Italian Beef Soup (Brodo di Carne) image

Italian Beef Soup (Brodo di Carne) with Orzo is filled with tender, slow-cooked chuck roast, vegetables, and herbs simmered in a rich, flavorful broth. Make it even heartier by adding orzo or pastina and topping with finely grated Parmigiano-Reggiano. Cook this soup low and slow for hours, resulting in mouthwatering broth and fall-apart beef.

2 lb Chuck roast
3 carrots (cut in 2-inch pieces)
3 celery stalks (cut in half widthwise)
2 Roma tomatoes (cut in half)
½ medium onion (or one small onion, cut in half)
1 bunch parsley
2 tbsp kosher salt
3½ qt water
1 lb Orzo
Parmigiano-Reggiano

Steps:

  • Add water to a large pot or dutch oven and cook on medium heat.
  • Add kosher salt, vegetables, parsley, and beef to the pot.
  • Once the water reaches a boil, turn the heat down to low-medium and allow the soup to simmer for 4 hours with the lid on, giving the soup an occasional stir.
  • At the 3 hour mark, remove the lid and allow the soup to simmer for one more hour.
  • Once the soup is done cooking, remove the soup from the heat. Remove the onion, celery, and parsley from the soup.
  • Carefully take the beef out and place it in a large shallow bowl. Place two forks in a portion of the meat facing away from each other. Gently pull the forks in opposite directions, breaking up the meat into shards with each pull. Place the meat back into the soup.
  • Add orzo to the soup bowls, then use a ladle to serve soup to each bowl.
  • Serve immediately with finely grated Parmigiano-Reggiano.
  • As the soup finishes cooking, take large saucepan or pot and add 4 - 6 quarts of water. Bring the water to a rolling boil and add a pinch of salt. Add orzo to the pot and stir gently. Allow the water to return to a boil. Cook until al dente, or about 8-9 minutes, stirring occasionally. Drain the orzo and set aside.

¾ pound Italian sausage
½ cup diced onion
6 cups chicken broth
1 (15 ounce) can diced tomatoes with basil, garlic, and oregano
5 ounces farfalle pasta
½ teaspoon Italian seasoning
½ teaspoon salt, or to taste
¼ teaspoon ground black pepper, or to taste
½ cup ricotta cheese
½ cup shredded mozzarella cheese
¼ cup freshly grated Parmesan cheese
2 tablespoons chopped fresh basil

Steps:

  • Cook Italian sausage and onion in a skillet over medium-high heat until sausage is browned and crumbly and onion is soft and translucent, about 8 minutes.
  • Mix in chicken broth, diced tomatoes, pasta, Italian seasoning, salt, and pepper. Bring to a boil. Reduce heat and simmer until pasta is tender, stirring occasionally, about 10 minutes. Add ricotta cheese and cook until ricotta is fully incorporated, 2 to 3 minutes more.
  • Top each serving with 2 tablespoons mozzarella cheese, 1 tablespoon Parmesan cheese, and 1/2 tablespoon fresh basil.

I have been preparing this magnificent pasta and bean soup, unchanged for over 30 years, and confess that of the very many Pasta e Fagioli I have tasted none even came close to a reasonable comparison to this superb dish Italiano. Garnish with grated Parmesan cheese if desired. Makes many servings and is excellent the next day. Should the soup become too thick it may be thinned with broth. Have many Chicago hard rolls, red wine, baguettes or garlic bread on hand. BUON APPETITO!

½ cup olive oil
4 cups chopped onion
2 cups chopped celery
2 (4.5 ounce) jars bottled minced garlic
1 teaspoon coarsely ground black pepper
8 (14 ounce) cans beef broth
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can tomato paste
2 ½ teaspoons dried thyme
2 ½ teaspoons dried basil
2 ½ teaspoons dried oregano

2 cups ditalini pasta
2 (15 ounce) cans kidney beans, drained and rinsed

Steps:

  • In a large pot over medium heat, cook beef until no longer pink. Drain and set aside.
  • In the same pot, heat the olive oil. Cook onion, celery, garlic and black pepper until vegetables are tender, 10 minutes. Stir in beef broth, crushed tomatoes and tomato paste. Season with thyme, basil, oregano and parsley. Cover, reduce heat and simmer 1 hour. 1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, finely chopped
1 carrot, peeled & chopped
1 stalk celery, chopped
1 lb sweet Italian sausage links or 1 lb hot Italian sausage, casing removed and crumbled (can use turkey sausage)
2 teaspoons dry oregano
1 tablespoon dry basil
1 -2 teaspoon red pepper flakes, to taste
1 1/2 cups canned chopped tomatoes with juice
3 -4 cups vegetable stock or 3 -4 cups chicken stock
1 can progresso cannellini beans
1 cup ditalini or 1 cup small shell pasta
2 tablespoons chopped flat leaf parsley
parmesan cheese

Steps:

  • Heat olive oil in a large heavy pot over medium high heat.
  • Cook onion in oil 2 minutes.
  • Stir in garlic, celery and carrots and cook for 3 minutes.
  • Add and brown crumbled sausage.
  • Add basil, oregano and red pepper.
  • Toss to coat.
  • Stir in tomatoes and stock.
  • Bring to a boil.
  • Reduce heat and simmer 30 minutes.
  • If necessary, add an additional cup of stock or water and stir in beans and tiny pasta.
  • Simmer for 6- 8 minutes or until pasta is tender.
  • Stir in parsley and serve hot with grated Parmesan cheese.
