This healthier version of chicken Parmesan comes from Margie Pharr of Belmont, Mississippi. The savory seasonings make the chicken and sauce a perfect pair, and you won't even miss the extra fat and calories.

1/4 cup seasoned bread crumbs
2 tablespoons grated Parmesan cheese
1/2 teaspoon minced fresh basil
1 egg white
2 boneless skinless chicken breast halves (6 ounces each)
2 teaspoons cornstarch
3/4 teaspoon Italian seasoning
1/2 teaspoon sugar
1/4 teaspoon garlic powder
1/8 teaspoon Worcestershire sauce
Dash pepper
1 can (14-1/2 ounces) diced tomatoes, undrained
Hot cooked pasta, optional

Steps:

  • In a shallow bowl, combine the bread crumbs, Parmesan cheese and basil. In another shallow bowl, beat egg white until foamy. Dip chicken into beaten egg white, then roll in crumb mixture; place in a 1-qt. baking dish coated with cooking spray. Bake, uncovered, at 350° for 30-35 minutes or until chicken juices run clear., Meanwhile, in a small saucepan, combine the cornstarch, Italian seasoning, sugar, garlic powder, Worcestershire sauce, pepper and tomatoes until blended. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Serve chicken and sauce with pasta if desired.

This is one of my favorite recipes; adapted from Giada DeLaurentis. You can use dried herbs if you must; use about 1/3 of the fresh amounts listed.

2 tablespoons olive oil
2 teaspoons fresh thyme (chopped)
2 teaspoons fresh rosemary (chopped)
2 teaspoons fresh flat leaf parsley (chopped)
1 1/2 lbs chicken breasts
2 teaspoons salt
1 teaspoon pepper
1 1/2 cups spaghetti sauce
1/2 cup mozzarella cheese (shredded)
4 tablespoons parmesan cheese (grated)
2 tablespoons unsalted butter, cut into pieces

Steps:

  • Preheat the oven to 500 degrees.
  • Pound the chicken breasts to about 1/4 thickness.
  • In a small bowl, stir the oil and herbs to blend.
  • Brush both sides of the chicken with the blended oil and sprinkle with salt and pepper.
  • Heat oven-proof pan over high heat. Add the chicken and cook until just brown, about 2 minutes per side. Chicken should be nearly cooked through.
  • Remove from the heat.
  • Spoon the spaghetti sauce over the chicken, top with mozzarella and sprinkle with parmesan.
  • Dot the tops with butter pieces, and bake until the cheese melts and the chicken is cooked through; about 5 minutes.

1 pkg. (6 oz.) FRESH TAKE Italian Parmesan Recipe Cheese Breadcrumb Mix, mixed together
1/4 cup KRAFT Zesty Italian Dressing
1 red pepper, cut into thin strips
1 pkg. (6 oz.) baby spinach leaves
1 can (15 oz.) cannellini beans, rinsed

Steps:

  • Heat oven to 375ºF. Coat chicken with cheese mixture and bake as directed on package. Heat dressing in large skillet on medium-high heat. Add peppers; cook and stir 3 to 4 min. or until crisp-tender. Add spinach and beans; cook 3 min. or just until spinach is wilted, stirring constantly. Serve chicken over the spinach salad.

7 chicken drumsticks
1 cup Italian breadcrumbs
1/2 cup parmesan cheese
1 teaspoon italian seasoning
1 teaspoon ground rosemary
1 egg
3 tablespoons milk

Steps:

  • Skin chicken if desired.
  • Combine dry ingredients in one pie plate and milk and beaten egg in another.
  • Wet drumsticks completely in milk and egg.
  • Coat them thoroughly with the breadcrumb mixture, turning so that the crumbs cover the leg.
  • Place legs in a lightly greased 9x13, making sure that the legs do not touch.
  • Place in an oven preheated to 375* and bake 45-55 min or until juices run clear and chicken reaches an internal temp of 180*.

2 lb plum tomatoes, chopped
½ cup chopped pitted kalamata olives
¼ cup finely chopped onion
1 Tbsp capers
¼ cup olive oil, divided
2 Tbsp red wine vinegar
¾ tsp pepper, divided
1 clove garlic, minced
3 (8-oz) boneless, skinless chicken breasts
½ tsp salt
1¼ cups fat-free, reduced-sodium chicken broth
½ tsp salt
1½ cups uncooked polenta
½ cup freshly grated Parmesan cheese

Steps:

  •  Preheat grill to medium-high heat. Combine tomatoes, olives, onion, capers, 3 Tbsp oil, vinegar, ¼ tsp pepper and garlic in a large bowl. Brush chicken with remaining 1 Tbsp oil, and sprinkle with salt and ½ tsp pepper. Grill chicken, covered with grill lid, 5 minutes per side or until done. Cut chicken into 6 servingsize pieces, and top evenly with tomato mixture. Note: Cook chicken in a grill pan coated with cooking spray, if desired. ---------------------------------------------------------------------------------     Bring 3¼ cups water, broth and salt to a boil in a large saucepan. Whisk in polenta; return to a boil. Reduce heat, and simmer until liquid is absorbed, stirring occasionally (about 5 minutes). Remove from heat, and stir in cheese. Divide into 6 servings.

1 small red onion, chopped
1 can (2-1/4 oz.) sliced black olives, drained
1/2 cup KRAFT Grated Parmesan Cheese

Steps:

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, sprinkle chicken with dry dressing mix; toss to coat. Heat 1 Tbsp. oil in large skillet on medium heat. Add chicken; cook and stir 4 min. or until done.

1 tablespoon all-purpose flour
2 tablespoons grated Parmesan cheese
2 teaspoons Italian seasoning
1/3 cup reduced-calorie Italian salad dressing
4 boneless skinless chicken breast halves, (about 1 lb.)

Steps:

  • 1. In a food processor or electric blender container, combine KELLOGG'S SPECIAL K cereal, flour, Parmesan cheese, and Italian seasoning until cereal is in fine crumbs. Place mixture in shallow pan. Set aside.2. Pour salad dressing into another shallow pan. Dip chicken in salad dressing. Coat with cereal mixture. Place in single layer in shallow baking pan coated with cooking spray.3. Bake at 350°F about 30 minutes or until tender.
