Use up leftover roast chicken in this tomato bake with mozzarella cheese and crispy breadcrumb topping

2 small or 1 large onion , chopped
2 garlic cloves , crushed
3 tbsp olive oil
2 tsp dried oregano
3 x 400g cans chopped tomatoes or cherry tomatoes
1 tbsp sugar
little splash red or white wine vinegar
about 500g cooked chicken , shredded into chunks
125g ball mozzarella
2 good handfuls fresh breadcrumbs (or gluten-free alternative)

Steps:

  • Fry the onion and garlic in the oil until softened. Add the oregano, tomatoes and sugar, a little splash of vinegar and some salt and pepper, then simmer for 20 mins until the sauce is really thick. Stir in the chicken and transfer to a baking dish.
  • Heat oven to 220C/200C fan/gas 7. Tear over the mozzarella in chunks, then scatter over with the breadcrumbs with a bit more ground pepper. Bake for 20 mins until the chicken is piping hot through and the top is golden and bubbling. eat with mash, jacket potatoes, rice or pasta.

Easy Italian Shake and Bake Chicken on Toasted Garlic Buns image

This is actually my own recipe of a family favorite, it's easy to make and oh so good! use crusty buns for this to hold the sauce! You can double this recipe if desired, all ingredients can be adjusted to taste. I use recipe#136433 for the chicken coating but original-flavor Shake and Bake will work fine, Use the butter/garlic mixture from recipe#105726 for the buns (or use your own mixture). To save some time prepare the butter mixture ahead of time... SOOOO good!

4 boneless skinless chicken breasts
1 (3 ounce) package original Shake-n-Bake
1 cup marinara sauce (or to taste) or 1 cup pasta sauce (or to taste)
4 slices mozzarella cheese
4 crusty buns (toasted and split, use Kittencal's Parmesan Garlic Bread or Garlic Toast for the garlic butter mixture)

Steps:

  • Set oven to 400 degrees.
  • Coat the chicken in the coating mixture.
  • Place on a small baking sheet or an 11 x 7-inch baking dish that has been sprayed with cooking spray.
  • Bake for about 20 minutes.
  • Meanwhile coat both sides of the inside of bun with the garlic butter mixture, place buns open-faced on a baking sheet.
  • After 20 minutes of baking remove from oven and top each breast with sauce, then a slice of mozza cheese, return to oven and bake another 10 minutes.
  • Remove the baking dish from oven and cover with foil to keep warm.
  • Place the buns in the oven and bake until crusty and slighty browned (about 8-10 minutes).
  • Place each breast on a bun and serve.
  • Delicious!

1 lb 16 ounce pasta of your choice
1 lb bacon, cooked crisp
5 - 6 boneless, skinless chicken breasts, cubed and cooked
1 - 8 oz cream cheese, softened
2 Tbsp olive oil
1 1/2 c onion
4 clove garlic, minced
2 ( 14.5 ounce ) cans diced tomatoes with garlic, basil and oregano
4 c mozzarella cheese, divided
2 c heavy whipping cream
oregano, dried
salt and pepper to season chicken

Steps:

  • 1. Preheat oven to 350 degree F. Spray a 9 x 13 baking dish with cooking spray, set aside. Cook and drain your pasta. Set aside.
  • 2. In a large skillet fry your bacon crisp, remove to a paper towel to drain.
  • 3. Save about 4 tablespoons of bacon grease, and brown your seasoned chicken in the same skillet till juices no longer run pink.
  • 4. In another large skillet or you can use the same one as chicken, once removed. Brown your onions and garlic with the olive oil. Till tender.
  • 5. Next, add your tomatoes and cream, bring to a slow boil for 3 minutes. Reduce heat and simmer for a few minutes until begins to thicken some. Stir in the cream cheese and half the mozzarella cheese until thoroughly blended. Add the chicken to the sauce.
  • 6. In the dutch oven I boiled my pasta in; add the pan of sauce to the pasta, and stir till evenly coated. Spread the pasta into the baking dish. sprinkle with remaining mozzarella. Then top cheese with oregano. And finally top with bacon.
  • 7. Place the dish into the oven, and bake for approx 40 - 45 minutes or until bubbly. I then placed under a broiler to brown a bit more ( do not have to ). Let the pasta set for 5 minutes before serving. I served the pasta with buttered Vienna bread. Enjoy!

