This is a quick dinner that is ready in under 30 minutes. To save a little bit on the fat/calories I use a split ratio of cream and milk. This is not a requirement. Serve with your choice of sides. I like spaghetti noodles, or zucchini zoodles.

¼ cup tapioca flour
2 tablespoons all purpose flour
2 teaspoons garlic salt
1 teaspoon Italian herbs
1 ½ pounds boneless skinless chicken thighs
2 tablespoons olive oil
2 tablespoons butter
2 cloves garlic, minced
1 (8 ounce) can tomato sauce
¼ cup heavy cream
¼ cup milk
1 teaspoon red pepper flakes
1 (16 ounce) bag fresh spinach
2 ounces shaved Pecorino Romano cheese

Steps:

  • Combine tapioca flour, all purpose flour, garlic salt, and Italian herbs in a small bowl. Dredge chicken thighs through the mixture and shake off excess flour.
  • Heat olive oil and butter in a large skillet over medium heat. Add chicken thighs and cook until golden brown, about 5 minutes on each side. Remove chicken from skillet.
  • Wipe out skillet, leaving just a little bit of the fond. Add minced garlic and cook until fragrant, about 1 minute. Pour in tomato sauce, cream, and milk; stir to combine. Season with red pepper flakes and mix in spinach. Allow spinach to wilt, about 3 minutes. Return chicken thighs to the skillet and heat until warmed through. Serve topped with freshly shaved Pecorino Romano cheese.

1 large yellow onion
1/4 cup olive oil
2 tablespoons Worcestershire sauce

Steps:

  • Take the chicken livers you are preparing and dredge them in sifted salt, pepper, and flour. Shake off excess. Slice yellow onion in rings and add livers and onion slices to cast iron skillet. Fry until nicely browned and crisp. Then add Worcestershire sauce.
  • This was the "secret" ingredient that set them apart from ordinary fried chicken livers. Fry them in olive oil, and be sure the oil and skillet are VERY hot before adding the livers and onions.

1 lb boneless skinless chicken cutlet (4 breasts)
1 cup flour (1 bowl, about 1 cup)
1 1/2 tablespoons butter
1 teaspoon parsley
1/2 teaspoon garlic powder
2 tablespoons sauterne (white, dry)
1 teaspoon lemon juice
4 large russet potatoes
1/3 cup olive oil
fresh thyme
fresh rosemary
oregano
basil
black pepper
sea salt

Steps:

  • Wash chicken cutlets and pat dry with paper towels.
  • Pour flour into bowl (around 1 cup) and season with oregano, basil, and a bit of black pepper. Mix together.
  • Dredge chicken cutlets in flour until all surfaces are completely covered, then shake off excess.
  • Coat frying pan with olive oil and cook chicken cutlets over medium heat until both sides are golden brown.
  • When chicken is almost ready, place 1-1/2 tablespoons of butter with 1 teaspoon of parsley in tea cup or small glass bowl in the microwave for about 90 seconds.
  • Add 1/2 teaspoon of garlic powder, 1 teaspoon a lemon juice, 2 tablespoons of sauterne, and a bit of sea salt to butter and stir together.
  • When chicken is golden brown, add butter mixture over the cutlets as evenly as possible.
  • When most of butter mixture is absorbed into chicken or dissapates, place the cutlets onto a baking sheet (covered with cooking spray) and place them in oven at 400 degrees for about 10-15 minutes.
  • Clean 4 large russet potatoes.
  • Slice potatoes into 16 slices each.
  • Place potatoes slices into large bowl and coat with the olive oil.
  • Add fresh thyme, rosemary, oregano, basil, black pepper, and sea salt to you desired degree.
  • Mix the contents of the bowl together so the seasonings are coated onto the potatoes with the olive oil.
  • Place mixture on baking sheet and cook for around 30-40 minutes at 400 or until potatoes start to brown and get slightly crispy. Test with fork to make sure the potatoes have softened inside.

