BALSAMIC BAKED TILAPIA

1 tablespoon olive oil
1 yellow onion, halved and sliced
1 red bell pepper, chopped
2 tablespoons balsamic vinegar
salt and pepper to taste
2 (8 ounce) fillets tilapia fillets
2 teaspoons olive oil
1 cup crumbled blue cheese
4 cups mixed salad greens

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook onion and red pepper in the oil until onion is tender and golden, and peppers are slightly soft, about 10 minutes. Stir balsamic vinegar into the vegetables; season with salt and pepper.
  • Rub tilapia filets with 2 teaspoons olive oil and a sprinkle of salt and pepper. Place fillets in a small baking dish, and top with the balsamic onion mixture. Sprinkle fish evenly with blue cheese.
  • Bake in preheated oven until fish flakes easily. Serve atop salad greens.

4 -5 tilapia fillets
1 cup Italian seasoned breadcrumbs
2 tablespoons parmesan cheese
1/2 teaspoon garlic powder
1/2 cup reduced-fat Italian salad dressing

Steps:

  • Preheat oven to 400 degrees F.
  • Mix breadcrumbs, parmesan cheese, and garlic powder in a quart size ziploc bag.
  • Pour Italian dressing in a different quart size ziploc bag.'.
  • Place tilapia, one piece at a time, into the bag with Italian dressing and shake.
  • Then put in the bag with the breadcrumb mixture and shake.
  • Repeat with other fillets. Mound any unused breading on top of fish.
  • Bake in 400 degree oven for 20 minutes, until fish is done and topping is browned.

1 lb tilapia or catfish fillets, cut into 4 serving pieces
1 teaspoon salt-free seasoning blend
1 tablespoon olive or canola oil
1 clove garlic, finely chopped
1 pint (2 cups) cherry tomatoes, cut in half
1/4 cup sliced ripe olives, drained

Steps:

  • Sprinkle both sides of fish fillets with seasoning blend. In 12-inch nonstick skillet, heat oil over medium-high heat. Add fish; cook 6 to 8 minutes, turning once, until golden. Remove fish from skillet; cover to keep warm.
  • Heat same skillet over medium-high heat. Add garlic; cook and stir 30 seconds. Add tomatoes; cook about 3 minutes, stirring occasionally, until softened and juicy. Stir in olives. Serve over fish.

ITALIAN MARINADE



Italian Marinade image

Spiedies, grilled skewers of meat marinated in what amounts to Italian dressing, are a culinary mainstay of bars and roadhouses in and around Binghamton, N.Y. What follows is a recipe for the marinade used to prepare them for the fire. I have used fresh herbs, though dried ones are more traditional, and have upped the flavor slightly with the use of lemon zest. Once you've got the marinade made, simply cut the meat - chicken or beef, lamb or pork - into 1- or 2-inch cubes, and submerge it in the liquid for a couple of days (10 to 12 hours for chicken), covered, in the refrigerator. All that lemon and vinegar does some work on the meat, and the result, when grilled over charcoal for four or five minutes a side, is a fantastical taste of upstate New York, and a very simple and excellent dinner besides. (Here are instructions for cooking them.) Serve with torn mint and an additional drizzle of lemon juice and olive oil, on top of Italian bread or alongside rice.

1/4 teaspoon pepper
1 can (14-1/2 ounces) diced tomatoes with basil, oregano and garlic, drained
1 large onion, halved and thinly sliced
1 medium green pepper, julienned
1/4 cup shredded Parmesan cheese