1 box (4.7 oz) Betty Crocker™ scalloped potatoes
3/4 cup boiling water
3/4 cup milk
2 tablespoons butter, melted
4 boneless skinless chicken breasts (1 1/4 lb)
1/2 teaspoon Italian seasoning
1/2 teaspoon salt
2 cups cherry or grape tomatoes
1/2 cup shredded mozzarella cheese (2 oz)

Steps:

  • Heat oven to 450°F. Spray 13x9-inch (3-quart) baking dish or 3-quart casserole with cooking spray.
  • Spread spinach in baking dish. In medium bowl, stir Potatoes, Sauce Mix, boiling water, milk and 1 tablespoon of the butter. Spread potato mixture over spinach. Place chicken breasts on potato mixture. Drizzle chicken with remaining tablespoon of butter; sprinkle with Italian seasoning and salt. Place tomatoes around chicken in dish.
  • Bake uncovered 25 minutes. Sprinkle with cheese. Bake 3 to 5 minutes longer or until cheese is melted and juice of chicken is clear when center of thickest part is cut (at least 165°F). Let stand 5 minutes.

  • Preheat oven to 350. Spray a large baking or casserold dish with nonstick cooking spray.

1 tablespoon olive oil
1/2 cup celery (chopped)
1/2 cup onion (chopped)
2 Italian sausages (sliced)
425 g cream of mushroom soup
2 chicken breasts (cooked and cubed)
2 cups wild rice, i prefer to use a package of uncle ben's fast and fancy (cooked)
1/2 cup grated parmesan cheese

Steps:

  • Heat the olive oil in a large skillet. Saute celery and onion until soft, about 5-7 minutes. Add sausage to skillet and continue cooking until sausage is cooked through.
  • Add cream of mushroom soup and stir and cook for another 3 to 5 minutes.
  • Place the chicken in a casserole dish evenly. Next, layer the sausage mixture over it. Then top with the wild rice.
  • Bake in a 375 degree oven for 15 minutes.
  • Sprinkle the parmesan on top and continue baking for the final 5 minutes. Enjoy!

2 cups spaghetti sauce
1 (15 ounce) package chicken breast tenders (not breaded)
6 ounces shredded Italian cheese blend
8 ounces uncooked spaghetti

Steps:

  • Heat oven to 350. Into ungreased 8-inch square baking dish, spoon and spread one cup of the spaghetti sauce. Top with chicken tenders in a single layer. Spoon remaining sauce over chicken and sprinkle with cheese.
  • Bake uncovered 30-35 mins or until everything is bubbly and chicken is no longer pink.
  • Cook spaghetti as directed on the package, drain.
  • Serve chicken and sauce over spaghetti.

2 can(s) green beans
red-skinned potatoes
1 pkg zesty italian salad dressing mix
1 stick butter
1 9x13" baking dish
aluminum foil

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Place the chicken breasts down the middle of the baking pan, long-wise.
  • 3. Drain the green beans and put them down one side of the chicken breasts.
  • 4. Wash and cut the potatoes in half, thirds, or quarters (depending upon their size) and place down the other side of the chicken breasts.
  • 5. Sprinkle the dry dressing mix over all.
  • 6. Melt the butter and drizzle it over all.
  • 7. Cover the dish with aluminum foil and bake for 1 hour, or until chicken is tender and cooked throughout.

1 c italian bread crumbs
1/2 c parmesean cheese
1/2 c italian salad dressing

  • 1. Combine breadcrumbs, cheese and salt in a plastic bag and shake to mix. Dip chicken in salad dressing. Place one piece of chicken into bag and shake to coat. 10 chicken pieces parboiled
1 pkg cream cheese
2 c asiago cheese, grated (i used asiago spread)
1 pkg italian dressing mix (complete in caraf with water oil & vinegar)
1 c cheddar cheese, shredded
2 Tbsp parmesan cheese
2 Tbsp parsley

Steps:

  • 1. Parboil chicken pieces, you can use boneless skinless breast but all I had were legs and thighs to work with! Place in 9x13 pan & set aside
  • 2. Melt together asiago cheese, cream cheese and italian dressing in pot on med/low till smooth and creamy stirring regularly so not to burn.
  • 3. Pour cheese mixture over chicken. Sprinkle top with shredded cheddar cheese and parmesan cheese and bake in 350* oven until heated through and cheeses are melted and bubbly
  • 4. Garnish with parsley & serve over angel hair pasta or thin spaghetti.
  • 5. Note-I use my homemade italian dressing mix, I mix the caraf full for this recipe. You can find the recipe for my dressing in my recipes!