CHICKEN
4-6 boneless, skinless, chicken breasts
1 bottle of your favorite italian dressing, or your own homemade!
salt and pepper to taste
fresh herbs to taste
2 clove garlic, minced
2 Tbsp extra virgin olive oil
POTATOES
6-8 medium potatoes, skins on, washed, and cut in 1 inch wedges
1/2 stick butter, (or 1/4 cup olive oil)
1/2- 3/4 c of your favorite italian dressing, or your own homemade
1 medium yellow onion, diced
1 clove garlic minced
parmesan cheese, optional

Steps:

  • 1. Note: If you are looking for a good homemade Italian recipe, check out my Colorful Party Pasta Salad Recipe. I include a homemade Italian Dressing within that recipe & it's delicious! Any Italian dressing will do, use your favorite! Try different varieties!
  • 2. Remove any excess fat from chicken & rinse chicken in cold water, pat dry. Place in a large glass bowl, pour dressing over chicken just until thoroughly covered. Turn chicken to be sure to get both sides. Cover & allow to marinade for at least 30 minutes.
  • 3. In the meantime, prepare potatoes. Clean potatoes, & cut in one inch wedges, leaving skin intact. (Need those awesome vitamins!!) Add olive oil to large skillet & heat over medium high heat. Add potatoes. Cook for 15 minutes, turning frequently to brown on all sides.
  • 4. When potatoes are halfway done, add Italian dressing, minced garlic, onions, & your fresh herbs. Add salt & pepper to taste. Continue to cook over medium heat, turning frequently. I cover during this process to help the potatoes cook all the way through. Continue to cook until potatoes are cooked all the way through.
  • 5. While the potatoes are cooking, heat EVOO on medium heat in another large skillet. Add chicken, marinade, & minced garlic. Season with salt & pepper to taste. Cook 5-7 minutes each side depending on thickness of breast. Add fresh herbs the last couple minutes. I used fresh rosemary in this dish.
  • 6. Top with optional parmesan cheese just before serving! This dish goes very well with candied carrots as a side dish. Mmm good!! This is one meal I never have left over of! Sometimes I wish I did just so I wouldn't have to cook!

2 cups all-purpose flour
2 cloves garlic, grated
Kosher salt and freshly ground pepper
3/4 cup milk
1/2 teaspoon paprika
1/4 teaspoon dried oregano
4 skin-on, bone-in chicken breasts (3 pounds), halved crosswise
1 bulb fennel, cored and thinly sliced, plus 1 tablespoon chopped fronds
1 romaine heart, thinly sliced
1 cup roughly chopped fresh parsley
1 cup extra-virgin olive oil
Juice of 1 lemon
1 1/2 cups peanut oil, for frying

Steps:

  • Combine the flour, half of the garlic, 1 teaspoon salt and a few grinds of pepper in a large bowl; set aside. Combine the milk, paprika, oregano, the remaining garlic, 1 teaspoon salt and a few grinds of pepper in another large bowl. Add the chicken, turning to coat; set aside 15 minutes.
  • Toss the fennel and fronds, romaine, parsley, 2 tablespoons olive oil, the lemon juice, and salt and pepper to taste in a bowl.
  • Heat the remaining 3/4 cup plus 2 tablespoons olive oil and the peanut oil in a large cast-iron skillet over high heat until a deep-fry thermometer registers 350 degrees F. Dredge the chicken in the flour mixture; add to the skillet skin-side down. Fry 8 minutes. Flip; reduce the heat to medium high. Fry until golden and cooked through, 8 more minutes. 6 bone-in chicken thighs (about 2-1/4 pounds)
1/2 teaspoon pepper
1-1/2 teaspoons minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed

1/4 teaspoon minced fresh basil or 1/8 teaspoon dried basil
2 tablespoons olive oil
9 garlic cloves, minced and divided
3/4 cup red wine vinegar
1/4 cup balsamic vinegar
1 tablespoon chicken base
1/2 cup chardonnay or chicken broth
1 tablespoon heavy whipping cream
1 tablespoon cold butter

