Italian Broiled Tomatoes image

A great side dish or yummy appetizer! Great way to use up some of the last of the season tomato crop.

Number Of Ingredients 7

4 large ripe tomatoes
2 cloves garlic, minced
1/4 cup olive oil
1 tablespoon chopped parsley
sea salt
black pepper
12 -20 drops balsamic vinegar, a few per tomato (or more if you like it!)

Steps:

  • Cut the tomatoes in half horizontally.
  • Place them on a baking sheet, skin side up, and broil them for 2 minutes, then turn.
  • You may prefer to line the baking sheet with parchment paper, because the tomatoes will drip some juice.
  • Mix together the garlic, olive oil and parsley and drizzle over the tomatoes.
  • Season with salt and pepper.
  • Place the tomatoes back under the broiler and cook for 6 minutes or until cooked.
  • Serve hot or warm.

This Italian inspired appetizer is quick, tasty, and beautiful to the eye. Tomato slices are drizzled with olive oil, then sprinkled and broiled with parmesan cheese, oregano, and garlic.

4 tomatoes, cut into 1/4 inch slices
¼ cup olive oil
1 teaspoon kosher salt
1 teaspoon ground black pepper, or to taste
4 cloves garlic, minced
1 pinch monosodium glutamate (MSG)
3 tablespoons chopped fresh oregano
¾ cup freshly grated Parmesan cheese

Steps:

  • Preheat your oven's broiler. Cover a broiler pan or baking sheet with aluminum foil, and coat with non-stick cooking spray.
  • Arrange tomato slices in a single layer on the prepared baking sheet. Drizzle each slice lightly with olive oil, spreading oil evenly with finger if necessary. Season with salt, pepper, garlic, monosodium glutamate (if using), and oregano. Sprinkle Parmesan cheese over the top.
  • Broil, 3 inches from the heat until cheese is browned and bubbly, 3 minutes.
