1 lb ground pork meat
2 tsp grated garlic
3/4 tsp kosher salt or to taste, divided
1/2 c mayonnaise
2 Tbsp sour cream
1 tsp grated orange peel
2 tsp orange juice
2 tsp finely chopped mint
2 Tbsp olive oil
1/2 c thinly sliced onion
1/2 c thinly sliced red bell pepper
1/2 c thinly sliced orange bell pepper
3/4 tsp jerk seasoning, or more to taste
3 Tbsp pineapple-coconut juice blend
3/4 c chopped pineapple
vegetable oil, for frying
1 1/4 c very thinly sliced match-stick size sweet potatoes
nonstick cooking spray
4 soft kaiser rolls, split
2 c coarsely chopped mixed greens
3 Tbsp chopped cilantro

Steps:

  • 1. In a large bowl, combine ground pork, garlic, and 1/2 teaspoon kosher salt (or to taste). Handling the meat as little as possible, mix well. Divide mixture into 4 equal portions; form into 4 patties to fit the buns. Cover.
  • 2. In a small bowl, stir together mayonnaise, sour cream, orange zest, orange juice, and mint. Cover; set aside.
  • 3. In a medium saucepan, over medium high heat on stovetop, add olive oil. When oil is hot, add onions and red and orange bell pepper. Cook, stirring ocasionally, 4-5 minutes or until softened. Add 1/4 teaspoon kosher salt, Jerk seasoning, and pineapple-coconut juice. Cook, stirring occasionally, 3-5 minutes or until most of the liquid has evaporated. Remove from heat; stir in pineapples. Cover to keep warm.
  • 4. In a medium frying skillet, over medium high heat, pour vegetable oil to cover bottom and about 1/2 inch up sides. Fry sweet potato sticks, in batches if needed, until crisp and golden, about 3-5 minutes. Transfer to a paper-lined plate to drain. Do not cover.
  • 5. Preheat a large grill pan over medium high heat. Lightly spray grill pan with nonstick cooking spray. When pan is hot, grill patties, flipping once, about 4-5 minutes per side or until desired doneness. Place buns, cut side down, on grill; grill 1-2 minutes or until lightly toasted.
  • 6. To serve, spread orange-mint mayonnaise over cut side of each bottom bun. Top each with greens, a patty, onion-pepper relish, sweet potato fries, dividing all components into equal portions. Sprinkle with cilantro. Top with top buns. Serve immediately.

5 slices bacon
1 clove garlic, minced
1 pound ground pork
Kosher salt and freshly ground pepper
1/4 teaspoon dried rubbed sage
Freshly ground pepper
4 potato buns, split
Unsalted butter, softened, for spreading
Coleslaw, for topping

Steps:

  • Pulse the bacon and garlic in a food processor until coarsely ground.
  • Combine the ground pork, 1 teaspoon salt, 1/4 teaspoon pepper and the sage in a large bowl. Add the bacon mixture and gently mix with your hands. Gently form the meat into 4 balls, then lightly press into 4-inch-wide, 1-inch-thick patties. Make a 2-inch-wide indentation in the center of each with your thumb to prevent the burgers from bulging when grilled.
  • Preheat a grill to medium high. Season the patties with pepper. Grill, undisturbed, until marked on the bottom, 5 to 6 minutes. Turn and grill until the other side is marked and the patties feel firm, 4 to 6 more minutes. Meanwhile, spread the cut sides of the buns with butter and toast on the grill.
  • Serve the patties on the buns; top with coleslaw.

GRIDDLE BURGER WITH 18000 ISLAND DRESSING AND QUICK PICKLES

2 cups champagne vinegar
1/4 cup granulated sugar
1 tablespoon yellow mustard seeds
1 tablespoon kosher salt
2 cloves garlic, lightly smashed
1 bay leaf
1 English cucumber, cut into 1/8-inch slices
1 tablespoon chopped fresh dill
1 cup mayo
1/4 cup ketchup
2 tablespoons sliced pickled jalapenos
1 teaspoon Dijon mustard
1/4 teaspoon granulated garlic
Kosher salt
1 1/2 pounds ground chuck
8 ounces ground brisket
1 to 2 tablespoons canola oil
4 sesame seed buns
4 to 8 slices white American cheese
Tomato slices, for serving
Iceberg lettuce, for serving

Steps:

  • For the quick pickles: Add the vinegar, 1/2 cup water, sugar, mustard seeds, salt, garlic and bay leaf to a saucepan and bring to a simmer. Once the sugar has dissolved in the simmering liquid, add the cucumbers and dill to a heat-proof container and pour over the pickling liquid. Let sit for at least 10 minutes. Chop 2 tablespoons for the dressing, and reserve the rest for serving.
  • For the 18000 island dressing: In a food processor add the mayonnaise, ketchup, jalapenos, chopped quick pickles, Dijon, garlic and some salt. Puree, taste and adjust seasonings if necessary.
  • For the burgers: Heat a cast-iron skillet or large heavy griddle pan over medium-high heat.
  • Combine the chuck and brisket and form into 4 balls with your hands.
  • Add the canola oil to the heated griddle. Place the burger balls on the griddle and sear for 1 to 2 minutes per side. Then, using a spatula, press the balls down, flattening them down as you spread them out. You want a thin, crusty burger and that's all about creating surface area, so press away. Let the burger get a nice char on one side, and then flip so they get nice and crusty brown, 4 to 5 minutes per side.
  • Butter and toast, or griddle, the sesame seed buns. Once toasted, add 1 to 2 slices cheese to each bottom bun. Place the burger on the bottom bun with the cheese. Top the burger with some tomato slices, quick pickles and iceberg lettuce. Spread some of the 18000 island dressing on the top bun and top the burger. Appreciate the old school classic.

QUICK AND EASY PORK BURGERS



Quick and Easy Pork Burgers image

Well, I made these up using our favorite ingredients. Ground pork is sometimes less expensive than ground beef. We have also had this with ground turkey and ground chicken. Everyone who has had them says that they are moist and flavorful. They are also easy to make! I usually make 4, we eat 2 and I freeze 2 to cook later. Enjoy! Let me know what you think of these :) .

1 lb ground pork (or ground beef if you like)
5 tablespoons Worcestershire sauce
1 garlic clove, crushed
1/2 cup onion, diced
1/2 tablespoon dried basil
1/2 tablespoon Season-All salt (or other favorite seasoning, like Lawry's)
0.25 (1 1/4 ounce) package dry onion soup mix (optional)

Steps:

  • Mix all of the ingredients in a bowl.
  • Let the mix refrigerate for at least 30 minutes.
  • Then press the mixture into patties (I make 4 of them).
  • You have many choices on how to cook these!
  • You can cook them on your indoor grill for 5-10 minutes each, or until they are cooked throughly.
  • You could also cook them on the outdoor grill for 5-10 minutes each, or until they are cooked throughly.
  • Lastly, you could cook them on the stove for 5-10 minutes each, or until they are cooked throughly.
  • Serve on a bun, or by itself.