Steps:

  • Sprinkle chicken with pepper. Combine rosemary, oregano and basil; sprinkle half the herb mixture over chicken. In a large skillet over medium heat add chicken, skin side down. Brown chicken on both sides. Add 8 garlic cloves; cook 1 minute longer. Stir in vinegars and chicken base. Cook, covered, on low heat until a thermometer reads 170°-175°, 15-20 minutes., Remove chicken to a serving platter; keep warm. Add chardonnay to pan; increase heat to medium-high. Bring to a boil; cook, uncovered, until liquid is reduced by half, 8-10 minutes, stirring to loosen browned bits from pan. Strain sauce. Return to pan and add remaining garlic clove and herb mixture; heat through. Stir in cream; remove from heat. Whisk in butter until creamy. If needed, return pan briefly to very low heat to soften the butter. (Do not allow butter to melt completely or sauce may separate.) Serve with chicken. If desired, garnish with additional basil and rosemary.

1 tablespoon coconut oil, or light flavored olive oil
4 chicken thighs
Kosher salt, to taste
Freshly ground black pepper, to taste
Granulated garlic or garlic powder, to taste
Dried oregano, to taste
Dried basil, to taste

Steps:

  • Pour the oil into a large stainless or cast-iron or nonstick skillet over medium heat. Generously sprinkle the skin side of the chicken thighs with spices and then place in the skillet at medium heat, skin side down. Sprinkle the other side of the thighs and then, without moving them, cook uncovered for about 20-25 minutes. Reduce heat, if needed, to prevent burning. A spatter screen on the skillet helps cut down the mess. Let chicken cook until the fat has rendered and the skin is deep golden brown and crisp. This could take as long as 30 minutes. If the skin is sticking to the pan, it likely isn't finished on that side. Turn the thighs over and continue to cook about 20 more minutes. 1/2 cup milk
1 cup cornmeal
2 tablespoons Italian seasoning
1/4 cup Parmesan
2 each chicken legs, thighs, and wings leftover from Chicken Scaloppine, recipe follows
Kosher salt and freshly ground black pepper
2 cups canola oil, for frying
1 (4 to 5-pound) whole chicken, cut into parts
1 teaspoon poultry seasoning
Kosher salt and freshly ground black pepper
1/2 cup all-purpose flour
2 tablespoons canola oil
2 tablespoons unsalted butter
1 (14.5-ounce) can chicken broth
2 tablespoons lemon juice
1 tablespoon chopped fresh parsley leaves
1 tablespoon chopped fresh basil leaves

Steps:

  • Preheat the oven to 350 degrees F.
  • Break the eggs into a shallow dish and add the milk. Whisk together until well combined. In another shallow dish mix together the cornmeal, Parmesan, and Italian seasoning. Season the chicken with salt and pepper, to taste. Dip the chicken pieces into the egg and milk mixture. Next, dredge the pieces into the cornmeal mixture coating them generously and put them on a large plate.
  • In a large skillet, heat the oil over medium-high heat to 360 degrees F. (Dip the end of a wooden spoon into the oil: if bubbles form, the oil is ready for frying.) Fry the chicken until golden brown, about 4 to 5 minutes per side. Remove the chicken pieces to a plate lined with a brown bag to soak up the excess oil. Transfer to a baking sheet and finish cooking them in the oven, about 20 minutes. Arrange on a serving platter and serve.
  • Reserve the legs, thighs, and wings of the chicken for the round 2 recipe Italian Fried Chicken.
  • Remove the bones and skin from the breasts and slice, in half, lengthwise. Pound the 4 pieces between sheets of plastic wrap to flatten them, about 1/4-inch thick. Sprinkle with poultry seasoning and season with salt and pepper, to taste. Coat the chicken with the flour, shaking off any excess.
  • In a large skillet over medium-high heat, add the oil and butter. Mix together and when the butter has melted add the chicken, working in batches, until they are golden brown, about 4 to 6 minutes per side. Remove the chicken, to a serving platter, cover and keep warm. Add the chicken broth to the pan and cook it over high heat until it reduces by half and thickens slightly, about 5 minutes. Stir in the lemon juice, parsley and basil. Taste, and adjust the seasoning with salt and pepper, if needed. Pour the sauce over the cooked chicken serve with the Roasted Garlic and Mushroom Risotto.

