloves, minced
1 jar (24 ounces) spaghetti sauce
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (4 ounces) mushroom stems and pieces, drained
1 teaspoon Italian seasoning
3 cups uncooked medium pasta shells
3 plum tomatoes, sliced
3/4 cup shredded provolone cheese
3/4 cup shredded part-skim mozzarella cheese

Steps:

  • In a large skillet, cook beef and onion over medium heat until no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in spaghetti sauce, diced tomatoes, mushrooms and Italian seasoning. Bring to a boil. Reduce heat; simmer, uncovered, 20 minutes., Meanwhile, preheat oven to 350°. Cook pasta according to package directions; drain. Add to beef mixture and gently stir in sliced plum tomatoes. , Transfer to an ungreased 13x9-in. baking dish. Sprinkle with cheeses. Bake 25-30 minutes or until bubbly and heated through.

2 zucchini, cut lengthwise in half
1/4 cup shredded Parmesan cheese (1 oz)
1 tablespoon olive oil
Freshly ground pepper to taste
2 tablespoons chopped fresh basil leaves

Steps:

  • Heat oven to 400°F. Line cookie sheet with cooking parchment paper.
  • Place zucchini halves, skin side down, on cookie sheet. Sprinkle each with 1 tablespoon cheese. Drizzle with oil; sprinkle with pepper.
  • Bake 15 to 20 minutes or until zucchini is tender and cheese is light golden brown. Cool slightly. Garnish with basil.
