ITALIAN SAUSAGE BURGERS



Italian Sausage Burgers image

Grill something different with these Italian Sausage Burgers! They're loaded with roasted red bell peppers, pepper rings, and fresh basil.

1 lbs ground hot Italian sausage
1 lbs ground sweet or mild Italian sausage
4 slices Provolone cheese
4 roasted red bell peppers (from a jar)
½ cup pepper rings
¼ cup fresh basil leaves
4 Kaiser rolls (sliced in half and toasted)

Steps:

  • Preheat your grill to medium-high heat (about 450 degrees F).
  • While the grill preheats, add the ground hot and sweet Italian sausage in a large bowl. Roll up your sleeves and use your hands to combine.
  • Form the meat into four balls and lightly press each into 5-inch-wide, 1 ¼ -inch-thick patties.
  • In the middle of each burger, use your knuckle or thumb to make a 2-inch indentation (this will keep the burgers from puffing when grilled).
  • Place the patties on the preheated grill. Leave them undisturbed until grill marks form on the bottom, about 5-6 minutes.
  • Flip the burgers and grill until the burgers feel firm and the other side is marked for about 4-6 minutes.
  • Remove the burgers from the grill and top each with a slice of Provolone cheese.
  • Move the burgers to the toasted Kaiser rolls and top with roasted bell peppers, pepper rings, and basil leaves.
  • Serve and enjoy.

3 tablespoons shredded Parmesan cheese
1 garlic clove, minced
1 pound lean ground turkey
1/2 pound Italian turkey sausage links, casings removed
6 hamburger buns, split
3 tablespoons olive oil
6 tablespoons prepared pesto
6 ounces fresh mozzarella cheese, sliced
6 lettuce leaves
6 slices tomato
1/4 cup thinly sliced fresh basil leaves

Steps:

  • In a large bowl, combine Parmesan cheese and garlic. Crumble turkey and turkey sausage over mixture and mix well. 2 tablespoons extra-virgin olive oil, plus more for drizzling
8 deli slices Genoa salami
8 ounces cremini mushrooms, quartered
Kosher salt and freshly ground pepper
1 1/2 pounds ground beef, preferably chuck
Vegetable oil, for the grill
4 semolina rolls, split
2 cups baby arugula
1/2 tablespoon balsamic vinegar
1/2 cup fresh ricotta cheese

Steps:

  • Preheat a grill to medium high. Heat the olive oil in a skillet over medium-high heat. Working in batches, add the salami in a single layer and cook, turning once, until crisp, about 1 minute per side. Drain on paper towels.
  • Add the mushrooms to the skillet and cook, undisturbed, until browned, about 2 minutes. Stir and continue to cook until tender, about 5 more minutes. Season with salt and pepper.
  • Form the beef into four 6-ounce patties, about 3/4 inch thick; press the center of each patty with your thumb to make a 1/2-inch-deep indentation. Season the patties on both sides with salt and pepper. Lightly brush the grill grates with vegetable oil, then grill the patties, indentation-side up, until marked on the bottom, about 5 minutes. Flip and cook until marked and slightly firm, about 3 more minutes for medium doneness. Remove the patties to a plate and let rest 5 minutes. Grill the rolls, cut-side down, until lightly toasted, about 1 minute.
  • Toss the arugula, vinegar, and olive oil to taste in a bowl; season with salt and pepper. Spread the ricotta on the bun bottoms and top with the burger patties, salami, mushrooms and arugula salad. Cover with the bun tops.