I made this on a whim. Had the stuff and a taste for something different. My daughter is home from college for the summer and my husband was home so we all sat down for a family "table" dinner. I served corn on the cob and rice with this chicken. They loved it! Even made sandwiches with the left overs.

4 large chicken breasts
1 c water
1 large egg
2 c italian bread crumbs
1/2 c olive oil, extra virgin
salt, pepper and garlic salt (may use powder or fresh garlic)

Steps:

  • 1. Wash and pat dry chicken breasts. Slice each breast into thin pieces, I cut the breasts in a diagnal slice. Start heating your olive oil in skillet.
  • 2. Mix water and egg with whisk in flat bowl for dipping. Dip each chicken slice in water-egg mixture. Then press in bread crumbs. I salt pepper and garlic salt them now. Then put in heated oil. Fry each piece for a few minutes til golden brown and turn cooking other side same. It is a continuous thing dipping, breading and frying as about one breast sliced will fill most skillets.
  • 3. Place the done fried chicken slices on a plate covered in a paper towel to absorb excess oil. Keep warm while frying up other breasts.

4 chicken breasts, boneless and skinless
1 c bread crumbs, dry
1 Tbsp italian seasoning
1 tsp salt
1/4 tsp black pepper
1/2 tsp crushed red pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1 Tbsp dried parsley
a little less than a 1/4 inch of olive oil to fry in.
FLOUR AND EGG WASH
1/2 c flour
1 large egg
1 Tbsp water

Steps:

  • 1. Place chicken in a bag and pound it, so that the thickness is even. (about 1/4 inch thick or so)
  • 2. In a shallow bowl (I like to use a pie plate) add the bread crumbs, Italian seasoning, salt, pepper, garlic & onion powder and crushed red pepper. Mix well
  • 3. Put flour in another shallow bowl or plate. Next beat egg with the water in yet another shallow dish. Line them up, flour, egg wash then bread crumb mixture.
  • 4. Add oil to skillet. Dip chicken in the flour, then egg wash and finally the bread crumbs.
  • 5. If oil is hot, place chicken in skillet and fry for about 5 minutes each side or till completely cooked through. Drain on a rack or on a paper towel.

1 teaspoon Worcestershire sauce

1 3 - 4 lb. chicken, cut into pieces
1 bottle (16 oz) kraft zesty italian salad dressing
1 tsp minced garlic
butter-flavored cooking spray
BREADING
1 c self-rising flour
1/2 c self-rising cornmeal
1 tsp black pepper
1/2 tsp garlic salt

Steps:

  • 1. In a large, plastic zip-lock bag, mix salad dressing and garlic. Add chicken, seal the bag and turn it over seeveral times to coat the chicken. Refrigerate for at least 1 hour or up to overnight, turning occasionally.
  • 2. Heat the oven to 425 F. Spray a shallow baking sheet with the cooking spray.
  • 3. In another zip-lock bag, combine the breading ingredients and shake to combine well.
  • 4. Remove chicken pieces one at a time from marinade and place it into the breading bag. Coat the chicken piece with breading and shake off the access. Place the chicken, bone-side down, on the prepared baking sheet. Continue with all of the chicken pieces.
  • 5. Bake for 35 to 40 minutes or until the juice of the chicken is clear when cut into the thickest piece.

