Steps:

  • Add all of the ingredients except for the oil to a large size mixing bowl.
  • Whisk until everything is completely combined and smooth and then slowly drizzle in the oil while continuing to whisk.
  • Refrigerate until ready to use.

1 tablespoon capers, drained and minced
1 teaspoon maple syrup or honey
1 teaspoon dried oregano or 1 tablespoon chopped fresh oregano leaves
1 teaspoon dried basil or 1 tablespoon chopped fresh basil leaves
1 tablespoon finely chopped fresh parsley or 1 teaspoon dried parsley
1 teaspoon chopped fresh thyme or 1/4 teaspoon dried thyme
1/4 teaspoon fine sea salt plus more to taste
1/2 teaspoon fresh ground black pepper
Pinch crushed red pepper flakes, optional
2 tablespoons finely grated Parmesan or Romano cheese, optional

Steps:

  • Combine all of the ingredients listed in a small bowl and whisk until well blended and creamy. Taste then adjust with additional salt or pepper.

1 large yellow summer squash, quartered and thinly sliced
1 large red onion, finely chopped
1 block (8 ounces) cheddar cheese, cubed
1 block (8 ounces) Monterey Jack cheese, cubed
2 packages (4 ounces each) crumbled tomato and basil feta cheese
1 bottle (16 ounces) Italian salad dressing
3 tablespoons minced fresh parsley
1 tablespoon minced fresh basil
1 teaspoon Italian seasoning
1 teaspoon seasoned salt

1 can (3.8 ounces) sliced ripe olives, drained