1 1/4 pounds 80-percent ground beef
3/4 pound ground pork
1/3 cup dry red wine
1/2 onion
1 teaspoon dried oregano or marjoram
2 large cloves garlic, finely grated or minced
1 fresh chile pepper, finely chopped, or 2 teaspoons red pepper flakes
A handful of grated Pecorino
Freshly ground pepper
EVOO, for drizzling
Salt
8 slices hard salami or Genoa salami (sliced not too thin)
4 slices provolone (sliced not too thin)
1 cup giardiniera (Italian pickled vegetables), drained and finely chopped or pulsed in a food processor
4 large kaiser rolls, or 12 small rolls for sliders
Quick Marinara Sauce, for topping, recipe follows
2 tablespoons EVOO
2 cloves garlic, grated or minced
1 fresh chile pepper, finely chopped
1/4 onion, grated
1/4 cup dry red wine
One 14-ounce can crushed tomatoes
1/2 teaspoon dried oregano or marjoram
A few fresh basil leaves, lightly torn
A few sprigs fresh thyme, leaves stripped and finely chopped
Kosher salt and freshly ground pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the ground beef and pork in a large bowl and douse with the wine. Grate 3 to 4 tablespoons onion directly into the bowl to catch the juices. Add the oregano, garlic, chile, cheese, 1 tablespoon pepper and a drizzle of EVOO. Mix until just combined. Shape into 4 large patties or 12 small patties for sliders. Make an indentation in the center of each patty to help them cook evenly and prevent them from puffing up. Sprinkle with a little salt.
  • Arrange the salami slices on a rack set over a rimmed baking sheet. Bake until they crisp up a bit, about 10 minutes. Let cool.
  • Heat a heavy griddle or cast-iron skillet over medium-high heat. Add the patties and cook, turning occasionally, about 10 minutes for regular ones and 6 minutes for sliders. Top with the provolone and cook until melted.
  • Spread some of the giardiniera relish on the bottom halves of the rolls and top with the patties. Top with the salami and some Quick Marinara Sauce. Cover with the top halves of the rolls.
  • Heat the EVOO in a small pot over medium to medium-high heat. Add the garlic, chile and onion and cook, stirring, 1 to 2 minutes. Add the wine and cook 30 seconds. Add the tomatoes, oregano, basil and thyme. Season with salt and pepper. Simmer over low heat until thickened.

1 c. shredded Mozzarella cheese
1 tsp Worcestershire sauce
1/4 tsp garlic salt
1/4 tsp pepper
1 tsp dried onion flakes
1/8 tsp oregano
1 lb ground beef
1/2 c. marinara sauce
4 buns
Butter for buns

Steps:

  • In a large bowl combine 1/2 c. Mozzarella cheese and seasonings. Add beef and mix until combines. Shape into four patties about 1/2 in thick.
  • Grill burgers over medium heat or broil 4 inches from heat sources of 4-5 minutes on each side or until thermometer reads 160 degrees. Sprinkle with remaining cheese and grill covered 1-2 minutes longer or until cheese is melted. Remove from grill.
  • Butter inside of each bun and place buns, butter side up, on grill and grill until tops are light golden brown. Remove from grill, top with burger, top burger with marinara sauce.

Instead of having the same old hamburgers, try this great Italian burger loaded with fresh herbs, & garlic. What really gives it that great flavor is the crispy Salami and Mozzarella - fabulous, Mangia!

1 lb lean ground turkey
1/4 cup egg substitute
1/4 cup dry Italian breadcrumbs
1 teaspoon oregano (Fresh greek or italian -minced)
2 teaspoons italian basil (fresh minced)
1 -2 minced garlic clove (depending on your taste)
1/4 teaspoon red pepper flakes (may want to use less if you are sensitive to heat spices)
2 tablespoons romano cheese (Freshly grated, pecorino romano or any paremesan type cheese will do)
1/4 teaspoon salt
1/4 teaspoon ground black pepper
8 slices hard salami
1 cup shredded light mozzarella cheese
Italian bread (good crusty type or Ciabatta)
olive oil (preferrably E.V.O.O., Extra Virgin)
prepared marinara sauce

Steps:

  • Combine the ground turkey and the first 9 ingredients well - then, divide evenly and shape into burger patties, cover with plastic wrap and set aside.
  • Cover a cookie sheet with tin foil, or - place a silpat on a cookie sheet & preheat oven to 325 degrees. Place the salami slices evenly (but not touching) on the covered cookie sheet. Bake salami in the 325 degree oven for 15 minutes - then, transfer salami slices to a plate covered with paper towels to absorb the excess oils.
  • Grill burgers either on a hot outdoor grill, or cast iron stove top grill - approximately 5 minutes per side for medium rare - longer for well done (whatever your preference may be). Slice the Italian bread or Ciabatta into even slices - enough for 2 slices per patty & brush or use your 'misto' sprayer on one side with E.V.O.O. (Extra Virgin Olive Oil)& grill (oil side down) to get the grill prints on the bread. Once Burgers are cooked, remove to a platter where they can rest for approximately 5 minutes. Remove grilled Bread and place 1/4 cup of the shredded light Mozzarella cheese, then the Burger, then the Salami (2 slices per burger). You can then serve the burgers with either a very good prepared Marinara Pasta Sauce or your favorite condiment.

1/2 cup sun-dried tomato mayonnaise
1 cup shredded lettuce
1 medium tomato, thinly sliced

Steps:

  • Heat coals or gas grill for direct heat. Mix beef, sausage and bread crumbs in large bowl. Shape mixture into 6 patties, about 1/2 inch thick and 3 1/2 inches in diameter.