Heat oil in a large skillet over medium-high heat. Shallow-fry the breaded steaks, in batches, for 2-3 minutes per side until golden brown and crispy. 1 cup(s) buttermilk
4 - boneless skinless chicken breasts
- salt and pepper to taste

Steps:

  • In a shallow baking dish, mix the bread crumbs and the Italian seasoning mix. Add salt and pepper if desired.
  • Pour the buttermilk into a separate shallow baking dish.
  • Dip chicken breasts in buttermilk, then toss in bread crumb mixture to coat.
  • Arrange chicken breasts on a sprayed baking sheet. Bake in a preheated 400º oven for 35-40 minutes, or until chicken is thoroughly cooked.

1 tablespoon coconut oil or light flavored olive oil
4 chicken thighs, depending on size (4 large pieces fill my skillet)
kosher salt
freshly ground black pepper
granulated garlic or garlic powder
dried oregano
dried basil
herbs de provence

Steps:

  • Pour the oil into a large stainless or cast-iron skillet over medium heat. (A non-stick skillet will work as well, although it isn't required.) Generously sprinkle the skin side of the chicken thighs with spices and then place them in the hot skillet, skin side down. Sprinkle the other side of the thighs and then, without moving them, cook uncovered* for about 20-25 minutes. Let them cook until the fat has rendered and the skin is deep golden brown and crisp; this could take as long as 30 minutes. If the skin is sticking to the pan, it likely isn't finished on that side. Reduce the heat as needed if the skin starts to burn before it is evenly golden brown. Turn the thighs over and continue to cook for about 20 more minutes. When the meat closest to the bone is cooked through, the chicken is done. Enjoy!

I decided to cook tonight and made Coconut Fried Chicken legs (skinless), with Italian Panko crumbs, with a few addtional ingredients. I also made a pot of homemade noodles and chicken.

- 12 skinless chicken legs
- 1 cup coconut oil
- 1 1/2 cups italian panko crumbs
- pinch of ground pepper
- 1/2 tsp paprika
- 1 tsp mccormick original chicken seasoning

Steps:

  • I always remove the skin from my chicken before cooking. You don't have to remove it, but it is healthier that way. I rinse the chicken legs with cold water, then lay on a plate with paper towels to absorb most of the water. I mix the Panko with the pepper, chicken seasoning, and paprika. I place all of the panko in a large tupperware dish with a cover. I then add the chicken to the tupperware, cover the top and shake till the chicken is evenly coated. I have already begun to heat the coconut oil at medium heat. I place each piece of chicken in the pan, and low fry on each side for about 8 minutes each side. I then cover the frying pan, and fry at medium heat for about 5 minutes each side, to keep the juiciness of the chicken. I then turn the heat up to high and fry on both sides till crispy and the fork comes out easy from the meaty part of the chicken leg. It only takes about 40 minutes total to cook.

ITALIAN PANKO "FRIED" CHICKEN

I have not tried this recipe. I'm posting this recipe for safe keeping. I got this recipe from Family Circle. Serve this with french fries and coleslaw which are both optional.

3 egg whites
1 tablespoon Dijon mustard
1 cup progresso italian style panko breadcrumbs (or 1 cup plain bread crumbs mixed with 1 teaspoon italian seasoning)
1/4 cup grated reduced-fat parmesan cheese
1/2 cup all-purpose flour
4 (6 ounce) boneless skinless chicken breasts
3/4 cup prepared marinara sauce, heated

Steps:

  • Heat oven to 450. Place a rack on a baking sheet and spray with nonstick cooking spray.
  • Whisk together egg whites and mustard in a shallow dish. In a second dish, blend the panko and cheese. Place the flour in a third dish.
  • Coat the chicken with the flour, shaking off the excess. Dip in the egg mixture and then coat well with the panko. Place on prepared rack.
  • Bake at 450 for 15 minutes and turn over. Bake additional 10 minutes or until internal temperature registers 160 on an instant read thermometer. Run under broiler for 1 minute if you wish to lightly brown.
  • Serve with heated marinara sauce. Accompany with cooked french fries and prepared cole slaw, if desired.
