1-1/2 pounds fresh green beans, trimmed
1/2 cup thinly sliced roasted sweet red peppers
1/2 cup fresh basil leaves, thinly sliced
3 tablespoons pine nuts, toasted
2 tablespoons plus 1-1/2 teaspoons olive oil
1 tablespoon lemon juice
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1/8 teaspoon salt

Steps:

  • Fill a 6-qt. stockpot two-thirds full with water; bring to a boil. Add beans; cook, uncovered, 8-10 minutes or until crisp-tender. Remove beans and immediately drop into ice water. Drain and pat dry., Combine beans, peppers, basil and pine nuts. In a small bowl, whisk oil, lemon juice and seasonings until blended. Drizzle over bean mixture; toss to coat.,

This colorful salad is great to take to a pot luck or for a buffet.Serve it at room temperature or slightly chilled. Pine nuts add a nice crunch! From a November 1985 issue of Bon Appetit in a "Delicious Do-Ahead Dinner " feature.

2 lbs green beans, trimmed
3 tablespoons balsamic vinegar
1 tablespoon stone ground mustard
1 teaspoon salt
9 tablespoons olive oil
1 large red onion, peeled, quartered and thinly sliced
1 cup pine nuts, toasted
salt & freshly ground black pepper
1 large head radicchio
1 large head bibb lettuce

Steps:

  • Cook beans in 2 quarts boiling, salted water until crisp-tender, about 7 minutes.
  • Drain and rinse well under cold water; drain again and pat dry.
  • Combine vinegar,mustard and salt in medium bowl.
  • Slowly whisk in oil in thin stream.
  • Combine beans, onion and 1/2 cup pine nuts in large bowl; mix in vinaigrette.
  • Season to taste with salt and pepper and let marinate 15 to 30 minutes.
  • Alternate radicchio and Bibb lettuce leaves over large platter.
  • Mound bean mixture in center, sprinkle with reserved pine nuts and serve.

Number Of Ingredients 12

1 lb. fresh green beans
2 large ripe tomatoes, cut in wedges
1 med. red onion, halved and thinly sliced, rings seperated
1/3 c. freshly grated parmesan cheese
3/4 c. kalmata (or black)olives, pitted
VINAIGRETTE DRESSING:
1/3 c. olive oil
1/3 c. red wine vinegar
1 clove garlic, minced
1 tsp. salt
1/2 tsp. dark coarse grain mustard
black pepper to taste

Steps:

  • Wash and remove the ends from beans. Heat a pot of salt water to boiling. Place beans in boiling water and cook uncovered for 5 minutes. Cover and cook for no longer than 10 minutes more, until crisp-tender. Drain and rinse under cold water just to stop the cooking. Beans should remain slightly warm to absorb the dressing. Place the beans in a large bowl with the olives, onions, and tomato wedges. While the beans are cooking, prepare the vinaigrette. Place all of the ingredients in a blender, and process until oil and vinegar are incorporated. Pour the vinaigrette over the vegetables in the bowl, and toss to coat. Refrigerate for at least 2 hours. Just prior to serving, sprinkle with parmesan cheese and toss.

1# fresh green beans (ends removed and cooked til tender in salted water)
1 tsp. salt (for dressing)
l clove garlic thinly sliced
3 TBSP. red wine vinegar
4 TBSP. olive oil
black pepper to taste

Steps:

  • Cook beans in salted water until tender. Drain. Mix vinegar and salt. Add olive oil, pepper, & garlic slices. Stir to coat beans. Serve warm or refrigerate and serve cold.
